Powdered eggshells are great for tomato’s because they provide a slow release of calcium which prevents from blossom rot.

I have been following you during this pantry challenge and I've enjoyed watching your journey.
I too snuck pumpkin into a couple meals this week as I had found a couple cans that were nearing their best before date. I added 1/2 a can to some butter chicken and the other 1/2 to a shepherds pie. Next week I plan to make some pumpkin buns as well as pumpkin stuffed shells, and maybe sneak some into a crockpot stew.
I have also been making my own spices mixes to use up items in my!spice cupboard. I today I made spaghetti seasoning and dry ranch mix.

Thanks so much for following along! I’m not sure why, but it feels so good to sneak pumpkin into recipes! 😅 Good idea on the seasonings - I definitely have an overflowing amount of things I don’t use that I should check out.

Everything you made looked delicious! Once you make your own bone broth you will always want to have some on hand. For several years I made small batches of broth in my crock pot and froze it before I got up the nerve to pressure can. But now it's so easy I often make a huge roaster oven full to can. I'm planning to make turkey broth this week with the Thanksgiving turkey carcass that has been in my freezer since November. I'll often get a rotisserie chicken and save the bones in the freezer for making bone broth later when I have 2 or 3 of them saved up with some veggie scraps. Otherwise, I will use a 6 or 7 quart crock pot for one chicken carcass. I still freeze broth sometimes if it's a small batch or I don't have time to can it. One important tip when making bone broth-- don't forget to add a couple tablespoons of vinegar to your bones at the start (any kind). The vinegar helps pull the marrow out of the bones which has tons of nutrition and flavor.

As you cook meat that has bones in it, just pull/cut the meat off. Eat the meat for dinner, then throw the bones in a bag and put in the freezer. When you get a nice amount of bones make some broth. That's what I do. It takes a while since now it's just the 2 of us.

All the food looks really good, good job for not giving up and being creative.
The one tip I can give you for the tortillas, is that you want to mix your lard with the flour and salt first, once the lard is well mix and the flour is crumbly add your hot water, also baking powder is not necessary, and if you add too much it will develop the gluten on the flour making hard for it to roll out.
Views on The Road is a channel of a Hispanic lady that cooks real authentic food and her recipes are great, she has many videos on making flour tortillas, go watch it, she makes the process very easy.

I really enjoy watching your videos and watching your channel grow. You are such a sweet girl and love that your husband helps too! A little tip, there are so many much better instructional cooking videos to watch other than Becky. Your rump roast might have been better in a dutch oven at 350 for maybe 2 hours then 250 for about 3 -4 hours. To be honest, a crock pot is so much easier, lol. Just a note about your egg shells. I did some research and found that it takes many years for them to break down to a form where a plants' roots can absorb the nutrients. I clean my eggshells and put them in the microwave for about 1 minute. Take them out and let them dry then I pulverize them to a powder in a $10 coffee grinder. I save the powder in a mason jar and as early in spring as the ground can be worked, spread on garden beds and work into the soil. Or better yet, just buy a bag of bone meal. I do both.

    • @gardenrowes
      @gardenrowes  7 місяців тому

Thanks so much for the tips! I followed an online recipe for the rump roast, and Becky’s video for the tortillas. I was really happy with how those tortillas turned out! I’ve heard you should break the eggshells down a bit - thanks for the idea about the coffee grinder! I guess I wouldn’t even need to keep them in the freezer that way 😊

Yes, just clean the eggs and grind you don’t need to freeze. Please don’t follow the trend of putting a whole egg under your tomatoes. You will be feeding vermin not your tomatoes 🍅

Good job taking risks with the pumpkin in the chili! I would've loved to taste that~and the roast looks pink and yummy to me! I personally wouldn't have left it in longer for fear of drying it out. My advice is to find the grain of the meat and cut across instead of with the grain. It will help keep it from being so tough. 😉 Also, I watched a utuber make tortillas with butter today, and she said that the flavor was awesome, too. It's something I've never tried to make. I'm impressed!

Here’s something I once had carrots in my meatloaf. I hosted an event and asked someone to help me out. She made her meatloaf from her country. The meatloaf is good. Another story about adding carrots to a recipe. One summer I wanted to make spaghetti but didn’t have all I wanted. I did have some baby carrots. I cut the baby carrots into sticks. I sauté the carrots with my onions and probably something else. The spaghetti turned out good.
Some of my favorite concoctions as my mom calls them turns out good during the summer time.
Just recently I got a bread maker from Aldi. I’m looking forward to start using. Regarding bread I’d like to learn to make tortillas. I noticed that Aldi is going to be having their rice cooker this next week. I’ve been wanting to get one even though I have a steamer like how my mom first started making rice until she got a rice cooker. Our family doctor told her to get a rice cooker instead of using the steamer because it makes a better rice.

Enjoyed this video! I also made tortillas for the first time this past week. I did sourdough. I had the issue with the spring back as well. I did end up letting them sit another hour or so and they were so much easier to roll out then. I never thought to cook them on my griddle! Would have made it go so much faster! I have struggled with the roasts being tough and my bestie is like the best cook ever and she always says low and slow! It does help to leave it in longer on a low temp. Your dinners looked so yummy!!

