    Welcome to our post #threeriverschallenge pantry stock-up and round-up. This two-month challenge was 100% worth it, and today, we share our thoughts with you about what we took from it. Dan also shared a confession about something that happened during the challenge, and I made some delicious pantry fast food-chicken Enchiladas! As usual, we took a walk down to the barn to feed our sweet little Cupcake.

    It's so neat that Dan gets so involved with the pantry challenge. My husband wouldn't have really cared as long as we had something to eat. He definitely wouldn't have been doing inventory before and after.

    “Im 48, not 8!” Says the man who hadn’t told about the sushi UNTIL he gets food poisoning! Haha! I was already laughing, saying to myself that what he means to say is “of course I wouldn’t have told you!” Before they got to the food poisoning part af the story! What a typical marriage, inside story you’ll both laugh about for years to come! Love you guys so much! ❤️👍

      I have been waiting for this info on how it went!! Sounds like yall learned some good stuff … like not sneaking sushi, Dan!! That was hilarious!! “I’m not 8”…but then has to come clean! Omgoodness that is something that would’ve happened to us! Poor Dan and the food poisoning, though😮. Such fun to see how you managed the challenge. And I love that you’ve both recognized how much work is put into this putting up food and canning and all that and it really does validate all your efforts when you solely rely on your pantry! Good for you all!! Bravo…

    You are a great example of partners who communicate respectfully and lovingly. Your goals for feeding your family and caring for your farm are incredibly educationally inspiring! I really wish I had the reasons you have for doing the things you do. I am inspired to make my small living situation as creatively active cooking and gardening as I can.

    It'll be interesting when you are both in your 70's and -- "Honey, you remember when we did that pantry challenge years ago?" -- "Yes, why do you ask?" she reminisced as she thought back. "Well, I had a box of Snickers hid in the goat hay." he confessed. I can just hear the laughter. You have such a genuine channel. Love it! 🙂

    When my husband was deployed, most dinners that I cooked would leave a serving portion of food left over. I continued cooking as though I was feeding him too with the family. I bought glass plates that would fit in my food saver rolls. Make the plate, flash freeze then vacuum seal. Put back in the freezer. Making a homemade freezer meal. Keep adding after each meal, then the kids could just warm up which ever meal they wanted when schedules are tight.😀

    When my husband and I had got really sick for a week, it made me realize the same thing you guys did about needing convenience meals in your food storage. We had plenty of ingredients stored, but when I was too sick to cook, it would have been nice to have ready made meals, also.

    Becky from Acre Homestead on UA-cam has a TON of amazing freezer meals. I love her ideas and that she breaks it down for us to do as well!
    Also Thank you for sharing your experience and what you learned. I love seeing how other people do on their pantry challenge! We also found that we lacked fresh fruits and veggies, which we are working on for the next one. Thanks again.

      Fully agree - Becky at Acre Homestead is great at this. Especially some of her earliest videos when she did more big batch cooking videos. Also worth looking at her 5 ways videos (crock pots, insta pot, etc.) because they can be convenient. May be helpful for Dan 😊

    I am also married to a Dan that enjoys eating out despite my desire for him to eat my homemade food. Our dog, ERNIE, also a g.p. Would gladly herd some sheep but right now he just herds our children and stray cats. Cheers to you for finishing the pantry challenge, we only made it a week.

    The easiest idea for freezer meals for me is to double what you are already cooking for supper. Freeze one, it’s surprising how quickly you can fill up a freezer this way

    Doing an only pantry challenge, with no store trips, gives a very real emergency preparedness experience. In Canada, we are more likely to have stay at home emergencies in the winter so knowing how much you missed fresh veggies is good to know. (A video on how to grow microgreens would be wonderful, I bought seeds, but wasn't confident enough to grow them...)

    Could you grind the brown rice into flour and use it that way? As others have commented: the relationship you and Dan and family have is, as they say, GOALS. Love, kindness, respect, and humor. We should all walk that way through life.

    This was so hilarious!! Snackcident!!! I will be using that again! Dan, you didn't have to confess your throwing up did it for you! My hubby sneaks chocolate chips too! Great video, and aside from the laughs very informative. Acre Homestead is a great resource for freezer meals. She is a great cook too.

    Being disabled I never know when I'll be able to cook so I keep a lot of canned ready meals (chili, pot pie filling, soups, stews, etc) and freezer meals - both precooked and ready to cook (lasagna,pasta, rice, beans, enchiladas, etc) and baked goods (muffins, cookie dough, biscuits, breafs, etc).

