  • You’re going to love this creamy cauliflower porridge. It’s a great low carb and grain free porridge / oatmeal option!
    It’s also vegan, gluten free, and totally sugar free if you omit the maple cinnamon apples on top.

    Creamy Cauliflower Porridge
    Serves 2
    4 cups cauliflower florets
    1 cup warm water
    1/2 cup full fat coconut milk
    1 teaspoon psyllium husk/hulls/powder
    1 teaspoon vanilla
    Add the cauliflower to boiling water and simmer until cooked, about 7 minutes.
    Blend all ingredients in a blender until smooth. Pour into a pot and bring to a boil. Simmer for 3-5 minutes until it thickens.
    Cinnamon Apples (Sub sauteed zucchini for low carb option ).
    1 teaspoon coconut oil
    1 apple, diced
    1/4-1/2 teaspoon cinnamon
    Good drizzle of maple syrup
    Sauté the apples in the coconut oil. Add cinnamon and maple. Cook for desired softness.
