OMG!! I was always so intimidated to try canning but I finally bought a water bath canning kit and made strawberry preserves this weekend with fresh strawberries I picked from a local farm. I made a lower sugar recipe and this was a HUGE hit and so much fun!!! You really can taste your berries and its not too sweet. My next venture is peach and apricot preserves. Thank you Becky!

I am doing the last of my frozen berries I picked I hope it turns out good lol I took a cup of each of my frozen berries, straw berries, blue berries, black berries, raspberries then added 1/2 cup of each to make my 6 cups , had no pectin but I did have strawberry jello so doing that along with sugar… taste great so I pray it does thicken

I love this video! One suggestion: maybe when you can something like jam or relish, and you have a bit extra you put in the fridge, perhaps put a little clip at the end, showing you spreading it on toast or just showing the consistency, and giving it a taste. It ups the satisfaction for the viewer to really see the end product in action. Of course this won't work when you have a major canning day with multiple recipes, but at the end of this video I kept thinking "I wonder what it looks like fully jelled? I wonder if she was satisfied with the flavor?" Keep making great content!
Looks delicious! I don't bath the jars. I fill the jar with boiling jam, I clean the rim and close with the lid, then I turn the jar upside down and let it cool completely. I use simple lids, even recycled ones.
I have never commented before but really felt that I needed to say that you are the only person who has actually described what a rolling boil is, I am 74, living in the uk and make a lot of jam but never actually knew what rolling boil meant (my husband's favourite is Rhubarb and vanilla) so thank you I absolutely love all your videos.
My dad made every type of jam and jellies every year. We never had a store bought jam in our house. He would skim off the foam and jar it up for us kids. It is my favorite!
Going to have to try this. BTW, you probably already know this, but if you soak your strawberries in a bath of water with a little vinegar, then rinse, and let dry, they will last a week or 2 in the fridge without molding. Love watching your videos- thank you for sharing. :)
That looks delicious! Just a tip I’ve been doing for years. I use my turkey roasting pans to process my jelly. I can fit 11 jars at once. I’ve never had a problem with them not sealing I use them right on the top of the stove with the lid on some people have a problem because the water doesn’t cover the top of the jar by 2 inches, but I’ve not had a problem with it. just what I do, my kitchen my kitchen my rules. 😉☺️
I have watched several of your videos it is so nice to see a young girl cooking. Not just cooking but cooking from scratch. Most girls are not interested in that. I have been cooking from scratch for my family for years I am 63 years old. You keep it going. YOU ROCK.

Have you ever made Jelly/Jam from Plums? I make plum jelly and oh my goodness is it amazing. I make about 30 jars every year for our family and to give away. Not only does it taste amazing but the color is so beautiful. Our son lives out of state and when he comes home, he always asks for a pint or two of the plum jelly to take with him.
Who knew rolling boil is also known as roiling boil 😃 verb gerund or present participle: roiling 1. LITERARY make (a liquid) turbid or muddy by disturbing the sediment. "winds roil these waters" 2. BECKY!!!!! If you really love the flavor of the real fresh strawberries in your jam...then don't make cooked jam!!! You should make freezer jam!!! Find the recipe in the Sure Jell box. You still put it in jars but don't have to can it...just put your jars in the freezer. It is quicker, easier and tastes so much better!! It's like eating them right out of the garden!! That was awesome! I usually do 1kilo strawberry with 300gr sugar (but I am from Serbia & our berrys are really sweet), just simmer it on low for a little longer.

You can make a delicious variation on this recipe by simply adding a minced habanero pepper and the zest and juice of one orange to a double batch of jam. AMAZING flavor!! It pairs really well with cream chease and crackers. It make really great gifts also. You're awesome, keep up the good work ❣

I will be making JAMS from now on... Yet another TIP.. I put a about half a bag of Magneium ,, urmm. EPSOM SALTS on all my fruit trees... as this makes the fruit bigger and sweeter also... my dad taught me this but he use a whole box of table salt. It replenishes minerals in the soil from normal delpetion and or erosions.. we had HUGE fig trees and giant sized fruit on it.. we did this every year.. and never caught diseases.. like. Never..

