We normally pay more because of the ambience. But this expensive Pho is fit for royalties and millionaires considering the ingredients. The truffles alone costs a lot. Very interesting vlog.
For me … support family business , eating around diversity of people and get to know the owner , and love to try varied of pho broth that pass on from their family’s recipes

I love your videos, and you are one of the reasons I went to Vietnam. I think the first Pho is the one that appeals to me as it is made with love, and an elegant simple authenticity. The second one seems to try too hard and as you said be more of a culturally mixed or "fusion" dish. In Australia, foie gras is banned I think. Nice view though. Your professionalism, attention to detail, energy, humour, and warmth make you the most watchable person on UA-cam, and I would really love to meet you one day, perhaps over coffee. cheers Simon ( Australia)

Me and my wife are DEFINITELY thinking of moving to Ho Chi Minh for a few months. Your videos have been a massive help! (and somewhat depressing considering we are living in the wrong country 😭😂😂) . Vietnam looks simply amazing.

I have been to the Landmark Building. Impressive at best. Never knew they served Pho there. As an Expat living in Phu Huu , I enjoy Pho and most Vietnamese food. I like simple foods and healthy . You are right Pho’s sweetness should come from the meat and the herbs and spices. I love Vietnamese Food and Coffee. This is a wonderful Country and I love it here.

My first authentic bowl of Pho came from a really good Pho place in Ho Chi Minh named Phở Phú Vương. That Pho changed my life. It was simply the best bowl of beef pho I have ever had!

Hi Van Vu… Another great explanation video about one of my all time favourite dishes “Pho Bo” in Vietnam.
Because I live in the north of Vietnam- fun fact where Pho originated from 😉😁 : Hanoi my go to Pho Bo eatery is near my home - easy walking distance 1 or 2 times a week 🙂
I really agree with you that adding sugar or flavour enhancements ie: MSG to any food prep is one of my pet hates..too. Great you referred 3 renowned Vietnamese food critics in this episode 👌
I consider myself to be in-touch with how many food groups go together as I’ve been a passionate home cook and follower of famous chefs and my personal culinary journey around the world for over 40 years! Until finally settling here in this wonderful country for some of the best foods on the planet Vietnam 🇻🇳😉🙂
Ive made countless stocks whether it be Ga- Chicken, Bo - Beef or Vegetables but using only real ingredients. My go to seasoning is muối & tiêu ( salt and pepper) at the table! I’m sure the vendor laughs under their breath knowing they have added MSG already in the huge cooker during preparation 😆
I have videoed many Vietnamese vendors preparing their special dish they sell! I have to confirm there are very few that don’t do it the proper way.. My Opinion Only 😊 But to add one or two bags of “AJI-NO-MOTO” MSG goes against my idea
on how broths should be constructed and put together! My Opinion only that is…
I think it all comes down to time.. and many vendors take shortcuts despite how many years they have been making it.
For me despite knowing MSG is
generally always added when vendor is preparing! I say “Không Mì Chính” = No MSG knowing it’s already in it..
My assumption for this is; an after taste of salty on the palate after I’ve eaten.
Ive also conditioned myself over time whats in the foods and packaged products here in vietnam is not as regulated say in my country where ingredients have to be listed or else!!
But the key takeaway to my theory over time is DONT BUY PROCESSED FOODS!! My ethos only.
Unfortunately many families are so time poor here in Vietnam and convenience is first choice mostly over nutrition- my words only

For the third point “You want to eat the second bowl after eating the first bowl of Pho”. Does it mean you want to eat immediately after or it means you would come back and have some again in the future?

I personally would go for the cheaper pho since that’s the average there and more authentic vs 160 usd for the noodles only being Vietnamese.. plus you save money on other foods and adventures and shopping there!

3:17 Since 2008 I’ve been living in Vietnam, I use to do the opposite. 😅 I know it’s impolite, but I always put some ice cubes inside the bowl. 😆
The truth is I’m intolerant to hot or/and spicy food, my tongue has « sensitive buds » (benign lingual papillitis) and all heat coming from hot food is multiplied by 100. 😭
So I only can eat warm or cold recipes. 😅
It’s a sad thing when we know Vietnamese food is more delicious when it’s eaten hot. 😢
But, « c’est la vie ». 😄
Try Bun Thit Nuong or Bun Nem Nuong or similar foods like a banh hoi. Its not spicy unless you add the hot chili's and its not too hot to eat as its mainly rice noodles, raw veggies and grilled pork or pork sausage and they are actually sweet tasting and delicious, not spicy at all.
@@RacerX888 Yes, I know. There’s a famous “nem nuong” here in Can Tho City, “Nem Nướng Thanh Vân” (check on Google 😉👍).

I think I'll just stick with your recommendation in your Vietnam travel guide and keep going to Pho Hoa Pasteur in Saigon and save myself the $160.
What made the expensive one's soup less clear is the amount of collagen from the chicken feet; but, it now has a more rich flavor much like tonkotsu. The gold leaf will not add any flavor; albeit, increase the Aesthetics and price only. In my opinion, black or brown mushroom would be much suitable for the more Asian approach and taste. Wagyu is over rated at this point since the beef should be thinly sliced.
I agree, there is no point of comparison between the first and second because the former is more traditional as to the fusion style of the latter.
7:42 Fois Gras is duck liver made by force feeding ducks a high fat diet. Originally, in France, the ducks were fed a lot of nuts and fatty foods, but now, it's mostly just a tube stuck down a duck throat and oil is forced into their stomach.
It's duck or goose liver. It is baned in 20 countries and New York and California...it is inhumane 😢

I was at Landmark 81 last March. I went strictly for the observation deck. Everything else was absurdly overpriced. Sad there's an elitist element of HCMC that exists to cater to the rich and further propagate the economic disparity.

In San Francisco there is a Vietnamese restaurant that serves a bowl of pho for about S100. It has a big lobster and other delicious ingredients (wagyu beef, etc). I will try that the next time in SF.
The $160 pho in VN doesn’t compare to that, I think. I may go there for the view, though, but wouldn’t order pho there.

I prefer the cheap Pho from the street stall. Pho is rich enough on its own, no need for truffle, foie gras or gold flake.
