    In Greece we add crumble feta in it and call them kolokythoftedes.Same way we make eggplants fritters (melitzanokeftedes).Perfect with some dip of yogurt with oil and parsley

    Just made these and they were delicious! I added some Parmesan cheese (just 2 tablespoons) to the mixture and it ended up very tasty! Really soft and fluffy!

    Actually, the best way to get the excess water out of the zucchini or cucumbers for that matter, is: place grated zucchini in a pasta strainer over a sink, mix your salt in the zucchini, the salt will help the liquid out, and leave for about 5 mins. Squeeze with your hands. you'll be rid of more of the liquid withought making a mess.

    This recipe is not for me. I thought they would be crispier with a nice crunch, almost deep-fried. IMO it's basically scrambled eggs with zucchini. I did like the flavor of thyme though.

      You should do what I do.Slice the zucchini about 1 quarter in.Dip in bread crumbs,and fry in very littel bit of oil till crispy.AWESOME!!

    These are sooo good! They also go very well with a yoghurt dip on the side, e.g. yoghurt with dill or garlic, or garlic & mint.

      Have you ever eaten a Zucchini fritter, they are very soft on the inside and crisp on the outside. not much chewing to do but if you are one of those people who chew milk 26 times go ahead. But Nongia make remarks about our little Italian woman. Va via.

    Had zucchini in the fridge, so I thought I'd give it a try... so glad I did! Another great 'Laura In The Kitchen' recipe... I'm telling you, she hits nothing but home runs! Loved this recipe; made them in two different sizes; if you wait long enough, until they are fully set, then they are quite easy to flip... so listen to her when she says 'don't touch them!' Give it a try... these fritters ROCK!

    zuccini has a big stem on one end. cucumbers are more rounded on both ends. also cucumbers have a lot more water in them, are a much darker green, and VERY fragrant when you cut them open

    why squeeze the squash and then add milk? just leave the juice of the veggies in it. Like to know your understanding of the recipe.

    I went to this website for the recipe, not even A-Z allows you to do a search and I do not have the time to look through dozens of photos for this recipe. Can you build a search..or link here to exact recipe. Don't worry we will still go through your other things but making it difficult to get, with no measurements on a video..simple makes me want to go somewhere else.

      If you look on the website, up on the top right hand corner is a search tab. If you type in Zucchini Fritters it will bring the recipe for these up:) I made them tonight and they were really good! I hope that helps:)

    No parm cheese? I’d need cheese and these are runny compared to what I’ve made before. Plus I’ve added cooked bacon to them and served with eggs for breakfast.

    you can substitute zuchinni with corn potatoes, kumera - a sweet potato from New Zealand - or add bell peppers, onions, grated cheese, bacon . . . the list goes on - YUMMY.

    @TheSP1990 I'm pretty sure you can use any type of squash or squash type veggie. Cucumber is similar in composition to zucchini so I would try it.

    Laura in your website it says 1 1/3 cup zucchini but you mentioned in your video 1 1/2 cup , which is the right one

    If you're using cucumber make sure to scoop out the seeds of the cucumber so it doesn't get too watery. But it should work just fine :).

    Korean zucchini pancakes are very similar, but the main seasoning is sesame oil. I'm eating them now. ^ ^

    Best thing to do is make stuffed zucchini a, and use the insides that you would have removed to use for the fritters! You see you're not wasting the insides! Plus why use baking powder......just buy self raising..bang! Save time.

    I have made quite a few of Laura's recipes, this is not one of the better ones I'm afraid. Everything else I've made of Laura's has turned out delicious but my boyfriend does not want me to make these zucchini fritters again. I am cooking a different Laura Vitale recipe as I write this. I use her recipes for almost every meal, Everything else is great~

    i made this last night and it was WONDERFUL! i doubled the recipe because i knew my family would eat this up and boy did they eat this up! i used dried thyme and i made them slightly bigger. it was still the greatest. this is definitely going into my arsenal of easy recipes. and i was thinking, what can i put on top? jam, jelly, syrup? i ended up putting ketchup and it was still good.

    a zucchini has kind of a star shaped stem on the end while a cucumber is rounded on both ends. and where as a cucumber can be cut up and eaten raw I don't think many people would eat zucchinis raw. although, if that's what you're into go for it. and like Fredde jpg said, a cucumber is very watery. the inside of a zucchini is more of a firm texture the inside of a cucumber is a bit soft and kind of opaque.
