What you should have done is poke it before you rubbed the seasoning over it. This will have allowed more of the seasoning to penetrate deeper into the chicken. You should also have rubbed some seasoning under the skin
But he was poking the seasoning into the chicken, i dont think (haven't tried, it's just my thought process) much of the seasoning is gonna go down those holes without getting poked there.

I had my butcher spatchcock the chicken for me and cut slices in the chicken rather than poke holes before marinating overnight. Otherwise I used this method. Dear God what Amazing rice! So creamy and delicious the flavors of the chicken married with the rice and peas so perfectly. I love it all so much. Thank you Sorted.
PLEASE make more recipes where you cook every part of the meal at one time! I love being able to lessen the total prep/cook time, and having everything ready together (instead of rushing to prepare multiple dishes). Thanks guys 😘
The way chicken was placed on top of rice while cooking in the oven is the best part , all the steam, the flavours from chicken to rice and then from rice to chicken makes an amazing delicious taste, loved this method .

Love having the inner pot stainless so I can use my immersion blender right in it without worrying about scratching. It makes potatoes great and fast! My favourite way to cook chicken is mediterranean inspired. It is oven roasted chicken thighs (you can also use the whole leg if you want), seasoned with salt, pepper and olive oil and then mixed with chopped olives, chopped rosemary and finely diced whole lemons, with the peel and all. Then simply roast it in the oven at about 180-200 C, until the chicken is cooked through. It gets a lovely earthy flavour from the olives and the rosemary, which is perfect in combination with the zingy taste of the lemon peel and the juice from the roasted lemons. I would love you guys to make this one day for the community, so easy, simple and delicious. It's perfect with a creamy mushroom risotto. I love to see your show! Best of luck from Denmark! :)

Do not know how I missed this one. I’m a good Irish Canadian with Jamaican roots who grew up with rice and peas as a main staple of Sunday roasts. On my long dead grandma’s grave I’d give the rice and peas a go. Jerk chicken was never a think in my child hood but I do like the idea of letting the drippings of the chicken drop into the rice. Curried goat, ox tail, stew fish or good old roast pork with Carl’s to sop up the dregs is the way to go.
Made this for the tea tonight and turned out so good! Rice is amazing and chicken looks scarily burnt when you take it out but tastes amazingggg. Will definitely make again soon and highly recommend!

The way they cut the chicken is called "butterflied" here in the US. I love cooking a whole chicken that way. I save the backbone, giblets, and since no one eats them in my house, wings, for both. I put it all in a bag and into the freezer, and once I have about the parts from three chickens, put it all in a crock-pot and cook for about 24 hours on low.

My favorite chicken dish is "Poulet a l'ail" from Guadeloupe. Rub chicken parts with garlic and cayenne, put in pan, squeeze lime juice over, add water until until the chicken is about half covered in liquid. Cook on medium high, turning occasionally until the pan is almost dry. Add a cup or so more water and scrape up the pan drippings to make sauce. I swear it is transformative.
My household's favorite chicken recipe is taking bone-in skin-on thighs and rubbing a mix of grated garlic, oil, salt, and smoked paprika (LOTS. Like 3 tbs) onto the chicken and then placing them on a rack over sliced potatoes and onions. Its a tweeked version of Alton Browns favorite dinner. :3
I go with a really simple seasoning combo when I roast a bird. I use salt, pepper, herb blend, then I smash some garlic cloves and put them under the skin, quarter a white onion and put that in the cavity. I then roast it on a rack over a bit of water in the pan so the bird is also steamed. It produces a really moist chicken.
Every different chicken type has a different best recipe to me. A full chicken done with a jerk rotisseries is delish. Chicken Breast flattened out and in a sammy is great. Chicken Thighs is a butter chicken. Wings and Legs as a Korean fried chicken, oh my!

To add to songlyrics explanation about why it's called rice and peas is also because in the older days rice and peas was made with pigeon peas or a small type of peas that looks a lot like kidney beans but they are not. Now though most Jamaican's use kidney beans to make their rice and peas. Interesting way to make your rice and peas by the way but not very Jamaican, we traditionally don't put chicken stock in our rice and peas, just coconut milk, thyme, onion, garlic, salt and pepper, a nice unbroken scotch bonnet pepper, and a piece of salt pork, last one is optional. Kind of reminds me of how they make it in Trinidad minus the beef.
My favoriteway to cook chicken is on the BBQ. I marinate the legs on soy sauce, rice vinegar, korean cili flakes fir 2-6 hours or overnight, I dry them the next day - salt pepper and brown sugar and grill! I serve with tempura mushrooms and roasted asparagus
I boil enough water to cover a whole chicken , once water boils I drop the whole chicken in wait till it comes to a boil and cook for 20 minutes then turn heat off lid on. 2hrs later the chicken is ready to eat as you please. Very tender and best ever.