    I like doing crockpot freezer dump meals. Everything goes in a freezer bag raw. Great info how the challenge showed what you need more of in your pantry. The lambs are so adorable. ❤❤❤

    I personally love crockpot freezer meals because those you can take out the freezer the night before put in the fridge and the night morning just put it in the crockpot and let it go.

    I love doubling and stashing freezer meals!! Lasagna is my favorite, because it takes ALL day to simmer the sauce, might as well quadruple it!! We normally gift one, eat one and freeze two.
    But we’ve had great success with freezing sweet breads, French toast casserole, breakfast bake, chili, and just about any soup and sheet pan dinner!

      Oooh. I forgot about French toast casserole as I scratched my head wondering what to do with so much staling up homemade bread during the pantry challenge. That was my biggest takeaway. Make smaller amounts of fresh bread.

    Homemade cooked meatballs with tomato sauce freeze and reheat perfectly. I live in Newfoundland so cooked cod au gratin is another great freezer meal.

    You just made "white mans" enchiladas. Here in AZ, California, NM, & and Mexico, we only use corn tortillas for enchiladas. I'd love to hear how much you saved during the pantry challenge, though. Also, watch Acre Homestead for some excellent freezer meals. Becky makes tons of them.     My husband is also one to stop at gas stations and corner stores or to get coffee and snacks every time we go out in the car. It adds up as a great monthly expense, so what I've done is put together high protein and healthy yummy snacks bags for him to "grab n go". Also veggie snack bags or snack containers in the fridge.
    That might be something ya do so Dan can grab n go when he knows he's going to work out or wait for kids to be done with activities.

    I don't typically comment, but I would love to recommend enchiladas and burritos as freezer meals. You can make burritos with just about any filling, from breakfast type (egg, bacon, sausage, cheese, potatoes) to dinner style (seasoned beef with cheese and salsa) then just roll them up and put them in a bag in the freezer, they can be easily reheated in the microwave or oven. Of course you already know that you can freeze lasagna as a meal, and the same is true with just about any pasta type casserole (chicken casserole, tuna casserole, beef casserole). Chili and Stew can be canned and put on a shelf for a super quick meal as well as many soups. I don't know if that's 6 or not, but I very much enjoyed you and Dan doing the lasagna freezer meals in the past so I'm trying to do my part to get him in the kitchen with you again. 🙂

    I can enchilada sauce every year but never use it for enchiladas😂. I use a quart, add chicken broth (depending on your thickness desires), canned corn, black beans and tomatoes, dehydrated onions and peppers, and chicken (I use store bought roasted chicken). Add tortillas at the end. The care taken to make a really good enc sauce makes this an amazing tortilla soup which is put together in about 15 minutes.

    It sounds like it was a really worthwhile project for you all that not only brought a great sense of purpose, but long term change too. Fantastic!
    I plan to do it in June - then I have fresh salads coming in, and it will use things up before the harvests restock the shelves. I’m not sure the rest of the family will be as enthusiastic as me though.

    Making meals can be so … repetitive .. but when you see/feel that it is key to reaching your goals and living the life that you envision, it becomes so meaningful and valuable. Priceless.
    I can see how this challenge can help with knowing what to grow and what to preserve .. and purchase (chocolate chips < don’t run out!)

    Hi Dan, I ran into a similar lack of car snacks a few times since then I have a box of snacks in the car. I call it the car pantry. It has bottles of water as well

      Just be careful during colder weather, food in the car can attract mice. Once they associate your car with food they’ll make it home and start chewing on the wiring. Speaking from experience 😢

    I participated in a weird way I used all the frozen food that was left in my freezer because I am single now and I’m not doing a lot of cooking so I had a lot of frozen dinners I had stock piled and I was able to get a lot of stuff out of my freezer and free up space.

      Well done. We did the same with frozen meat. We’re lucky enough to still have fresh greens still growing in our mild winter here in the UK. But doing the challenge in January we too bit the bullet and cleaned out our “rainy day” freezer products. It was a tad nerve racking reducing our emergency food supplies but they were only losing their nutritional value.

    I made elbows with alfredo, chicken and mushrooms. Portioned them into 500 calories with meal prep containers. They froze very well, just defrosted one if I wanted it the next day. 3 minutes in the microwave and it was a great convenient food to have.

    The brown rice is pretty much the same as/interchangeable with white rice in burritos and soups, covered with chili or stew. Good way to use up close-dated brown rice.

    We have done our own sort of pantry challenge, using what we have in freezers and pantry, but also buying fresh fruit and some veg. It has been really interesting to see how much we actually use and how we have been over buying some items. We are continuing on with shopping food from home sources! Looking forward to you sharing about resilience!

