This is very similar to the Rice 'Kheer' we make in India. We flavour it with cardamom instead of cinnamon. Loved the touch of roasted coconut as topping at the end.
As a kid I remember watching my abuela make arroz con leche and she'd mix do the raisins and blonde raisin mix, but she would ad the regular raisins to the pot with the rice as it boiled so they'd reconstitute inside the pot. Let that cool off as she cooked dinner and by the end of the night we had a nice cold pudding. She also used coconut milk in hers, but I don't know why we never thought of toasted coconut flakes as a garnish at the end. A few times because of how raisin-y hers was I would wake up new years day and have some with bran flakes as breakfast, but that is a new addition I need to try. I'd also say, Mango sticky rice is like 2 degrees away from arroz con leche... thats a good little fusion dessert I've been trying to perfect and each time it gets better, substitute the raisins for dried mango, finished with some sweetened coconut milk on top mixed with a can of jumex mango nectar, topped with some flakey salt. I'm not lying ya'll... its fantastic

Thank you for sharing. I've been looking for a good rice pudding recipe. There are too many ways to do it, but all the recipes I made from you are being FOOLPROOF like enchiladas, mole, green tamales. So, definitely I am going to make your rice pudding.
Made some for my little 92 year old neighbor a few weeks ago. She loved it! Always had this growing up. For breakfast or dessert. Mom added raisins to it and I would spit them out. I had a pile of mushy raisins next to my bowl 😂

She made this comfort dessert with carnation 'pet' milk and a bit more raisins. The vanilla and canela stick still remains the authentic way to put this recipe all together.
This is how I've always liked my rice pudding but coconut milk was hard to find and was too expensive. I often used half and half instead. I never thought of lime in it though. I'm a Floridian so I think I'll use orange in mine instead 😊. Great recipe. I've even made it with vermicelli when I had no rice😅.
I must be using the wrong rice because mine routinely turns out mushy. I like the combo of creamy rice with al dente grains mixed in. ---Coconut sugar will contribute its own flavor profile as well. ---That cooked cinnamon stick I'd save for use in horchata.
Sorry, Rick Bayless. I’ve admired you and loved your cooking for years. Coconut and lime in Arroz con leche isn’t traditional here in Mexico. But cooking the rice in water makes it taste awful. You ALWAYS cook it in milk. THAT’S what you do for richness! Not coconut milk 🤮 And no salt, please. Not here
Maybe is not on the region were you live but in my state we do use either orange or lime peel and we also cook the rice in water first...let's not generalized One thing for sure, either way is delicious 😋

It’s very simple. The rice absorbs water when you do that. If you cook it in milk, it absorbs milk. Guess which option yields the richest, tastiest arroz con leche? Water has NO PLACE in arroz con leche. Plain and simple! It makes no sense to try to add richness with some things, but cancel it out with something else. That was the point I made. I hate raisins too, but I understand they ARE common in rice pudding so I get that part. So there! MY two cents.
Please don't call it a Mexican Classic when you change the recipe. Mexicans don't use lemon zest in this, nor do they use coconut flakes on top. Also, never heard of Mexicans using coconut milk, rather, they use condensed milk. Water in this recipe is a no-no.
It's the same thing, just different method and name, you'll find rice pudding everywhere around the world, some cultures having cooked it centuries before rice and milk ever existed here
