I’m growing my own garden for the second yr in a row, and want to get into canning so I’ve subscribed. I have zero equipment yet and have nvr canned a thing so I’m a complete newbie at this. I have some strawberries that r setting fruit right now, and I really want to make my own jelly. I’m also growing corn, peppers, cucumbers, zucchini, cantaloupe, watermelon, tomatoes, potatoes, green beans, blueberries, and onions. I always make my own spaghetti sauce from scratch and would love to can it rather than freeze it for a longer shelf life. Looking fwd to learning!
Hi Lori! and welcome! It sounds like you should have quite a harvest to work with! I also make my own Spaghetti sauce and do can it. Ketchup is another of my faves. Strawberry jelly is a great starting point for beginning canners, but I would use a pectin recipe, like from a Ball Blue Book, rather than a no pectin to make sure you're successful with your first jars. Yes I have heard of many ways of canning, as that's how things were done, the way you were taught by family was how people learned. I have always covered water bath with water, that's the way I was taught. That's why I say "you do you". because I know people like to can the way they always have.
Little tip for mashing lots of strawberries, use a stock pot. It has a flat bottom surface, making it easier to mash and no strawberries jumping out of bowl.😊😊
Great tip! yes I did end up using my stainless steel pan, I tried that bowl hoping to be able to show berries better, it did! they all jumped right out! 💞🍓🍓
Coulld this be done with cherries? I've never made jam, preserves, or pie filling bc we eat keto but i want some in storage. I use my pressure canner to steam can. I've also never done water bath. I started canning last fall. I really want to use the least sugar, or sugar substitute for lowest carbs but still have flavor. If shtf happens, some good preserves will be priceless.
Yes, you can make jam with cherries, I have a recipe I use for sour cherries. It is different than this one with no pectin and lemons. I would be glad to share it. If you want to make a low sugar jam, however, you would not be able to do so with powdered (or liquid) pectin like a sure jel. There is a pectin called Pomona's Universal pectin. It can be used with as little as 3/4 cup of sugar to 3 cups, and is a different pectin totally than the sure jel type brand that relies on a certain amount of sugar to jel, remain a good consistency and color and keep safely in jars overtime. You would never want to stray from the approved recipe given to safely can and the amounts of sugar listed. But you can order the Pomona pectin and use like I said, as little as 3/4 cup. check amazon, a two pack is roughly 15 bucks at this time, price may change, but it lasts a very long time, as it is a 2 part mixture. Hi! I personally have not tried using brown sugar. but I would say yes. Therre are even recipes using sugar substitutes in part with sugar. I would probably not firmly pack it in the measuring cup as I do for baking recipes, as I think you might end up with more sugar than you might want. Try sprinkling it in the cup first and taste it before cooking in case you need to adjust the amount. I also have another recipe here that uses all honey, no sugar at all. It's also very good!
@goldlotus7831 Hi, I became very interested in finding out more about using brown sugar in jam recipes so I did a little research. Brown sugar is ok to swap out for the granulated sugar, but it should be said that granulated sugar is best. Brown sugar will however change the taste of the jam, commercially made brown sugar has added molasses. It will also change the consistency and color of the jam over time, making it a brownish color rather than a bright red. Another idea if you don't want to use white gran sugar is raw sugar. It is sugar that the molasses has not been stripped from yet, so will likely have a slight molasses flavor to it, and also can darken. Honey is the next best sugar substitute, just be sure to use raw, unfiltered honey and use 7/8 cup for every 1 cup of sugar you are replacing. Hope that helps. 💕
