- Banana Oatmeal Pancakes are so fluffy, you won't believe they are gluten-free and made without flour. All you need is a blender and a few simple ingredients to make them!
Ingredients:
2 eggs
1 banana (ripe with spots on the skin)
2 tablespoons maple syrup
2 tablespoons extra-virgin olive oil
1 teaspoon vanilla extract
1/4 cup water
1 1/2 cups rolled oats (certified gluten-free, if needed)
2 teaspoons baking powder
1/4 teaspoon salt

I love that they turned out great out right of the freezer & pop in the toaster. Makes life so easy! This week for dinner we had your Veggie Fried Rice one night and last night we tried the Vegan Quesadilla both were a huge hit!