My grandparents' favorite Christmas gift from me was always my home canned foods. I would save a pint jar box and fill it back up with an assortment of vegetables, pickles, jellies and sometimes a jar of two of homemade soup. They were always very good about returning the jars for refills! 💕💕
hi, I'm from Iran. we usually use 2/3 of strawberry amount sugar but we slice strawberries not mashing them.and for blackcherry jam witch everybody loves use equal amount of sugar. Also we have quince, carret, fig jam.
I do 1 measure strawberries to half measure sugar and that's it, no pectin, salt or anything else, I add vanilla beans if I have them and just cook on low to medium heat, stir and remove foam- it takes longer but you get the best strawberry jam ever. I don't know why complicate things. I wash my jars and put them in the oven to disinfect and put hot jam in hot jars.
@@AcreHomestead I forgot - clean the strawberries and put the sugar in and leave it till the sugar melts, you can leave it over night, and you don't need to cut or smash the fruit, it falls apart while cooking and you get small pieces intact. What I've learned watching my mom and grandma is how to make my life easy, so I do small batches, and I put it on the stove on Sunday morning, you don't have to stir it like when its on high heat and the whole house smells amazing :) I know its done when i put spoonful on the plate let it cool, tilt and if it wrinkles while moving it's done. Same process for plums ( I always add cinnamon), but for apricots you want it hot and fast so it doesn't change color. Hope this helps :)
I know how to can jam because we made lots of jam when I was younger. Now i have a house full of kids so i don't have time to make jam but i pick all the berries from our yard we have raspberries, blueberries, strawberries that I grow but we live in Tennessee and we have wild blackberries everywhere so I pick tons of Blackberries and my mom picks all the berries in her yard she make a quadruple berry jam using all the berries I give her it's enough to feed 3 households for the year. I can the tomato sauce and my mom gives me all the extra tomatoes and peppers from her garden plus all the extras from my garden so I make all the sauce and she makes all the jam.
Watching you make strawberry Rhubarb preserves has me salavating!! I can't find it in Whole Foods & I love it ! Sadly hubby doesn't like rhubarb at all, strawberry🍓 he loves. I've had double wrist surgery, so I can't do a lot if the things I used to anymore. I wish I lived closer to you, I'd buy some of your preserves. No matter the flavor of jam I make, for 50 years, I have always measured 1 cup less sugar, 1 cup more fruit. Sometimes the jam came out a tad bit thinner, but I would use those in other recipes. If it was real thin, I labeled it syrup. But it didn't happen all that often so sometimes I just had to make syrup for pancakes, ice cream, and such.
I missed my strawberry season last year and my strawberry harvest was just enough to snack on while I was in the garden. So, I had to use frozen strawberries, it is just OK. Next year, I will, go to my local farmers market and load up.
In Australia we call this Jam and goes on sandwiches and is spreadable. Jelly is something that sets firm and goes in the fridge and you eat with ice cream or fruit

Hi Becky, you make it look so easy. I'm gonna have to try the lower sugar recipe. I made peach jam last month and it's really sugary. And plus putting the pink salt it in,great idea
Use a touch of water mixed with baking soda to scrub the burnt on portion on the enameled cast iron pans. If that doesn't work boil water and baking soda it helps
My friend lives out there and swears that your strawberries are much better than anything we had over in Virginia when we lived there. She is like you full of energy.
I don't like sweet sweet strawberry jam/preserves either. I also add lemon juice and zest to mine. It's my fave too. I just ran across a Strawberry Jam cake. I adapt recipes like you do too. Basically I just put jam in the cake mixture from scratch, then added some to the icing as well. Then I put a layer of strawberry jam in between each cake layer first, then the icing. The cake was super moist and delicious.

