      Awww thats so sweet, what a compliment as I am a big Nigella fan love her no nonsense approach. Cooking is fun and I hate when it becomes technical. I have had a long break from UA-cam but am eager to get back and hope to make lots more videos soon

    5:46 "I think it does something to the color of when it rises". Actually the sugar is for the yeast to digest. Without it the yeast could not produce the carbon dioxide that causes the yeast to rise. Has nothing to do with color.

    Beautifully done. Thanks for sharing.. as a young boy, I was watched by a Lebanese family and ate many of their dishes and love them still, to this day. This is one that was among my favorites

    I mean is that even possible. Wow impressive making zatar at home without those large brick ovens at the zatar store, Cool!!! I need to show this to my Mom ( a huge fan of zaatar)and I really need to learn saying Zaatar the way this lady sounds when she says 'Za'atar'. ;)

      Varun Mani the ovens make it easier especially with big batches and if it is a wood fired oven it just takes the flavour to another level. But it really is super easy to make it at home. I Hope that you try it at least once ☺

    Wow! Great food and beautiful presenter ...so sultry! I have followed the recipe but, i mixed the Zaater herbs into the dough mix and I used 80% stone ground white plain or all - purpose flour and 20% Rye flour; I rolled them out, and cooked as instructed here. absolutely delicious, where do you get Sumac? I have so many Asian shops nearby but couldn't find it anywhere. ...so I used a dark and warm Paprika instead with dried Goti berry instead.

      Marcella Gilbert thank you so much for your lovely comments. Yes that mix you used is more than ok you can really use any kind of flour you like but might need to play around with the ratios. You can sumac from any Lebanese/Turkish or Mediterranean food store. Most good supermarkets will stick Sumac in the spice section.

      Merci! I shall try to find it next time i'm in Manchester or Liverpool I may stand a better chance of finding it then. I want to make some more choices of breads for visitors to our house; Focaccia, Ciabatta, Naan and Sour Bread is what i serve now with hummus dip or garlic dip and fresh sea salt in a bowl to dip into with friends as they enter the house. x

    Enjoyed your video, and your very entertaining, I know this recipe but watched you for 2 reasons, you remind me of my sister and I love your shirt or dress (can't tell)....btw, I'm not too fond of Darwin as well.

      I LOVE spelt flour, I use it for almost everything that requires all purpose of white flour which I never go near. I am also a fan of buckwheat and oat flour for bread, so delicious and earthy, it actually tastes like something!

    I like how you’re using spelt flour instead of GMO wheat ! Have you heard of Einkorn flour? That’s the nature’s original wheat! Spelt is the 2nd hybridization I believe. I only use Einkorn flour if I eat wheat. The modern wheat caused me to have a thyroid disorder but now my levels are back to normal after I stopped eating modern wheat.       Hi thank you for your kind words, no I have not heard of Einkorn flour but I will definitely look in it. I try to stay away from modern wheat flour as much as possible, and prefer the healthier alternatives, so much more texture and flavour not to mention no side effects!     why is everybody saying it wrong??! Zaatar is not only thyme! It's the WILD thyme. And this is a HUUUGE difference. Do NOT use the normal, regula thyme. You've got to use zaatar itself which is WILD thyme.

      luticia there are many types of herbs used typical is Oregano, Thyme and Marjoram.
      Also, Origanum Syriacum (the image in my thumbnail) is the most authentic.

      Asim Khan I used spelt flour but you can use all purpose flour or wholemeal flour. I just don't use bleached white flour in any of my recipes

    I was wondering, I have some friend from Israel who say Zaata is from them, but then I am told It is 100% Arab, can you set the record straight, also how old is Zaata, I really Love Ancient Arabian Culture. I have tasted Zaata, and it is so AMAZING & EXOTIC, I cant get Lamb where I am but I can get Goat or Beef,. so can I use that on the Zaata Manakeesh Pizza, how much meat & Cheese do you put on it !       +Roberto Pechenino let me set the record straight that Zaatar is a food that is very much arab and that it came from the area known as the fertile crescent (Palestine, Lebanon, Syria and Jordan). Although we have no issues with Israeli's consuming our traditional foods, cooking them and enjoying the regions cuisine, we certainly feel that this cultural re appropriation is absolutely disgusting. Stealing our land is one thing, but please do not try to take our culture and food and say it belongs to you. The origins of Zaatar are at least 500 years old and seeing as Israel is only 70 years old you do the maths. Israelis also like to claim hommus, cous cous, falafel and tabbouli as there's. Although there are Arab Jews and they definitely have a claim to the food heritage, European Jews do not. I hope that this answers you question.

As for the questions about meat and cheese on maanakeesh its just enough to cover the surface area with about at least a 1 cm gap from the edge. If you put too much topping on it will weigh down on the dough and it won't come out light and crispy. Thank you for your comments and your parents sound amazing, as they have obviously raised a very well mannered and respectful son. God bless!

      To be honest there really isnt a substitute so I would just leave it out. But if you buy ready made zaatar then you dont need to worry as sumac is included in the mix :-)

      @@bijapurlegacy9299 yes thyme is bitter but the type of thyme used in zaatar is a local variety and not the same as used in western countries. But use less and more sesame is always good

      Jassim Rihoum thanks for the comment. I personally never wear gloves when handling food in my kitchen. If your hands are clean then I think it takes away from the enjoyment of actually connecting with the food your making

      Charles there are many types of herbs used typical is Oregano, Thyme and Marjoram.
      Also, Origanum Syriacum (the image in my thumbnail) is the most authentic.

    There is no GMO wheat sold on any market anywhere in the world. Not in 2015 and not now in 2020.

      Thats a bold statement to make, would you like to provide some proof of that, as we know that GMs are everywhere and we are not even sure the extent of far its reach is because to date their is no legislation anywhere which requires any GM foods to be labelled, including wheat and if you do your research you will easily find that 90% of wheat crops in the US are all GM, barely any heirloom crops left although many farmers are working hard to reverse this.

      @@jomananajem4319 you are simply wrong. find proof yourself of ANY gmo crop on the market. there is only some being researched.. THERE. IS. ZERO. GMO. WHEAT. ON. THE. MARKET. you probably have never even looked into how many GMO crops there are, let alone how many are on the market. Seems like you assume if it's not organic then it's gmo.

      @@ichigeri while I do understand that this is the official narrative and this is what governments have been telling us, but from what i can ascertain i do not believe this to be true. While it might not be sold in western countries as a gm i know that monsanto is certainly not wasting time in giving out gm seeds including wheat to poor african farmers and indians

    zaatar is the arabic word for thyme ... which is the main ingredient in zaatar, not oregano.

      this is true, but it is not exactly thyme as we know it in the west either, but a thyme that is native to the fertile crescent if we want to be really precise. Most people in Australia know it as oregano hence why I chose to use that name. And just so you know i am a native Arabic speaker and very well aware of what zaatar is, and I use the fresh version often in salads and other dishes.

      Your right it shouldnt be that crunchy, although I really like it a little more cooked than usual, but this is the challenge of cooking and filming at the same time, often things can go wrong and you just got to work with it :-)
