I had this in hcm years ago. Couldn’t find it in Singapore. Apparently the herb wasn’t available here…damn. The aromatic herb infused oil coating the fish, and eating it with the herb and the bun vermicelli is very delicious.

it's so interresting of eating with small size bowls , bite size bowls , so each bite you can make it different with spicy chillis or not, fish sauce or other sauce dips. Same meal but diffrent flavors for each bite
It also ensures that people aren't making their "own" bowls of food like in Western culture. The food is meant to be shared, and you only take what you eat. It promotes communal dining and awareness of others dining with you.

There's the other restaurant where you have to bring your own fish and herbs. Anthony Bourdain went to one. They will prepare the fish for you and same set up with the sizzling pan on the table. The fish sauce was the lame sauce for gringos and those that can't take the pungent smell of shrimp paste. The shrimp paste comes very salty out of the jar so you only add lime/lemon juice and sugar and nothing else. If you want to dilute more, add more lime juice. The sugar is to bring the flavor back into balance. My mom is from the north and she never cooked the green onion and dill much. Just a quick sizzle to keep the crunch in them. We do put plenty of oil in the pan so we can drizzle the hot oil onto the fish + greens. We can roll these up with wet rice paper or even lettuce then dip in the sauce.

Actually The first time I ate "Cha Ca La Vong" was in Canada, My uncle made it. This is actually a very simple dish, but the flavor is wonderful.
