      @@carmendoyle9786I am also a machinist. 38 years and still going. Cooking on cast iron is completely safe. Ask him to provide a single source of information otherwise.

      ​@@carmendoyle9786cooking with cast iron can add up to 30%more iron to your diet which is something your body needs to create red blood cells which helps transport oxygen throughout your body. I tend to run on the anemic side, or, I did before I started cooking with cast iron. When my body is low in iron, I have little energy, cold all the time, can't think straight (brain fog), ADHD is worse and can't remember didley.

    I received a new cast iron pan for a wedding gift in 1971, and it took years for it to become smooth. The vintage flat bottomed skillets like your mother's are always thinner than the ones with rounded edges on bottom. I have several bought at antique stores, but my favorite pan is one that my mother used for many years. I asked her where she got it, and here's the story she told me. In the early 1930s, when people were still recovering from the depression, many country people were still hungry. A lady knocked on my parent's farmhouse door (in SE Texas) one day. She asked Mother if she would trade a "mess" of turnip greens (that were growing in Mom's garden) for the cast iron pan she had brought. Mother let her pick all the greens she could, and the woman left the pan. I love the story--and the pan. A precious heirloom.

    Many years ago, probably 20, I bought my wife a 14” Lodge two-handed cast iron skillet. I saw right away the cooking surface was “as cast”, not machined smooth like my mother’s (or my wife’s mother’s) cast iron. I didn’t go the shiny smooth route with an angle grinder. I did use a random orbital sander and some Emory cloth to take about 90-95% of the casting roughness off, leaving a flat, nearly smooth surface. That skillet will easily outlive us as we just had our 55th wedding anniversary the other day. Works like a charm!

    Thank you for showing the apron I made for you. I get so excited when I see a new episode of your show on. One of my favorite. One thing I want to pass along. I'm not being critical, just concerned. I am a retired nurse, and your husband has staining on his lower legs down to his ankles and that is a sign that the blood flow is becoming stagnant. It is pooling because of him being overweight. It is not circulating back up. He is an important member of your family and I want him to be as healthy as possible. Honestly, not critical, just concerned for him. Please address this with him and make sure he sees a doctor concerning this issue. I am very concerned. Thank you for being who you are!

      I am also a nurse and this is truly very concerning and if not taken care of will just really cause him problems on down the line--and the issue is not reversible unless he gets treatment from a vascular specialist. I don't know if he is seeing a doctor on a regular basis but my guess is that he also has high blood pressure and that causes him to be at risk for a stroke. If he has a cardiologist he might be able to treat his legs or better yet see a specialist called a vasclar specialist( who also has training in cardoilogy). I have some of the same issues so I am seeking treatment from a vascular docotor too. The Lord will guide you as far as who to see.( The Bible says, "The steps of the righteous man will be guided by the Lord"). Thank you for your skillet information. I knew about the concept of seasoning but did not know all that was involved.

    Miss Ruth - this was such an excellent video! I have actually given up on using my large collection of cast-iron (LODGE and a few others) because everything sticks, especially the eggs as in your video. I shared this video with my husband who is out of town; I asked him to please watch this video, because when he gets back, we’re getting all of my cast-iron out, and together we are going to make it smooth as glass!

    I wish I was gifted a seasoned cast iron ready on day one of my marriage! I love cast iron cooking. It makes food taste so much better. Stovetop seasoning each time adds layers to the pan.     I love this. I am 64 years old. I have my moms and grandmas cast iron. I have also picked up pieces at yard sales and so forth. I love getting old rusty ones and get them cooking great. I cried when my grandma favorite skillet needed a little TLC and I found a crack where the handle attached. I was afraid to use it. Oh if that d skillet could talk the tales of my Irish grandpa and Scottish Grandma....😂. I hang it proudly in my kitchen. Hope you had a blessed Christmas. Oh change of subject the Ball company has a way online to date their jars by the writting style. I have my G-G- grandmothers blue ball jars dating as early as 1830 ( or there abouts).     Ruth Ann! Wow!! I use only my cast iron pans and stainless steel pots. Now I'm going to ask my husband to clean up my modern cast iron. I love using cast iron because iron is so important to blood health. I tossed all of my unnatural nonstick cookware years ago after learning about how it poisons us.

