My mother and grandmother and I have made noodles for years. To make the process faster all you have to do is let your pasta sheets dry under a tablecloth or small piece of sheet for a few hours. Turning them once in a while until they are the consistency of leather. Flexible but somewhat dry. Stack them all, roll the stack, then slice through the entire stack with a sharp knife on a cutting board the width that you want them. Shake out the slices of cut noodles onto your tablecloth and allow them to dry or cook them immediately. By having flour on the board, they will not stick.

I love different accents. All of them. Living in the United states in the midwest, a few hours from Chicago we hear all kinds. I live in Springfield, Chicago is 4 hours from me and we don't even sound the same. We were lucky enough to go to Ireland about 10 years ago, I was outside at a pub chatting with people and they just kept asking me questions so they could hear me talk! They said they loved my accent. I have no idea what I sounded like to them. But, several people gathered just to hear me talk ..kinda weird, but, true. There was plenty to talk about because I live in the land of Lincoln. So many questions. It was hilarious. My 15 minutes of fame I guess. 😂
I so agree! Cooking has been more fun! Trying to come up with solutions has definitely added a great deal of fun to cooking. And the health boost is awesome!

So glad you’re both ok!! 🙏 It was so interesting what you were both saying earlier in the video regarding your pantry challenge and the unexpected reduction of general waste. I can totally relate to this right now. This year, in an effort to reduce waste, eat healthy and live on less, I’ve challenged myself to live on British WW2 rations for the whole year. No take out, everything made from scratch etc cooking traditional wartime recipes from the 1940’s. I’m only a month in and I can already see a huge reduction in waste! It’s really opened my eyes. I’ve also started my first UA-cam channel to document the whole endeavour, another eye-opening experience! I discovered your channel in late 2022 and I’ve been hooked ever since. You do such an incredible job, I honestly don’t know where you find the time & energy to produce as much amazing content as you do when you’re running a farm and household! I completely understand what you mean about not going to the grocery store as often, how it gives much more value to all the hard work you do in the gardening and preserving season. I know for me and our family it also allows for much more gratefulness in what we are eating.
You two are AWESOME! ♥️ Chelsea, first year I did the pantry challenge , my home is in a woods/country area, not close neighbors, so I told myself - way back when they couldn’t run to the store, or order out 👍 that’s when you have a grab night 😄. Grab a sandwich or warm up soup etc. Many times from my childhood I remember asking Mom what’s for supper? She’d say it’s just grab night dear. I don’t buy much from the stores anyway, - coffee paper towel and such you can’t grow BUT my children are grown with families of their own so my garden growing lasts much longer for my household The more rustic I can have in my life the happier I am

I started once a month shopping at Costco and aldi and so far I love it. If we run out of something before my next trip to the store we do without. What I miss the most is fresh veggies, I want a good salad so bad.

I just love the way y'all work together. Reminds me of my brother & SIL who have about 40 acres in country. They do the feeding of animals, snow plow the drive which is over a mile long. Such a beautiful life together.

Chelsea, since you are missing the fresh fruits and vegetables (in the winter time) maybe you can adjust the budget to allow for only for those things to be bought. Also, see if you can satisfy that by only going twice a month, and if Dan is more disciplined to sticking to the list, letting it be him that goes to the store.
I know everyone starts the new year with pantry challenge but it would be nice to do it during gardening season so you could run to the garden and get your veggies for dinner or salads so you wouldn’t miss out on the fresh veggies. 😊

