- 4 Mahi mahi fillets
Season to taste with:
- Sea salt
- Onion powder
- Black pepper
Oil for searing
2 - 3 tbsps Butter
3 or more cloves garlic, minced
2 stalks scallion, diced
Freshly squeezed lemon juice

How long prior to cooking do you season the fish?
What other fish can I use if I can't get Mahi Mahi? Tasty looking fish.
Salmon, halibut swordfish, snapper
If I don’t have scallion is there any other substitutions or can I cook it without it
If you have shallots you can use those, but you can also omit the scallions all together in lots of recipes.