    Oh my gosh, we watched this several times and my husband did this to our large existing cast iron, which we had not been using due to the surface being so rough. And guess what? It worked! Now the surface is a smooth as glass. I followed your seasoning process and it's as though we have a brand new pan! My hubs is going to do this to our smaller one next. Yay!

    I have a small cast iron pan from my grandma ( born in 1917) and she told me it was her mother’s. It’s smooth as silk ! It must be over 125 years old by now.

      My granny was born in 1903 and have her cast iron pans. Use them every time I cook. They are wonderful. 100 years old pans.

    I bought three rusty cast iron skillets at a garage sale over 30 years ago. I seasoned all three and found that I used the biggest one most. When my one of my sons moved out and set up his own place, he asked how to find a cast iron skillet and of course, I gave hum one and gave one to a friend. After I removed all the rust and hubby used the power tools on it, it has been a great pan.

    Oh my goodness. This video came just at the right time. I grew up with cast iron. My mom & grandmother had several and they worked just as you showed. I, however, have the Lodge brand and quit using it because it didn’t work. Horrible cooking surface. And you expertly explained WHY. Now I can’t wait to get mine sanded smooth. Can’t thank you enough ♥️👍🏼.

    I have my mother's and grandmother's cast iron pans. They are different sizes, my grandmother's pan, she called it her chicken fryer pan. It's larger and has deep sides. My mother's is just about an 8 inch. I use for frying eggs and bacon, grilled cheese sandwhiches in. I bought a Lodge Griddle for making biscuits on and pancakes. I wish I had an Elvin to season it and make it smooth like glass. Elvin your a good man for taking care of your Family like you do!

      Get ready to get covered in cast iron back dust 🤣. I have done it to 8 different pans but had the luxury of doing it in a powerful dust collection room and it still gave me black boogers. That being said just do it outside and wear a paper mask. Start with rough grits, I prefer starting with 36 grit to get the bulk of the rough knocked down quick. Also you will find that the flapper disc’s will dull so don’t be afraid to use more than one. It really is a lot nicer cooking in pans with a smooth finish.

      How do I go about getting the stickiness off my cast iron pans… it is from old seasoning… I used avocado oil not knowing I should have been seasoning them with animal fat!!!

    Thank you Elvin! I am going to show my husband this resurfacing video so that he can resurface our new pans. We use cast iron pans daily on both of our glass top stoves. Many older folks, women in particular, are found to be iron deficient-anemic. Not in our family. The iron from the pans leaches into our food and, because the iron is natural, absorbed into the bloodstream--meaning plenty of oxygenation to the cells. RuthAnn, like you, we cook all of our pasta sauce in our #12 cast iron skillet. We do not and will not own chemically modified metal pans. Cast iron is the original non-stick version of cook ware. Thank you for all of your educational and entertaining videos. Your hard work is much appreciated in our home.

    Wonderful video. I use almost exclusively cast iron skillets and Dutch ovens. Mine are pretty smooth but I foresee a ‘honey-do’ job for my sweet husband. By the way - I just loved seeing more of Elvin! I have known he must be a Dear but please thank him for doing this and letting us get to know him better.     You've inspired me to have my modern sand cast cast iron pan collection ground smooth so I can refinish them. I've been on the the hunt for heirloom/vintage cast iron pieces for years and they are very few and far between. It's so encouraging to know I can turn my current collection into that glass-smooth pan set I've hunted for with a little elbow grease and a couple power tools.

I once found an amazing old 7 quart Dutch oven pot with the lid buried in years of over grown weeds under a trailer - it was a rusty mess (my friends thought I was crazy to keep it) - I did the same grinding process as you showed - also I put it in a 500 degree oven to sterilize any unknown bacterias - then did the season process 3 times - Now Such a Prize to have!! Friends were shocked😁

      Also my aunt who lived on the Southfork of the Salmon River in Idaho had the most amazing cast irons - she only seasoned about once a year - her secret - Bear Fat and putting in the hot ash coals in the wood stove 😃@@Ruthannzimm

      When I was first married, I thought my husband was crazy for tossing our cast iron into the hot coals at the family reunion bonfire every year, but it seasoned those pans perfectly for years and years!