    I am very curious, do you sit and eat with the kids or do you eat first then feed them while you do other things? I wasn’t sure if you eat at the counter just for us, the viewers.     Hi!
    About freezer meal recipes, lasagna in different ways are always good.
    My partners mother makes a chicken dish that everyone in that family calls "The tasty chicken". Its a dish that can be made for 1 or 15 people with the same principle. It freezes very well, sometimes the sause needs a little stiring when reheated. I am a vegetarian and have made vegetarian versions with large chunks of mushroom and it´s sooo good.
    My MiL takes big chicken breast fillets, cuts them in quaters or 6-8 pieces, depending on how big the fillets are and how big bites one prefer. I am pretty sure that your canned chicken would do fine in this dish. She puts the chicken in a large ovensafe dish. Then she takes heavy cream and milk (more than enough to cover the chicken, everyone wants loads of the sause) and 2-3 handfulls of a cheese that melts easy (cream cheese works to) and stir together in a pot on the stove, add some sourcream and bullion (veggie or chicken) and let all melt together. Season with salt and pepper and the magic ingredience Dijon mustard and let it go to a boil. Don´t be shy on the mustard, taste it to se how much mustard you want.
    She pours the cream/milk mixture over the chicken and puts it in the oven until the chicken is ready and the dish has a dark brown surface.
    They eat it with green beans and potato but rice is as good.
    ps. I forgot to add cheese once and my partner didn´´t notice...

    I haven't done any pantry challenge, but I do try to "eat in season". I live in Sweden so during winter I avoid buying tomatoes and cucumbers and stuff that needs importing it from far away. And by now I'm longing for juicy tomatoes and crispy cucumber so bad! I grow 5 plants of cucumber in the kitchen window, and in a month we can eat our own cucumbers wich will taste incredible! That's what I really like about eating in season. When Summer comes and nectarines and strawberries are in season they taste soo good, since we haven't had them in almost a year!

    Becky over at Acre Homestead has lots of delicious and family friendly freezer meals.
    Carter at Grow and Preserve has lots of VERY delicious meals in a jar or more meal starters. You could freeze batches of mashed potatoes and rice to accompany. I mention these two because theirs are very high quality. Can’t wait to see you guys in the kitchen!

    This may not be something you would want to do for the freezer… I make cornbread dressing/ stuffing (not from a box) and freeze the mixture uncooked. Just pull it out and cook. Sometimes I thaw it depending upon what I have going on. But I typically have a complete thanksgiving style meal in the freezer ready for thanksgiving by end of July 😂😂😂. We are in the Deep South so cornbread is always on hand in freezer too. (I use it in that recipe and others as well).

    I would not call this freezer meals but I do make breakfast burritos and tacos and fajita's for my husband to grab for lunches or breakfasts. I spend a few hours and make up several that I individually wrap and then freeze in ziplock bags for labeling and freshness. It just makes it very convenient for him. However he does have the access to a microwave for lunch at work this would not be great if someone did not. I also make homemade tortilla shells. You can freeze them. They are soooo much better I highly recommend. Thanks for the videos very inspiring :)

    Freezer meals: Make just a bit more each meal. Freeze 1 or 2 meals, and then mix and match later for convenience. Dan could easily use these for lunches.

    I cooked for assisted living for a living. I cooked large meals. Now i make large meals and freeze a large portion of it. It saves me time and money.

    One of our fav freezer meals is cottage pie, except I use mashed potato squash instead of potatoes - you prob don’t have to worry about extra carbs, but we do. I tend to double casserole type meals so I can freeze one doesn’t feel like extra work then somehow - but I’m not feeding 10 either - we were a family of 5, now just the 2 of us. 😊

    I was fascinated by what you used in the two months. I try to track the items we use so I can stock up when they are on sale. 100 lbs of flour a monthis amazing! I use about 10 lbs of normal flour and I am not sure how much bread flour because we buy them in bigger bags so it is harder to track. I just bought 50 lbs so I am going to see how long that lasts. There is always things to learn and this is great. We only adding ordering pizza too because my son missed it when we didn’t do it. We asked for gift cards so we can get it whenever he chooses.

    I love freezer meals! I make them for friends who just had a baby. My go to recipes: Baked ziti (I use the pioneer woman's recipe and just freeze before baking), enchiladas, and carnitas.

    One freezer meal that is a favorite of my family is Sour Cream Noodle Bake from the Pioneer Woman. You can look up the recipe online. It is pretty easy. When I make it, I double recipe and stick one in the freezer. I also just stick it in the oven frozen and bake it. I work until 5:45 everyday so do not have time to thaw. Very, very good. Give it a try, I think you will like it.

