    Hi Van Vu!! Your channel is fantastic, and I am so proud to have someone such as yourself to represent our culture! Although the French influence on the Vietnamese culinary tradition has been discussed extensively, we never hear of how Vietnam had rescued a French cultural heritage out of oblivion in the 1950s - la cuisine Provençale!
    Provençale cuisine was a derivative of Roman cuisine in the French Mediterranean. Just like the Roman garum or modern Italian colatura di alici, Provençale cooking uses pissalat - a fish sauce made from salted anchovy. After World War II, the production of pissalat came to a grinding halt, and the ingredient almost became extinct. This was important because it was a traditional ingredient in the pissaladière, an onion and anchovy pizza specialty of Nice, the capital of the Côte d'Azur.
    During the early 1950s after the decisive Chiến dịch Điện Biên Phủ, many Vietnamese resettled in France, especially around Marseille - the traditional Mediterranean port of entry from Indochine to France. Guess what these Vietnamese brought over that virtually rescued la cuisine Provençale? Nước mắm! Yes! We saved a French culinary heritage from extinction!
    The French news magazine L’Express featured an article about a decade ago on “Le nuoc mam, sauce de poisson miracle du Vietnam.”
    Even in French cookbooks or blogs on how to make pissaladière, nước mắm or mắm nêm were recommended as substitutes as these were “ironically easier to find than the authentic pissalat.”
    “…Vous pouvez aussi utiliser des produits asiatiques, comme le mắm nêm des vietnamiens, le plus approchant à ma connaissance, ou pourquoi pas, un nước mắm concentré, deux produits paradoxalement plus faciles à trouver que de l'authentique pissalat…”
    Hi Will, I also subscribe to your quite amusing channel. You had indicated in the video that there is no snail soup in France. Par hasard, je suis tombé sur une spécialité charentaise - la soupe d'escargots aux orties sauvages, essentiellement une soupe aromatique - voire homéopathique et médicinale - avec des orties sauvages, des tomates concassées, de l'ail et des escargots, avec un peu de beurre et de la graisse de canard. Miam…à votre santé!

    Un cafe serre is my go-to choice when I lived in Paris. I drink it everytime after lunch. :D Now I'm back home in Thaland, I order Nespresso Machine and capsules to have un cafe serre. Kindda addict to small and strong cafe like that.
    13:38 In Thai we eat it with cháo gạo. Or take it as snack to eat with Thai milk tea in the morning. Just knew that VN eat it with Pho. Good choice (y)

The ( rainy season ) in Vietnam gave the video another taste of adventure to the video...     My mom cooks Beef stew Phở (Phở sốt vang) just perfectly and delicious, and she uses real red wine. Phở sốt vang really taste excellent when you manage to home cook it because high-quality ingredient lift it up :> I guess they don't use red wine for Phở Sốt Vang version on the street because it might be expensive. But the beef broth with five-spice n tomatoes already gives its signature flavor.

    Thực ra người Việt đã chế biến các món ăn từ ốc từ hàng nghìn năm trước rồi, trước cả khi Pháp vào Việt Nam. Nên là cũng không phải việc ăn ốc là ảnh hưởng từ Pháp. Mà Mình thấy bên tây họ có món mì ốc sên và có cả súp với ốc nữa mà nhỉ , chắc không phải món Pháp à??

      Có thể là người Pháp qua VN, thấy người Việt ăn ốc rồi copy mình đó thôi, chứ ốc khó nuôi ở Pháp vì thời tiết lạnh và không có nhiều loại ốc như ở Việt Nam.

      @@jakespark mình không bàn tới món bún ốc . Chứ Pháp ốc sên là đặc sản nổi tiếng của họ . Nuôi rất nhiều .

      @@coolsoenie And had they stayed with us, they would have been richer.
      Most of the vietnamese diaspora has a confortable living here, now in France.
      And so there is no reason it could not have been the same in Indochina, especially considering that by the 1970's, the new generations were no longer "racist".
      A missed opportunity.