You can always have a tomato soup and a grilled cheese that’s easy I know you got tomatoes canned for days and you got milk, tomato soup, milk, and tomatoes thickened a little. Toast some bread put some cheese on it and some butter that is a really good meal Easy too.
You say pasta the correct way, the way Italians say it, Americans mispronounce a lot of things from the English pronunciation. It's probably a colloquial evolution. Love your content and so glad you are feeling better! Thank goodness Dan's run off wasn't worse! Xoxo
Twice a week let the kids look through a cookbook and pick out a few things that look good to them. The kids can learn some basic techniques and be a great help to you now and them in their future. It’s a great way to experiment and it takes the guesswork of meal planning out for you.
You should get a measuring metal yard stick and nail it to the edge of your table. That way you can have narrow and even pieces. Just a hint; is you don't mind!
I have been trying to be more intentional about meal planning, to incorporate all my preserved foods. Also planning my 2024 garden and realizing I don’t need to give space to things I have an abundance of. Soooo many tomatoes products 🤪
So, I have made a ton of pasta. I started with an Atlas but ended up with bursitis in my shoulder and finally upgraded to the KitchenAid attachment. I flour in between each run through. And that way by the time you get to cutting it, it is not gummy. Also, when you put it through the cutter, I do it slowly and have no problem. Good luck.
If you chill the dough and then let it dry out a little in sheets, then the blade works perfectly. The way that we do it is we roll out 2-3 sheets and leave it on the counter. Then when all of those are rolled out put the first one through the cutter. Then roll one, cut the first one that was rolled out. I feel like that was a poor explanation but that is what works for us. Then you need a little flour on the machine but not as much.
One of the things I've found when making a BIG batch of pasta, it to roll ALL my sections of dough on the #1 setting (or whatever is the widest setting one your machine). Then do ALL of them on #2, then #3, etc until all your sheets are complete. This reduces the number of times you have to adjust the setting of the rollers, which is the part I find most tedious. I know many won't think that's a big deal, but when I cook for holiday, our family is 6 adults and 2 kids (so far!) and I end up making 3-4 batches of pasta dough.

Love that you are doing this together ! One thing I am surprised no one that I follow is doing is making the investment into a good chamber sealer. I bit the bullet a few years ago and best investment I made. I make so many boil in bag items for the times I need convenience or just do not feel like cooking. A few things I have done…..mashed potatoes,pulled pork, brisket, turkey in gravy,beef in gravy, taco meat….it goes on.. all I do is put the bag in boiling water to heat through. The smoked meats are fantastic! If I don’t have time to can my pasta sauce freeze it in these bags!

I made a carbonara recently and splurged on a little prosciutto. My husband and I both realized we would prefer bacon. Next time that’s what we’ll do. It could have been the brand, but bacon is more reasonably priced anyway😊. I did make the pasta, but I cheated and used my Emeril pasta and beyond😮
I've started making a lot.mpre from scratch. However, since September we've only had scratch spaghetti sauce - except for one night when my son made spaghetti. We've both realized that store-bought sauce is horrible - lol. We also prefer the homemade sour cream wevrle been making. Thanks for all you've shown me.

Good analysis of pantry challenge. I live in northern Ontario, zone 3, and choose to eat seasonally, so don't eat tomatoes, cucs, etc when they aren't growing in my garden. So we don't buy these during winter.
If you enjoy homemade pasta, you should totally try making perogies! Basically a pasta pocket stuffed with mashed potatoes and whatever else you want to though in. Onions, cheese etc.... I'm sure your family would love them. We like to lightly fry them in olive oil and serve with either butter or sour cream. Yum!
Because I watched the video where you used a pasta machine. So I ordered a machine and it will be here tomorrow. I usually use a pizza cutter to cut mine. Thanks

My heart was in my mouth watching the rescue too, that road looks lethal in the bad weather! Love watching you from across the pond. We retire this year so hoping to make more use of the garden to grow more of our own food. Wish us luck! I’m also going to be doing lots of waterbathing to preserve for the winter where we can, as well as jams, pickles etc.

We uy bulk foods only flower,coffee,sugar salt,oats,etc we only cook our own foods make our own pizzas with own sauce,and toppings we make our coffee take it with us,make lunches for work thermos of coffee, we cann pinaple and all kinds of foods,we only eat our own foods we grow and sometimes when a good sale is on mushrooms, or pinaple we buy and can it.we buy butter on sale .blocks 4.99 here 454 gram is the best price. Milk cream cheese,that's all we buy every 2 weeks

We found that intentional bulk shopping every 4-6 weeks saved us over a thousand dollars a year or more. Sometimes we stretch it to 8 weeks. 😊

Chelsea, since you are missing the fresh fruits and vegetables (in the winter time) maybe you can adjust the budget to allow for only for those things to be bought. Also, see if you can satisfy that by only going twice a month, and if Dan is more disciplined to sticking to the list, letting it be him that goes to the store.
I know everyone starts the new year with pantry challenge but it would be nice to do it during gardening season so you could run to the garden and get your veggies for dinner or salads so you wouldn’t miss out on the fresh veggies. 😊
I lived in Canada most of my life. Moved back to the US to join the Navy. I say paste and other words like you. Everyone says I say it wrong all the time. .when I watch a Show from Canada I show people so they umderstand I am not crazy.😊

You can always have a tomato soup and a grilled cheese that’s easy I know you got tomatoes canned for days and you got milk, tomato soup, milk, and tomatoes thickened a little. Toast some bread put some cheese on it and some butter that is a really good meal Easy too.

