  • The only thing better than Zaatar manakeesh are Zaatar rolls. Delicious Zaatar in a moist and soft bread. To die for!

    Ingredients: (to make 24 zaatar rolls)
    Dough:
    - 4 tablespoons sugar
    - 1 cup very warm water (approximately 35 C or 100 F)
    - 2 tablespoons active dry yeast
    - 5-6 cups flour
    - 2 teaspoons salt
    - ½ cup vegetable oil
    - 1 cup plain yogurt
    Filling:
    - 1 cup Zaatar (divided in 2)
    - ½ cup olive oil (divided in 2)
    Directions:
    Dough
    - To activate the yeast: in a medium bowl, add the yeast, the sugar, and the warm water. Stir it and set it aside. After about 5 -10 minutes, the yeast will foam up and double in size.
    - If using a stand mixer: Transfer the yeast mixture into the bowl of the stand mixer, and add to it all the other ingredients. Using the dough hook attachment, mix on low for 5 minutes until the dough become into a smooth ball. Add flour if the dough is too sticky.
    OR
    - If using hands: Transfer the yeast mixture into a large bowl. Add all the other ingredients, and mix with a wooden spoon until the mixture becomes dry.
    - Transfer the dough onto a floured flat surface. Using your clean hands, knead the dough for 5-10 minutes, adding flour if necessary, until dough become a smooth ball, and doesn't stick to your fingers or the surface.
    - Cut the dough into two equal sections and form each dough into a ball.
    - Place each dough in a greased bowl, and cover with plastic wrap.
    - Place the bowls of dough in a warm place, away from air as much as possible, and let it rest until it doubles in size.
    Zaatar roll
    - When dough is ready, transfer it onto a floured surface.
    - Using a rolling pin, roll the dough into a rectangular shape. (aprx 14 in x 12 in, ¼ in thick).
    - Spread the olive oil onto the dough evenly, leaving one of the long ends ungreased
    - Sprinkle a generous amount of the zaatar on the oil, again leaving one of the long ends ungreased.
    - Starting rolling the dough starting with the large side. Leave the ungreased part to be rolled last.
    - When you finish rolling the dough, pinch the ungreased end to seal the dough.
    - Cut perpendicularly into 12 equal pieces.
    - Place each roll horizontally into a greased baking dish, leaving a 1 cm space between each one.
    - Repeat this process with the second dough.
    - Pre-heat oven to 200 C or 400 F
    - Cover the baking dish with a plastic wrap and let it rest in a warm place for 45 minutes, or until it doubles in size.
    - Bake for 20 minutes until done and golden color.

    I'm just in love with your channel, I'm an Arab studying abroad and I did not know how to cook anything, so I'd just end up eating from outside everyday, but really missing Arabic homemade food, your channel helped me make some recipes that I really missed, so sad that you haven't been posting for a while I hope you come back with more amazing recipes!!!