      Please help! I have a cornbread cast iron mold that is actually the shape of corns. I can't get the thing cleaned and seasoned - and it seems a flat grinder would grind out the shapes. Can you tell me what I could do??

    Great timing! I’ve got two Dutch ovens that were left here, at the farm, when we moved in. They belonged to my husband’s mom, she passed in 1990, probably not used since then. I’ve been trying to bring them back to life with no luck. Hubs is going to take them to his shop and fix them up!

    If I remember correctly, the difference between modern and vintage pans is that they used a finer grit sand to make vintage pans. OSHA investigated lung injuries in those factories and found that they were caused by inhaling the fine sand during manufacturing. They then had to use a larger grit sand to make the pans. The modern, expensive pans, probably go through additional steps to make them so smooth, thus the extra expense.

    I sent this video to my husband because I have stopped using my cast-iron because everything sticks despite all the seasoning I try to do. You letting me know it’s the pan roughness that’s the problem! He bought the grinder accessories and did the pan yesterday, my pan bottom is like glass now! Thank you so much!     I'm so fortunate to have a lot of my mother's cast iron. I have some Griswolds, Wagner's and a handful of Lodge. We completely resurfaced a #3 Griswold for my granddaughter when she was old enough to start cooking her own eggs. I wanted a pan that was non-stick and not too heavy for her to manage on her own. It worked beautifully! Our method was very similar to what Alvin did. I've never purchased anything promoted by a UA-cam page until I saw your Carolina pan on a prior video. My son purchased it for me about 6 months ago and I have got to say it is the best bacon pan ever! I love the fact that I can cook a large quantity of homegrown bacon in the oven and that the high sides reserve all of the drippings. The only issues I have with it is it's definitely very heavy and takes up a lot of storage space. I made room in a small hall closet right off my kitchen so I could keep it handy. :)

    I've always hated cast iron because the first cast iron fry pan I had, I greased the pan and then tried to make eggs over easy. What a disaster!! I was told that the pan had to be seasoned, but no one told me how to do it. Thank you for posting this video. I now have a different outlook on cast iron.

    I can't THANK YOU enough! I would like to use my cast iron more but I had the sticking problems. This video has been a game changer. I also have an old light cast iron pan from my mom that has a lot of rust on the outside. I can't wait to use Elvin's methods to season and resurface my pans. I am 56 and love your channel and know a lot of the old ways from my mother and grandmother and use them, but some things were not shared, so thank you for sharing your old family ways.     I love my cast iron and that is usually what I use, but I do have some larger stockpots that I use. I learned so much about cast iron today, thanks for the information. My mother and grandmother used cast iron and it brings back memories of some delicious fried chicken from them. Your gift for your daughters is a labor of love from both of you and I am sure they will appreciate it!

    This is a wonderful video. I have two Wagner pans and 1 Griswald and 1 Erie (pre-Griswald), all over 100 yrs old (two from my grandmother). I always wondered why my Lodge cast iron didn't cook as well and this answered perfectly. Now I'll be redoing all the Lodge ones I have. Thank you!

    I got my hands on an old cast iron pan found in a barn. It had been hard used and then left to rust for years. I just put it in my oven and did an oven clean. The next morning all the rust and old bumpy and burned seasoning was gone. I gave it a good wash and dried it on top of the stove. Rubbed it all down with a little olive oil and put in a 250 degree oven for an hour. Let it cool, and did it all again. I did this 3 times and it came out beautiful. I love using it even though I somedays find it heavy to use as I get older, but i’ll never go back!