    Our favorite freezer meal is turkey or chicken pot pie, with a hot water crust. And it has to have a bottom crust too, and potatoes in the pot pie!

    Chicken enchiladas freeze beautifully! Package them so Dan can just grab a serving his size for when he wants a grab-and-go. Also burritos work for both those applications as well. Full family or Dan grab-and-go. Thank you for sharing your experience with us.

    My kids don’t love brown rice either, so I usually sub out a little white with brown to sorta hide it. Like if a recipe I’m making calls for 2 cups rice I will use 1/2 cup brown and the rest white. Hiding it in casseroles, tacos, haystacks always mixed with white rice and they eat it really well that way!

    Thank you for sharing your ideas on this challenge. I'm from the Netherlands and we've tried the month of January to bye as little as possible groceries and yes we saved money. It was an eye opener that with the right mindsetting you can save more than half of what you normally spend. Our family exists of four. We normally freeze leftover fresh meals and once in a while we use those the freezer meals, small portions together make a whole complete meal. Or it will be used if just one of us is later or at work. Last year we've tried risotto in bell pepers and loved it! Thanks for sharing your videos 😊

    Do you make large batch burritos for the freezer? Ultimate microwave fast food! Also large batch par-baked pizza crust for the freezer; just add toppings and bake for 10-20 minutes (depending on toppings). Same for large batch par-baked onion rings in the freezer to make in the air fryer.

    Best freezer thing I made recently was the garlic mashed potatoes on the Freezer Meals 101 page. I made 2 huge pots of potatoes so x it by 2. Quart size bags frozen flat. 3 minutes in the microwave and we are good to go. Will definitely make again but maybe only half with garlic for variety.

    I usually add some rice into my enchiladas as well. I do leftover rice, but you could work your brown rice into it.

    Dan mentioned in the first month video that he was physically feeling better eating out of the pantry. Did that continue?
    Also, bouncing off what he said about prepping convenience foods:
    If I prep these for back stock I find it so handy:
    Loaves of bread sliced in freezer(slices mean you don’t have to remember to thaw, just pop in toaster, oven, or frying pan)
    Pre shredded or sliced cheese frozen or fresh
    Frozen Pizza crust already baked and ready to top
    Cheese pizzas frozen
    Cooked frozen potatoes in what ever cut you like for frying, goes straight in the pan and still faster than fresh
    Baked potatoes in the fridge for slicing and frying for potato chips or potato nachos
    Canned teriyaki chicken (just meat and sauce)
    Canned Spanish or fried rice
    Canned French fries
    Hamburger and hotdog buns sliced and frozen so easy to reheat
    Canned or frozen meatballs and sausages

    For easy speghetti because my speghetti sauce I like to caramelize onions, soften my green peppers the last 5 minutes, brown my ground beef and freeze that meat/onions + peppers and fresh garlic in ziplock baggies so when it's time for speghetti I'm just throwing my frozen mixture in a pan to warm up with the jarred sauce on the stove on medium while I'm making the noodles and bread.
    I don't always like things completely prepared coming out the freezer so I just prep things that cut down on my time and or tell my husband mix a,b,c top with cheese and throw in the oven.
    Chicken cracker bake
    Cook some chicken and shred
    homemade cream of chicken soup or use canned again caramelize onions again, some milk to thin to your consistency (I like mine medium thickness like a creamy chicken pot pie)
    Your choice of seasoning
    Shredded chicken
    Let cool add frozen carrots, broccoli, green beans really your choice of veggies (I add peas after thawed and warmed)
    Cool and freeze so when thawed all you have to do is boil egg noodles mix with warmed cream of soup and veggie mixture you already prepped ahead topped with cheese and Ritz crackers and bake for 45 minutes.
    Preping your filling for your casserole ahead of time and freezing it saves me over an hour of work Everytime because my chicken is made, my soup mixture is seasoned and all ready with veggies all I have to do is warm it on low after thawed or throw it in a crock pot on low for a few hours until I'm ready to boil the noodles and top with crackers and bake.

    Freezer meals which I don’t do a lot but I will make lasagna for dinner and an extra for freezer. Same amount of time to prepare and actually very good from the freezer, also stuffed shells, cottage pie/shepards pie easy and tasty from freezer. Some kind of taco casserole is usually very good. Enjoyed seeing you and your husbands take on the challenge

    I watched I video on UA-cam were these two ladies made 100 freezer meals and that's were I base all the freezer meals I used to do. I have been unable to do them recently because my parents have passed away and I had to move out of my home to pay for everything.
