We just made the green bean, asparagus, artichoke salad and OMG my husband was like....dang we need to start eating healthier all the time lol LOVED IT!
I tried the zucchini and tomato salad and it was TO DIE FOR! i paired it with 2 hard boiled eggs. i bought cherry tomatoes on the vine which was $4!! for 1 cup and 1/2 but totally worth it. Could not believe how good they were. I did not slice tomatoes as it is just me so they wouldn't sag the next day. the basil was great. thank you so much! simple yet delicious. this is what i need! i gave the recipe for the asparagus one to a neighbor as she loves it - i on the other hand don't like it. I also love beets, a childhood favorite, so I'll be making that as well. Great for the hot summers here in AZ.
Also now tried the green bean, asparagus and artichoke heart salad! It's also really good (but I have to say the courgette, tomato, basil and feta cheese one with the lemon zest will forever be my favourite!!!).

It's good to know that feta or goat cheese can be substituted for kalamata olives! I dislike almost all olives, and needed a substitute for the salty tang. P.S. I made your Avocado Egg Salad with chicken instead of eggs. That was amazing.

In all honesty I was a bit sceptical about eating zucchini raw and about lemon zest in a salad but have come to trust and love your recipes so I thought 'lets give this a go'. I cannot tell you just HOW delicious I found this salad and how much the lemon zest makes it extra special. I think I could have eaten twice the amount I took. I have the bean, asparagus and artichoke salad on the menu tomorrow evening. Tomorrow lunchtime is one of your breakfast sandwiches with the frittata and cheese (currently in the freezer, will take it out before I leave for work tomorrow). You can also spiral zucchini for a twist for your salads. I also use my spiral zucchini raw and put spaghetti sauce on top my favorite.
