I tried the recipe and they are hollow. I fill them and put them in the fridge. I don’t know why but my macaron always hollow. Never crack on top or lopsided or anything. Just hollow. 🥺 so sad
What temp would you suggest that the sugar and egg whites should have melted? First time trying and wouldn't want to guess. I have seen different temp online ranging from 100f - 160f. Thanks
With fan. If you don’t have a fan in your oven, you can put a wooden spoon in the door to keep it cracked. I’ve seen in other videos they’d do this for the first half of cooking then remove the spoon and finish it cooking
This was a good video, but I have a question. If you are making a batch of macarons, and you run out of room on the cookie sheet, and end up needing to use two, or three, what do you do? Do you bake more than one tray at once? Do you just let the second (and possibly third) tray sit and "dry", while the other tray is baking? What happens if macarons "dry" for too long? Do you wait to pipe the second tray of cookies until the first one is almost done? I have a small oven, so I need to know, but I can't seem to find the answer anywhere. These cookies look great, and this was a good video 👍
I have lots and lots of baking trays, so I pipe them all. In case you don't have enough baking trays, you can always leave the batter in the bag and let it wait for the trays to be available again, but there can be a few issues with that, first is that you will need to wait for the tray to cool down before piping more macarons on it, second is that if your macarons need to rest before baking it will take you way too long to bake them all, so I recommend getting more trays if possible.
I really don't recommend baking macarons in a toaster oven. You need a big sturdy oven with thick walls. The thing with toaster ovens and those counter top ovens is that they have really thin walls, so they have a hard time keeping the temperature constant. The temperature oscillates a lot to keep an average of the temperature you set it to, and that's terrible for macarons. The oven is one of the most important parts of making macarons, so I don't recommend baking them in a toaster oven at all and I don't know of anyone who has done it successfully, to the best of my knowledge.

Pies and Tacos, since my mom haven’t used the regular oven for years, so she is scared that it would explode. So I can only use the toaster oven.