    Oh thank you. I switched to cast iron a number of years ago. I had gotten a set when I was in my twenties, some decades ago, and gave up. This last switch, I steel pad scrubbed everything down and seasoned according to lodge directions, a little hotter than you suggest, and years later, still struggling. Thank you both, now I can get my pans to work how I wanted. I can't wait. And I am definitely checking out that Carolina cooker. Thank you.

    I love my cast iron but now I want to resurface mine! Thank you for clearing up the whole issue of using dish soap on cast iron. I know a lot of people who think it’s gross to not use soap to clean your pots. I usually use hot water and a scraper then dry it out with a paper towel. I’ve not gotten sick yet from eating things cooked in my cast iron. Probably because the food that’s cooked in it gets plenty hot. Hot enough to kill bacteria but I’m only guessing about that. 🤷‍♀️

      Same with cooking stones you never use dish soap on them. I have several different types of cooking stones and baking ware and I haven't gotten sick yet in the 15 years I've owned them.

      Agree. I almost never use soap in my cast iron. Hot water & steel scrubby is all it takes.

    Good to see Elvin in your video. I was lucky to inherit my grandmother's cast iron (I am 69) and the difference is very evident. My younger son once cooked a hamburger in my CORNBREAD skillet and left it on the stove. What a burned on mess. I had to scour it down to the metal to clean it. Once reseasoned it worked as well as ever. I still haven't forgiven him completely. 🤣

    All your videos have real life applications, but this one was FANTASTIC! I have struggled for years with all 3 of my Lodge pans. After watching your video, I shared it with my husband and he set to working on my most used 10" pan. WOW, he got it smooth as glass and I treated it with lard from my local grass fed farm store. WHAT A DIFFERENT cooking experience! I had tried all the advice out there for seasoning cast iron and nothing really worked. But your method was so great! THANK YOU, THANK YOU!

I bought her a non stick pan last year and it's toast already. She will be so excited that she will have a quality pan for the rest of her life! 💕

    I love my griswold collection. I started with lodge also, put it away then came back to purchasing the griswold. I bet that large pan works great for French toast and pancakes!

      I have my granny Griwold Dutch oven. She was married 100 years ago. So her cast iron is probably that old. My favorite cast iron I own. All my cast iron is at least 40 years old. Most is 60 years old. All I use

    I had my husband do this to an old Wagner pan I have right after watching this! I tried using it for cornbread,but it always stuck and gave the cornbread a funny taste. I can’t wait to try it out!

    Awesome video, Ruthanne!! I bought my first (huge!) cast iron skillet decades ago - I believe it had been an outdoor dogfood dish and was it ever gross! Yuk!! But, I dragged it home, filled it with water and set it to boil on my back burner - I cooled, dumped and scoured that thing then rinsed and repeated multiple times before finally revealing the bare iron underneath - smooth as a babies bum and needing the same protection! I didn't have lard, I had name-brand shortening was.all I could access. Heat that pan, blob of melted shortening rubbed over the entire(!) surface, wipe excess then inverted into a hot oven to cool OR I just inverted it over the burner and allowed it to cool the same. Oh my, what a beautiful skillet it has become with that beautiful warm sheen - it's priceless to me though I've done many others since. Keep at it and you will be amazed at the outcome!!! Thanks for sharing, Ruthanne! Your girls will love them.

    Thank you! We visited a Mennonite store and they had cheap cast iron skillets...the big ones, very heavy and very rough, for 10 dollars each. We bought two and my husband did your sanding to them and they are beautiful!

    Ruth Ann….I use my cast iron but struggle with sticking. I hope to get out in my husbands shop and work on my pans. I love using them. Also…I too, never cook tomato products or soups and stews in my cast iron, so thank you for informing us that we can cook those things in our cast iron! God bless you and you family!

    Loved the pie crust and so did my family. Such a blessing to have it in the freezer when I need it. I love my cast iron.
    , and I love the vintage pans the best. My brother still has our grandmothers cornbread skillet, She never cooked anything in that one but bread. Yes, it never ever stuck! Thank you for all the tricks and trips. I love your channel, and your knowledge and wisdom. I still sub teach at public schools and they love your videos as well.     If you can't afford new cast iron pans, you should be able to find them at flea markets. Some maybe rusty, so just sand rusts off, season it and voila, looks like brand new pans.

