  • Cheese and zaatar manakeesh
    Ingredients:
    -Dough:
    3 cups all purpose flour
    1 large egg,room temperature
    ¾ cup warm water
    1 tablespoon sugar
    1 tablespoon instant dry yeast
    1 teaspoon salt
    1/3 cup vegetable oil
    1/3 cup powdered whole dry milk
    -Filling:
    125 grams Halloumi cheese
    70 grams Cheddar cheese
    1 + 4 tablespoons olive oil, divided
    1/3 cup Zaatar
    Sesame seeds for garnish
    Directions:
    Make the dough:
    Dissolve the sugar and yeast in the warm water, allow to foam. Whisk the vegetable oil and egg.mix the flour,salt, powdered milk and add the wet ingredients. Knead until you get soft dough. Put the dough in an oiled bowl and cover with plastic wrap and let rise for an hour or until doubled in size.
    Make the filling:
    Mix the zaatar and 4 tablespoons olive oil and set aside
    Mix the two cheeses and the 1 tablespoon olive oil and set aside
    Form the manakeesh:
    Preheat the oven to 400 F and place one rack on the bottom third (closest to the element) of the oven, and another rack on the top third.
    Divide the dough, after punching it to release the air, into about 16 balls and let them rest on a floured counter for 10 minutes (covered with a kitchen towel).
    Take one ball of dough and roll it into a 5 inch circle, spread a heaping tablespoon of cheeses mix, fold each third of the circle towards the centre, exposing the cheese. Fold the two ends to form a boat shaped pie. Press on the pie to flatten it. To form the zaatar mankosheh:roll the dough as you did with the cheese,then Prick the surface of your dough with a fork, or use a pizza docker if you have one. This eliminates air bubbles in the surface of your crust..Spread about a teaspoon of the zaatar filling ,leaving about ¼ an inch plain..Place the manakeesh on a cookie sheet lined with parchment.
    Bake the sheets on the bottom rack for 7 minutes ,or until the bottom of manakeesh are golden and crispy then transfer it to the top and bake for 2-3 minutes or until the manakeesh are golden .
    Serve them while still warm and enjoy