Twice a week let the kids look through a cookbook and pick out a few things that look good to them. The kids can learn some basic techniques and be a great help to you now and them in their future. It’s a great way to experiment and it takes the guesswork of meal planning out for you.
You should get a measuring metal yard stick and nail it to the edge of your table. That way you can have narrow and even pieces. Just a hint; is you don't mind!
I have been trying to be more intentional about meal planning, to incorporate all my preserved foods. Also planning my 2024 garden and realizing I don’t need to give space to things I have an abundance of. Soooo many tomatoes products 🤪
So, I have made a ton of pasta. I started with an Atlas but ended up with bursitis in my shoulder and finally upgraded to the KitchenAid attachment. I flour in between each run through. And that way by the time you get to cutting it, it is not gummy. Also, when you put it through the cutter, I do it slowly and have no problem. Good luck.
If you chill the dough and then let it dry out a little in sheets, then the blade works perfectly.
The way that we do it is we roll out 2-3 sheets and leave it on the counter. Then when all of those are rolled out put the first one through the cutter. Then roll one, cut the first one that was rolled out. I feel like that was a poor explanation but that is what works for us. Then you need a little flour on the machine but not as much.
One of the things I've found when making a BIG batch of pasta, it to roll ALL my sections of dough on the #1 setting (or whatever is the widest setting one your machine). Then do ALL of them on #2, then #3, etc until all your sheets are complete. This reduces the number of times you have to adjust the setting of the rollers, which is the part I find most tedious. I know many won't think that's a big deal, but when I cook for holiday, our family is 6 adults and 2 kids (so far!) and I end up making 3-4 batches of pasta dough.

Love that you are doing this together ! One thing I am surprised no one that I follow is doing is making the investment into a good chamber sealer. I bit the bullet a few years ago and best investment I made. I make so many boil in bag items for the times I need convenience or just do not feel like cooking. A few things I have done…..mashed potatoes,pulled pork, brisket, turkey in gravy,beef in gravy, taco meat….it goes on.. all I do is put the bag in boiling water to heat through. The smoked meats are fantastic! If I don’t have time to can my pasta sauce freeze it in these bags!

I made a carbonara recently and splurged on a little prosciutto. My husband and I both realized we would prefer bacon. Next time that’s what we’ll do. It could have been the brand, but bacon is more reasonably priced anyway😊. I did make the pasta, but I cheated and used my Emeril pasta and beyond😮
I've started making a lot.mpre from scratch. However, since September we've only had scratch spaghetti sauce - except for one night when my son made spaghetti. We've both realized that store-bought sauce is horrible - lol. We also prefer the homemade sour cream wevrle been making. Thanks for all you've shown me.

Good analysis of pantry challenge. I live in northern Ontario, zone 3, and choose to eat seasonally, so don't eat tomatoes, cucs, etc when they aren't growing in my garden. So we don't buy these during winter.
If you enjoy homemade pasta, you should totally try making perogies! Basically a pasta pocket stuffed with mashed potatoes and whatever else you want to though in. Onions, cheese etc....
I'm sure your family would love them. We like to lightly fry them in olive oil and serve with either butter or sour cream. Yum!

You say pasta like we do in the U.K. Chelsea. Gosh, Dan was lucky with the truck, that could have been very nasty. My heart was in my mouth watching the rescue too, that road looks lethal in the bad weather! Love watching you from across the pond. We retire this year so hoping to make more use of the garden to grow more of our own food. Wish us luck! I’m also going to be doing lots of waterbathing to preserve for the winter where we can, as well as jams, pickles etc.

Chelsea and Dan everything you said is so true. Doing this challenge you do have to think and decide what’s for supper. But I have enjoyed it so much and I am amazed at what I’ve saved.
We uy bulk foods only flower,coffee,sugar salt,oats,etc we only cook our own foods make our own pizzas with own sauce,and toppings we make our coffee take it with us,make lunches for work thermos of coffee, we cann pinaple and all kinds of foods,we only eat our own foods we grow and sometimes when a good sale is on mushrooms, or pinaple we buy and can it.we buy butter on sale .blocks 4.99 here 454 gram is the best price. Milk cream cheese,that's all we buy every 2 weeks