I love making jam and jelly. I have alway had a stash of fruit that gets alittle over ripe in my freezer. I make single flavors if i have enough or i combine it and make mixed fruit. The loquats from my parents tree make the best jam ever!!
Someone may have already left this tip, sorry if it is a repeat. The dark stuff on the bottom of your enamel coated dutch ovens can easily be completely removed with a paste of baking soda and white vinegar. Mine looked just like your for years until I discovered this tip.
If you make strawberry jam again this year use vanilla sugar if you make that, which I am sure you do. It just brings it to a new level of deliciousness.
i JUST canned thirty jars of strawberry jam on monday and used the same low sugar pectin. it turned out great and the smaller amount of sugar isn’t noticeable to me at all. 👍 i also canned in pints this year for the same reason. great minds think alike 😜

Totally agree with something to balance all the sugar... I use a tablespoon or so (depending on how large the batch is) of lemon juice

I haven't but i have a plum tree and I didn't get enough plums last year to make any jam or jelly but I think I should this year!

My MIL taught me to make big batches of jam using my Turkey roaster. Use two burners and place the roaster over both burners. 🥰

Now i have a house full of kids so i don't have time to make jam but i pick all the berries from our yard we have raspberries, blueberries, strawberries that I grow but we live in Tennessee and we have wild blackberries everywhere so I pick tons of Blackberries and my mom picks all the berries in her yard she make a quadruple berry jam using all the berries I give her it's enough to feed 3 households for the year. I can the tomato sauce and my mom gives me all the extra tomatoes and peppers from her garden plus all the extras from my garden so I make all the sauce and she makes all the jam.

I've had double wrist surgery, so I can't do a lot if the things I used to anymore. I wish I lived closer to you, I'd buy some of your preserves.

No matter the flavor of jam I make, for 50 years, I have always measured 1 cup less sugar, 1 cup more fruit. Sometimes the jam came out a tad bit thinner, but I would use those in other recipes. If it was real thin, I labeled it syrup. But it didn't happen all that often so sometimes I just had to make syrup for pancakes, ice cream, and such.
I missed my strawberry season last year and my strawberry harvest was just enough to snack on while I was in the garden. So, I had to use frozen strawberries, it is just OK. Next year, I will, go to my local farmers market and load up.

In Australia we call this Jam and goes on sandwiches and is spreadable. Jelly is something that sets firm and goes in the fridge and you eat with ice cream or fruit

Use a touch of water mixed with baking soda to scrub the burnt on portion on the enameled cast iron pans. If that doesn't work boil water and baking soda it helps

I don't like sweet sweet strawberry jam/preserves either. I also add lemon juice and zest to mine. It's my fave too. I just ran across a Strawberry Jam cake. I adapt recipes like you do too. Basically I just put jam in the cake mixture from scratch, then added some to the icing as well. Then I put a layer of strawberry jam in between each cake layer first, then the icing. The cake was super moist and delicious.

I love making jam and jelly. I have alway had a stash of fruit that gets alittle over ripe in my freezer. I make single flavors if i have enough or i combine it and make mixed fruit. The loquats from my parents tree make the best jam ever!!
Oh interesting, I have never tried a loquat before
@@AcreHomestead i just cook them in enough water to cover and then strain the juice off because the seeds are hard to remove.

Someone may have already left this tip, sorry if it is a repeat. The dark stuff on the bottom of your enamel coated dutch ovens can easily be completely removed with a paste of baking soda and white vinegar. Mine looked just like your for years until I discovered this tip.
I’ve used dishwasher tab in 3” hot water sat in and it came off like new

If you make strawberry jam again this year use vanilla sugar if you make that, which I am sure you do. It just brings it to a new level of deliciousness.
I make my strawberry jam with lavender sugar. Such a lovely floral note you can't get from the store.
Pumona pectin and honey - it uses a fraction of the sugar and is delicious!
Hi Becky, I love your channel! You should make freezer jam for the ultimate fresh strawberry flavor. Way better than canned IMO
i JUST canned thirty jars of strawberry jam on monday and used the same low sugar pectin. it turned out great and the smaller amount of sugar isn’t noticeable to me at all. 👍 i also canned in pints this year for the same reason. great minds think alike 😜
