I had a south Vietnamese mother-in-law who cooked like a godess: I LOVE VIETNAMESE FOOD! However I'm not too keen on blood pudding. I love Banh bao, Nem, (Cha gio?) and lots of dishes I don't know the name of!
As an American, I'm so happy Vietnam is thriving as a nation.

Vua Bánh Mì is my favorite, when I am in Saigon I eat their Bánh Mì three or four times a week for lunch. Everything is fresh, their stores are very clean, and you have a very large selection of different ones to chose from. So tasty. Bánh mì Như Lan is also very good, I think it is a famous place for Bánh mì in Saigon.
In fact, "Quang" noodles in central Vietnam are the only breakfast food, or even eating at other times, it's full of nutrients, more than "pho" and vermicelli. the price is cheap. "Quang" noodles have a variety of vegetables, There are peanuts, eggs, shrimp, chicken, snakehead fish, frogs,char siu meat...etc. to change. add pancakes. In general there is flour, protein there, green vegetables of all kinds."Quang" noodles are cheaper than "pho".
I think for me it's the texture of the bread, the crunch of the pickled veggies and then the hero, the roasted pork. Don't forget the spicy mayo. It all comes together very nice.
I love Vietnamese Banh My so much, especially Hoi An’s Banh My and Saigon’s Banh My. I highly recommend you guys.

This kind of culture promotion is what tourists need the most. Honest, but also attracting enough to make tourists interested.
In the good old days when international borders were open I spent a lot of time in Saigon. For breakfast I alternated between Pho Bo and Banh Min op la. I always went to the same pho place because they supplied a big plate of green vegetables with each customer. There was also a reasonable supply of condiments including sliced lime. They gave my complimentary tea occasionally as I was a regular customer. Hardly ever saw a westerner there even though it was in district 1.
Good memories, I miss the normal life as well, hope you are safe and well!
When I was younger I had Vietnamese spring rolls, the flavour was awesome. Would love to have them again but the lady who made them has passed away. But have found recipes and use them,so delicious.

I was born in Da Lat, but both my parents are from Hanio... But what I can remember growing up in Da Lat and Saigon (early 70s) Breakfast, Lunch, and Dinner is basically the same. Mom just mixed it up.
My typical breakfast was banh tet/ banh chung and soya milk. Occasionally xoi mang or banh mi anything fast so I can catch the bus. I used to work in Saigon and Hanoi from 1995 until we moved to California in 2001. Those were happier times.
went to vietnam right before corona. the food in Hanoi was so good! slightly surprised how much the pho was different than in the USA,
Pho in the U.S has similar taste in the South of Vietnam. The flavor in the North is different.
hanoi is a nice cuty to visit fir few days, but the ciry is limited on foods. i love bun cha in Hanoi, but its very rich in fat. saigon is the city for culinary delight and it will satisfy your hunger and all your senses.people from saigon are true Iron Chefs!

I agree with everything you say, although Pho is a great decision for a rest of your life meal, for me Hanoi Bun Cha and Nem from my favorite restaurant is something I couldn’t bear to separate with.

Wow such a diverse array of different types of food. So different than typical American dishes which are basically the same no matter where you are. I’m so excited to return and try everything.
In Australia, Pho looks like southern Vietnam style. It's my favourite food, l often drove more 15 km to my favourite Vietnamese restaurant to eat it.
I'm a Vietnamese-born American and I just eat instant noodles such as MAMA, Hao Hao, or Nongshim for breakfast every day. Also, I eat those Vietnamese "breakfast dishes" for lunch on the weekends because my parents have time to cook those special meals on the weekends. Sometimes I eat a fried egg with banh mi or banh mi thit for breakfast if my family bought banh mi loaves and cha lua from a Vietnamese supermarket.

I was in Ho Chi Minh two weeks ago and walking along Ben Thanh market, the vendor offered me snake wine! I politely declined since I’m horrified of snakes but thank you for telling us to avoid it! I watched your videos before my first trip to Vietnam and I fell in love with your country during my stay. I’m already planning for my next trip back! Honestly, Banh Mi was my first ever food that I ate since January 8. 2023. In a basketball game in Mall Of Asia Arena in Manila, Philippines in between my favorite basketball team GINEBRA and BAY AREA DRAGONS.

Mr. Simpson! So respectful lol. I'm missing out big time on northern pho. Idk why but it seems like 98% of pho in the U.S. is southern pho. It's just as rare to find shops serving fresh banh pho like in VN.
I assume that after the war, most of the Vietnamese that immigrated to America were from the south. Therefore southern pho is more common for that reason.
@@GeologyDude yeah, your hypothesis is probably correct. But there are still many northern-accented refugees outside of VN. Despite many of them having moved to the South during the war, I would think the prevalence of northern pho elsewhere would be greater than what it is currently-- basically non-existent.

@@laughter95 The people who were born in the north originally and moved to the south before and during the war and then left when the Viet Cong took over went on to university and became engineers, doctors, lawyers, accountants, etc. in the U.S., Canada, etc. Source: my whole family and extended family and all my parents' friends. These people do cook northern style foods/use the northern flavor profiles at home, but just for friends and family.
The only people I know who ran/run restaurants or nail salons are the newer immigrants from the south who didn't or don't have the opportunity to pursue higher education. I know some business/restaurant owners originally from the south who were too old or were already married with children and couldn't go to university so they eventually opened up small businesses.
I'm seeing more restaurants opening up that are northern style these days.

My hometown is located on District 7 in Ho chi Minh city. When I was just a little boy, my parent introduce me yo this banh mi food stall called “banh mi 7 (or 17 I can’t remember”. I’m 21 now and when visited my hometown 4 years ago, the stall still running just like the old days. I even picked same old banh mi I already picked from them. It is the special banh mi with minced meat and whatever that heavenly delicious sweet sauce they put on it. Since my aunt just opened her Vietnamese restaurant in Chicago not too long ago and one of her popular dish is banh mi. If I ever visited my hometown ever again, I’ll have to stop by that stall again and ask them for that sauce ingredients. They’ll mostly likely share it with my as they know me ever since little and is one of their frequent customer. They even know what banh mi I’m even gonna those as obviously I’ve ordered that one ever since little and hadn’t change it.

One of the best tips on eating is seeing if the place has lots of customers or not. If there are lots,even a queue, then it is a good sign of not only being safe, but delicious.
This applies to pretty much any country though.

This is very helpful. My favorite pho place is in Sunset Park, Brooklyn. It's a hole in a wall restaurant but their Pho is out of this world 😀

There is this breakfast dish which I once ate in Hanoi : steamed sticky rice eaten with braised pork, egg, and other savoury items. It tasted so good! But it is not commonly found.

you are making me hungry. I live about a mile from Chicago's Little Vietnam. I am going to try something other than PHO or Bahn Mi, my normal orders. the info about Bahn Mi is Sooooo unsurprising. I am glad to hear that the Vietnamese at least tried to make it their own. I also hope they open up to Americans soon. there are several countries in Asia I have yet to go to and Vietnam is on the bucket list.