@gardenrowes Do you use unbleached flour when feeding your starter?? A lady i watch on youtube says bleach and also chlorinated city water will kill your starter. Not sure if any of that applies but maybe a reason. Keep at it. It is fun. Im pretty new to sourdough and the cinnamon rolls are for sure my favorite thing so far.

@@emilywhite2884 yes! I used the king arthur bread flour and some gallons of spring water to avoid using city water (when I lived at my old house, we're on a well now) and none of it worked! I really don't know what I was doing wrong. I'll try again one day - maybe from an existing starter from someone else!😂

I save vege scraps in a gallon ziplock bag and when it is full I make stock. I throw in some extra herbs and pepercorns. Because storebought stock cubes are so salty, I sometimes throw a few beef or chicken cubes into my vege stock and that creates a really nice well rounded flavor. I also got my mom to start saving her scraps for me and I would then give her some of the finished product. I keep beef, chicken, and turkey scraps and bones in separate bags so I can build up enough to do a good batch of just that flavor. I add my vege scraps to again create a good flavor. So far, I have only frozen my stock, but I would love to learn how to can it. I already can jam, but have always been leery of canning any meat-based product, for safety concerns. Good luck as you learn new skills.

Chicken Marsala is one of my favorites!! My husband is also a meat and potatoes guy who thinks you have to have meat with every meal. His dad is German, so they always had heavy meat based meals. I add meat 99% of the time, but enjoy meatless once in a while. I can usually pass off enchiladas or burritos that are heavy black bean laced and he is fine with that. I can also get away with black bean burgers. He despises pumpkin. I have a bunch of cans that need to be used. I have a 15 year old dog who is missing a good majority of her teeth. So I have been using the pumpkin to make soft dog treats for her. They are made with a can of pumpkin, peanut butter and whole wheat flour. I bake them about 8 minutes so they are soft enough for her to eat. But if you bake them longer you can make them a harder treat. I’m pretty sure I saw a dog in one of your videos so thought you may be able to use the idea. I started making all of our dog food bc she struggles so I’ve had to find ways to make things she can eat. You’re doing a great job growing and trying to learn new ways of doing things. You won’t grow if you don’t try. And every time you do something you will get better at it and learn more about what y’all like and don’t like. You’ll also get more comfortable and confident making changes to recipes you find along the way. You’ll get great at tweaking things! Cooking is a journey. Just enjoy the ride!

Thanks so much for the encouragement and tips! Black beans are always an awesome filler, thanks for the reminder! For the dog treats - great way to use the pumpkin! I made some this summer with pumpkin, peanut butter and oats, so kinda like a no-bake cookie. I’ve been keeping them in the freezer and he’s been loving them!! He also loves ice, so doesn’t mind that they are frozen 😋 I’ve been thinking more and more about making our own dog food because he doesn’t seem to like kibble much. I’d be interested to hear more about how you do that!

I use my Instapot. I add 4c of basmati rice, 2.5c of brown lentils, 1c of frozen peas and carrots. Then I add either chicken or beef bullion powder (about 1/8 c) and either poultry or beef gravy powder (about 1/2c). I then fill it with water to the fill line and use the rice setting. I natural release for 30 minutes then release the pressure the rest of the way. Remove the lid. I usually mix it up in order to make sure everything is distributed well. Then let it cool down. Add it to serving containers and store in the fridge. I also make either poultry or beef gravy based on what I used in the rice. But I add double the water. So if it says to use 1c of water and 4T powder, I add 2c water and 4T powder. Bring it to a boil. Then simmer until slightly thickened. Remove from heat and cool completely. Then store in the fridge. I add a bit of the gravy to their rice, microwave it about 2 min and then break up any clumps and mix it well. Then serve them their meal. I’ve been doing this for over a year. Both are healthy as they can be. They are maintaining good weight and all of their blood work comes back normal. One of them is 13 and one is 15. I started doing this bc the older one couldn’t chew the kibble and canned food for 2 was getting really expensive feeding twice a day. Both are pitbulls. One weighs 72lbs and the other weighs 45lb. So I was having to use a lot of cans to fill them up. I usually make 2 batches of rice a week for them and the cost is actually lower than buying dog food. I hope that answers your questions. If not just let me know and I will do my best to answer any questions you have.

I wanted to make chicken n noodles but I didn’t have noodles instead I used penne pasta. What I did that ruined it was I cooked the pasta too long and it fell apart.

If you want to make chicken broth, you can also cut off the fat of chicken and use that with your veggie scraps. Also I don’t think potatoes will be good in broth. I normally do onion, celery and carrot scraps. Sometimes asparagus but I have heard that isn’t good. Good luck on your journey 😊 Every habit helps and overtime you will have lots. Great job on the tortillas. It gets easier every time you do it. I do the balls before I let mine rest to help the dough rest and not spring back as much.

With carrot and those sweet pepper scraps, be careful how many that you put into a pot....both of those are sweet and if you get too many of their scraps in there, your broth can tend to be too sweet. You may like it that way, I don't know...but I sure don't like sweet broths.
