    Looks great! I used to be No.1 Pad Thai but I had this recently and the wok hei was like the icing on the cake, been after a suitable recipe and this looks perfect- off to shop now.
    It’s the attention to detail that elevates it……seared meat, caramelised noodles = wok hei = happiness

    This recipe is legit!! I just made it and it definitely tastes restaurant quality 👌 I subbed chicken and made Thai Chili's in vinegar as a spicy side condiment. SO GOOD! This will def be on our food rotation 🤤

    Made this tonight with some modifications. I couldn’t get Chinese Broccoli, so used broccoli Rabe. For protein I used ground beef browned in chunks and had 1/2” wide dried rice noodles. It was delicious. Cooked the rice noodles then rinsed so they wouldn’t be so starchy. I got a thumbs up!

      Thats wonderful! Great idea to substitute with those ingredients. We just made some drunken noodles or pad kee mao tonight and we also used ground beef also because thats what we had. It's a similar dish to this, but it's spicy and uses basil also.

      Welcome to the wok family! Noodles can tend to stick to woks if not cooked properly. Make sure the noodles are cool or cold, and dry. I like to place them in the fridge after I have separated them into portions. Don't cook too many noodles at once or it can cool down the well of the wok too much which can also cause sticking. The wok needs to be very hot, piping hot when cooking starchy foods and proteins, and with enough heat that you can always hear a searing sound throughout the cooking process unless you are adding a sauce.     I followed your recipe for this dish and it turned out amazing! This is my go-to when I go to a Thai restaurant. And I am so happy that I can now make it at home!       My pleasure! I use Pearl River Bridge Superior light soy sauce. I tried to link most of the items I use in the description. I purchase the larger container and refill my glass container. I like this brand because theres less ingredients and preservatives compared to other soy sauce brands. Hope this helps!

      The wok is from the wokshop in San Francisco Chinatown. They have an online store. It is the made in US pow wok. I'm using two wok stands, one that is made for samsung stoves and another one that sits ontop

      Your local Asian supermarket probably carries all these ingredients. I believe you can get most of the ingredients from Vons or Ralph’s. They likely won’t have Chinese broccoli but you can substitute regular broccoli; we’ve been to Thai restaurants that use that instead. They probably won’t have fresh rice noodles but might have dried ones. If they don’t have Thai black sweet soy sauce, you can substitute with Chinese dark soy and add a little more sugar to the dish. Hope this helps!

    I made this, but I didn’t have beef but used Tofu. Went shopping at the Asian Market. I like Chinese broccoli. Where is the wooden handle to your wok, the one you couldn’t get off, but did......lol?

      I bought a wok ring that was compatible with my stove. This one
      amzn.to/3bQNdJc Then on top of that I placed a stainless steel wok ring. Similar to this one amzn.to/36jbiXS The ones I bought fit perfectly. The first one olds the wok ring in place and the stainless steel one funnels the heat to keep the handle from getting too hot. They work great together if your stovetop is compatible with the first wok ring, otherwise you can always just use the second one alone and it will still be quiet stable. Just be cautious not to get a wok ring that brings your wok too far away from the heat.

      Thank you so much for visiting our channel also! The Red Boat fish sauce is normally double the price of other fish sauce brands, $8.99 at my local Asian market. I like to use the cheaper ones for seasoning soups and the red boat brand for dipping sauces and other dishes where it isn't being diluted. You can get it from Amazon but it will cost a little more.       The recipe in the description is for 1 serving. When we cook it for the two of us, we double it. So for 6 people, you’d probably multiply by 5 or 6 if this is the only dish you’re having for the meal. We like cooking the portions individually so all the noodles can get coated with the sauce and get a good sear for extra flavor. Otherwise the noodles can get mushy (from overcrowding the wok). Hope this helps!
