The real authentic Jamaican way you blend all the seasonings together by using onions, spring onions, pimento seeds, garlic, ginger, scotch bonnets, and the list goes on., and put on a jerk pan and covered with pimento leaves and log wood., Your way is Trinidad way, jerk chicken is dry not wet then you make a jerk sauce for it.

Where we could get the pimento berries locally? I had Jamaican relatives bring gift me some, but all done.
It's going to depend on where you are. You can find the ground version almost anywhere under the name allspice though it won't be the same
Karibbean Flavours have Pimento Berries powered but I haven't seen the seeds been looking as well.
