I was stationed at Camp Humphreys in 1981, and lived off post. Every Friday I would stop at a stall on the way to my apartment for fried chicken and potato salad. Thank you Maangchi for bringing back that wonderful memory. Will be trying this recipe.

While my husband and I visit family in Seoul, we would walk around late at night and buy a whole fried market chicken to take home and eat! They cut it in fours and put it in a paper bag, it was our favorite meal!

I made this tonight. What a great flavor combination. The Chicken-Mu was only in the fridge for an hour, but man oh man was it good. I could eat a half chicken easily cooked like this. Korean we call it (sijang=market /yetnal=old chicken). When young my Dad picked up a pack of above chicken N we seven brothers share,eat together. It wasnt enough for us to enjoy but it was 4decades ago. I really miss it.

@@fuchichuchi1805 in a pan I cook it on about medium heat moving it around frequently until it starts to turn tan. You'll be able to smell when it happens. It's done as it just starts to color. If you wanted to do it in the oven is put it in a 250 oven for maybe 10-20 minutes depending on your oven.

Looks delicious! Frying onion in the oil before dropping the meat will also tenderize the meat as well as flavor it. You should also try it when frying pork chops and livers.

I tried this method, but I don't have konggaru so I made my own local flvour with cumin, cinnamon, anise, cardamom, garlic, onion and dried chilli all blended, and added to the batter and it was so goood.

Maangchi is the realest, other people probably wouldnt have shown that it was still pink inside and how to cook it ALL the way through.
That is actually a pretty normal practice in korean cuisine to cut the meat while it is still cooking with scissors

You could replace the roasted soy bean powder by toasting flour. It'll give you a similar nutty flavor.

Seasoning the oil with onions good idea. Next time i make fried chicken chicken onion and garlic are going in my oil. Maybe some chillis.
I remember my Great-Grandmother seasoning the oil with onions.
When I grill I put onion on the fire! It gives meat great smokiness!
Garlic burns easily.
Garlic will burn and make a bitter taste. Trust me ..I made this mistake.

I just made this tonight. I don't have any potato starch so i just used cornstarch. I omit the roasted soybean powder too because i don't have it either. My chicken turns out so good. Thank you

Looks delicious! Frying onion in the oil before dropping the meat will also tenderize the meat as well as flavor it. You should also try it when frying pork chops and livers.

I tried this method, but I don't have konggaru so I made my own local flvour with cumin, cinnamon, anise, cardamom, garlic, onion and dried chilli all blended, and added to the batter and it was so goood.
That works well. Cuz sometimes we add curry powder for chicken batter. :)
