I just bought some udon noodles today in hopes of making something delicious for dinner this week. Missing some ingredients but thankfully have a nice Asian market nearby. Should be able to find the white pepper, dark soy sauce, broccoli and chilies there with no problem. I prefer breast meat but agree that sometimes thighs are the way to go for flavor and texture. Hope I can get my wok hot enough on the electric stove to get that steam and smoke combo she mentioned. Shooting for Tuesday night dinner. Wish me luck.

Yummmm I love this simple delicious dish, and yes the rice noodles are so hard to find … love the idea of the udon… I sometimes use thick hokkien noodles, works amazingly too.

What kind of oil do you use?
It's smart of you to reduce the seasoning to just dark soy sauce because udon is super salty. And I tried making pad see ew with spaghetti and it turned out nice. Give it a try.

For those who can't find good Asian noodles its great to know that a quality spaghetti is an acceptable substitute. May not be authentic but I'm sure its just as delicious. Thanks for sharing.

I always use cabbage in it because I don't like the smell of Chinese broccoli.

Marion, you're such a good cook en lovely person, but I hardly can make any of your dishes because you use a lot of soja sauce and I'm allergic to that. Now from another UA-camr, Dimitra's dishes, I learned about Coconut Aminos and it' s not the same, but at least it looks like it. So now I will definitely try some of your recepies. And from you I understood I'd better not visit Asia, because they use a lot of MSG and most people can stand it very well but I' m totally breathless after the smallest amount! Since 25 years I haven' t eaten Asian food from takeaway or Asian restaurants. I miss that!😢Thank you for being you😊

which noodles are authentic tho? udon noodles are a no go for me, as they contain gluten, but, there are few asian shops here, chinese, korean, indian and they all have a mix of products, from neighboring cuisines, they're not pure indian and so on, so I can find a number of rice noodles, but, I don't think you said which one to use
nevermind, checked the written recipe, it says there, and google seems to agree, that I would need dry wide rice noodles, which, as luck would have it, are available in pretty much any store, I don't even need to look for asian. if only I could find the chinese broccoli too >
Yep, wide rice noodles are the traditional one to use 😃
But I'm allergic to white pepper :(
can you have black pepper as I'd switch to that it'll still taste as good in my opinion x
If you're allergic to pepper try dehydrated papaya seeds

@@SchwarzeWitwe2 awww I'm glad you can have black pepper.I find If I am out of either I use one or the other, I sometimes leave things out if I can't get it it etc it always turns out good. Allergies are a pain I'm allergic to several things too x

It's hard to get right, and it has a lot less flavour
You need to mix it with a few tablespoons of water along with oyster sauce , black pepper ....
