    150g potato flour (can be replaced with tapioca flour, sweet potato flour, or cornflour)
    120ml water
    Marinated chicken
    480g boneless and skinless chicken leg meat, cut into strips
    2 tbsps light soy sauce
    A few dashes of white pepper
    1 stalk of spring onion stem, lightly smashed
    Sauce
    50ml rice vinegar (can be replaced with apple cider vinegar)
    40g sugar
    40ml water
    Juice from half a lemon (add later after cooking down the sauce)

    So glad you told me about not cutting the heat off when close to finishing frying. Keeping the heat up really keeps the oil out and maximizes crispness. I thought I was saving energy, but it ruined the final product. Thanks Roland! Happy Thanksgiving.

      This recipe requires the flour slurry which crisps up the meat to a far greater extent than dipped flour/egg

      Yes room temp cos the pieces r to be fried soon. I think u wont achieve that level of crispiness in an AF.