    I guess I’m lucky. My Mum gave me her cast iron pan probably 50 years ago. It’s not as heavy as the new ones but the surface is as “smooth as glass.” It’s my favourite for crepes. I’m 72 now and that pan is as black as coal and very rough on the outside. It has outlasted the Le Creuset cookware we got for a wedding gift 55 years ago. The enamel finish just couldn’t cut the mustard. I’d probably still have it, had it been unfinished.

    Thank you Ruth Ann and Elvin. 🙏 I have sooo missed all of my old cast iron pots and pans, which some were brought over by my ancestors doing the trek in their covered wagons cross the US. Still in beautiful shape and if you didn't know how old they are, you'd never guess unless you were someone that really knows their cast iron and could also see from the stamp on the bottom what they were.
    When I moved over to Sweden I wasn't able to bring them along, due to them being so heavy. I though that not having to pay for the WEIGHT of them, I could just buy new ones over here. HA!! Yep, I found new ones but, like the new ones you showed, they are all very rough inside and not at all like the ones that I was used to and loved. Did find a few old pans at a old farm auction, which I was the only one bidding on... LOL They were rusty and crusty but, that I knew how to deal with. So, I now have 2 pans that I use but, I would like to use my other new ones as well, especially my large Dutch oven for the stove and my Dutch oven that has legs that I use on a fire outside, both cooking in and baking. Going to go out on Amazon here in Sweden and see if I can find the grinder thingy pads and transform my new cast iron to working cast iron!! 😁

    We do the same thing with our cast iron vintage or not. We have found many vintage ones that were terribly rusted with heavy old flakey seasoning on them. They clean up so nice doing them this way. Most people freak out when you tell them to use a grinder with a wire brush. It does not ruin them. I do 400⁰ for 2 hours. I do not turn the oven off, til 2 hours is up. Let cool in oven. Repeat if needed.

    This was such an informative and educational for someone like me who was city raised and has limited knowledge or misinformation about seasoning cast iron pans. We have been blessed with 3; a a 12 inch skillet, a Dutch oven and an 8 inch skillet. Having now seen the best way to make these pans work the best, my son was already has the equipment in his tool shed, is going to again watch the video and take the time to properly season our pans. Thank you ever so much Ruthann and Alvin for your willingness to dedicate the time and dedication effort to demonstrate the whole process. I learned a lot more about them from you and I may refurbish his set for Christmas and regift them to him. His are over 30 years with caked on items and don’t look smooth as glass like this.     Love love love this video! Thank you Ruthann and Elvin! I've been using cast iron for years (at least 40). I have several cast-iron pans, some old and some new. I may have to try this resurfacing on my newer pans. One tip I could add is that those old old pans you find thrifting can be thouroughly cleansed, I mean like new in appearance clean, by running these through the self-cleaning cycle in the oven. This burns off the crusty build up on the outside and everywhere. Then of course it must be well seasoned to make it ready to use again.

    Your treatment of cast iron defies what all the "experts" say. I have a cast iron skillet that is about 100 years old-- no name on it, but it is shinny as can be and light weight.

    When I got married 25 years ago, my new cast iron was polished smooth. Shortly after, it was impossible to find one. I have talked about this problem with several people. Usually, I get an incredulous look. Last year, though, I looked through a Wish Book from the 70's, and it's cast iron was noted for its smoothly polished interior.

    Instead of just a glimpse of him occasionally.
    I have always cooked in cast iron. And like you, I was told that I wasn’t supposed to use it on glass tops… but I always did.
    However, I now have a gas stove for the first time and I simply love it.
    Anyway my grandsons both have coveted my skillets so I’m going to try to make them one using your method.
    I’m a 70 year old grandmother and I don’t have a side grinder but I do have a circular sander and I’m going to try using it.
    Hey…
    Where there’s a will there’s a way.
    Right?
    I hope I can make it work.
    I would be so proud to give them a seasoned skillet.
