Wow! One time in my new life - I live in a small new mexico town, I was lucky enough to nab a diakon radish & all the fixings to make a small batch of kimchi. But then I never used up the rest of the radish. I Must Try Again! ...if I ever get back to a big city.

I've never tried it, but I think the flavor would be similar... but it might look a bit weird if the radishes are red instead of white. And it would take a LOT of radishes, since daikon radishes are so much larger than most others.
How did you grow these so big? Do they like any fertilizer? My radish were so small because I added blood meal. The recipes looks delish ❤
I didn't add any fertilizer, but blood meal would definitely make the leaves bigger vs the root. Bone meal might help with larger roots. But mostly I think it depends heavily on conditions when they grow (temperature, moisture), so I must have gotten lucky this year. My previous ones haven't been as large, so temps must have been perfect for them this time!