Simple chicken thighs/wings with a rub of your choice (I use a small amount of liquid soy sauce+lemon juice with a paste of chilli, fresh garlic, lemon zest and lots of pepper+[optional]paprika) oven-roasted/pan-fried with a bit of peanut oil for a while... I don't look at the time, I just poke at it when I feel like it's about done. I prefer the roasted wings, simply cuz the charred marinade mingles well with the wings and they make great party food, LOL.
Learned a supersupersuper simple way of cooking chicken from a German friend, but the recipe is actually from Hungary? Put chicken pieces (thighs are the best) with garlic slices, smoked paprika, cayenne pepper, salt, oven baked. SOOOOO delicious tastes like truffle haha... :P..
My top chicken recipe is pretty much what you just did but no jerk and potatoe slices instead of rice. Plain roast chicken and lovely potatoes flavoured by the chicken drippings. Mmmm
Jamie, I love my chicken plain and sloppy. A Chinese friend told me this method to cook chicken. 1 whole chicken in a pot, cover with cold tap water, cover the pot. Bring to the boil, boil for one minute. Keeping the pot covered turn off the gas,hob and leave it until the water has cooled. Don't worry it will be perfectly cooked through. You will have the most succulent chicken ever. Of course you can add ginger, soy sauce etc. Spud
That jerk chicken is absolutely marvelous. It's got an amazing result. I'm gonna make it. Promised! As soon as temperatures go down in Madrid, I'll make it. As for the word "jerk" there's something else about the word, isn't there? But since the meaning can be rude, I'll stop here and say nothing else about it. Regarding what's my favorite part of the chicken and how I cook it, I particularly like thighs and I cook them with a lot of different types of peppers (red, green and yellow) as well as onion. Personally, I was taught to make rice & peas with pigeon peas (if you're using Goya canned beans they're called gandules). I always added added kidney beans for extra flavor anyway.

Tandoori chicken cooked in an oven and charred on a griddle pan served with sliced red onions and lime wedges, fried chicken wings/thighs coated with panko bread crumbs (always a hit!), steamed chicken with Chinese ShaoXing wine and other oriental flavours like ginger, sesame oil, garlic and spring onions, and lastly a classic roast chicken with a whole lemon, thyme, rosemary and good ol' salt pepper. Ah.... All these amazing dishes from our world. Yum!
I like to make chicken teppanyaki(?) and add different vegetables every time. But basically chicken filet sliced really thin with garlic and union cooked with wok oil and soja sauce

Interesting way to make your rice and peas by the way but not very Jamaican, we traditionally don't put chicken stock in our rice and peas, just coconut milk, thyme, onion, garlic, salt and pepper, a nice unbroken scotch bonnet pepper, and a piece of salt pork, last one is optional. Kind of reminds me of how they make it in Trinidad minus the beef.

My favoriteway to cook chicken is on the BBQ. I marinate the legs on soy sauce, rice vinegar, korean cili flakes fir 2-6 hours or overnight, I dry them the next day - salt pepper and brown sugar and grill! I serve with tempura mushrooms and roasted asparagus
I boil enough water to cover a whole chicken , once water boils I drop the whole chicken in wait till it comes to a boil and cook for 20 minutes then turn heat off lid on. 2hrs later the chicken is ready to eat as you please. Very tender and best ever.

Simple chicken thighs/wings with a rub of your choice (I use a small amount of liquid soy sauce+lemon juice with a paste of chilli, fresh garlic, lemon zest and lots of pepper+[optional]paprika) oven-roasted/pan-fried with a bit of peanut oil for a while... I don't look at the time, I just poke at it when I feel like it's about done.
I prefer the roasted wings, simply cuz the charred marinade mingles well with the wings and they make great party food, LOL.
Oooh please do some Nigerian or West African food like Jollof Rice, eba, Egusi. I'd be happy with anything x

Learned a supersupersuper simple way of cooking chicken from a German friend, but the recipe is actually from Hungary? Put chicken pieces (thighs are the best) with garlic slices, smoked paprika, cayenne pepper, salt, oven baked. SOOOOO delicious tastes like truffle haha... :P..
In medal east we called this dish ( mandi) we also make it with meat .. or roast it in under the ground oven ( Tanor) .. yumm

My top chicken recipe is pretty much what you just did but no jerk and potatoe slices instead of rice. Plain roast chicken and lovely potatoes flavoured by the chicken drippings. Mmmm

Jamie, I love my chicken plain and sloppy. A Chinese friend told me this method to cook chicken. 1 whole chicken in a pot, cover with cold tap water, cover the pot. Bring to the boil, boil for one minute. Keeping the pot covered turn off the gas,hob and leave it until the water has cooled. Don't worry it will be perfectly cooked through. You will have the most succulent chicken ever. Of course you can add ginger, soy sauce etc. Spud
That jerk chicken is absolutely marvelous. It's got an amazing result. I'm gonna make it. Promised! As soon as temperatures go down in Madrid, I'll make it.
As for the word "jerk" there's something else about the word, isn't there? But since the meaning can be rude, I'll stop here and say nothing else about it.
Regarding what's my favorite part of the chicken and how I cook it, I particularly like thighs and I cook them with a lot of different types of peppers (red, green and yellow) as well as onion. Delish!

The seasoning remains on the skin (yes I know Ben poked holes in the meat) but if you shove the seasoning under the skin, then the magic happens.
Personally, I was taught to make rice & peas with pigeon peas (if you're using Goya canned beans they're called gandules). I always added added kidney beans for extra flavor anyway.

Chicken Marbella from the Silver Palate Cookbook is best chicken. Marinade and then cooked with capers and prunes. Sounds weird but tastes delicious.

There are 4 types of chicken dish that my family and I make from time to time. Tandoori chicken cooked in an oven and charred on a griddle pan served with sliced red onions and lime wedges, fried chicken wings/thighs coated with panko bread crumbs (always a hit!), steamed chicken with Chinese ShaoXing wine and other oriental flavours like ginger, sesame oil, garlic and spring onions, and lastly a classic roast chicken with a whole lemon, thyme, rosemary and good ol' salt pepper. Ah.... All these amazing dishes from our world. Yum!

I like to make chicken teppanyaki(?) and add different vegetables every time. But basically chicken filet sliced really thin with garlic and union cooked with wok oil and soja sauce
Instead of using long-grain, use parboil for the rice. It works better. And to make your rice BANGING, use black eyes peas and pigeon peas.
