Quick and Easy Chinese Dinner | Stir-Fry Pork and Green Beans with Chinese Cured Duck (laap aap)
Переглядів 3,9 тис.3 роки тому
Some days (most days now that we have an infant) we just want to whip up a quick and easy dinner because we're tired and don't feel up to cooking something elaborate. Here's a simple pork and green bean stir-fry I threw together along with some Chinese cured duck and rice. The green beans are cooked perfectly and have that coveted wok hei flavor. The green beans are not oily or mushy, and the g...

Preparing Thanksgiving Dinner | Sous Vide USDA Prime Ribeye Cap Steak, Pesto, Lumpia and More!

This year Thanksgiving looked a little different for us. Rather than the usual large gatherings we normally host, we opted for an intimate dinner. Our main course was USDA Prime ribeye cap steak as opposed to our usual turkey and prime rib roast, though we did make a mean apple turkey that we gobbled up. 🤪 Here we vlog us putting our dinner together from start to finish. Steak Night with the BOYS and a Giant Pizookie! First Steak in a Wok

Its been a LONG time since we had friends over for dinner. We decided to make steaks and a pizookie for dessert! For the steaks we are using USDA prime steaks, enough marbling to get your mouth to water. Functionality was high on our list because the space ...

Braised oxtail is great for special occasions and will impress family and friends. Oxtail needs to be slow cooked for it to be fall-off-the-bone tender. I normally eat this dish with rice, but it is quite versatile. You can shred the ox...

      cast iron doesn’t need to be seasoned, for it to be non stick it has to be at a specific temperature where water beads on the surface and with oil, stainless steel cant be non stick

    That is just a thicker carbon steel wok, that is why it is more heavy. You shouldn't make claims that it is wrought iron when you don't know. It could be said that the wok was been wrought by hammering but that is totally different.

    what does blueing the cast iron do?

      Supposedly creates the formation of a light protective barrier on the surface, which is also said to hold seasoning better

    Mine had developed brown streaks also from the water drops after i washe and it imprinted on it. Not a big deal i guess maybe needs more burning and more cooking but it's smooth no residue that you could feel on contact. It's dark blue 🌑 with dark brown streaks.

    Jason Some have recommended using the oven cleaning cycle to remove preseasoning from Lodge skillets. Do you think that the higher temperature of the oven cleaning cycle will also blue the skillet? Thanks for any help Robert

    • @BlueGorillaInTheMist
      @BlueGorillaInTheMist 2 місяці тому

      In my experience, the oven cleaning cycle doesn't get the job done all the way. More work will be required to fully strip the pan, like vinegar bath, or oven cleaner treatment... So even if blueing occurs during the oven cleaning cycle (which I think creates black iron oxide on the surface), the continued stripping should take it off. Instead, fully the strip the pan FIRST, then clean it up, and throw it in the oven bare at like 500 for an hour. This should achieve the "blueing," then you can go through the seasoning process... :)

    Ironically, experienced chinese cooks prefer thinner, lighter, therefore lower cost woks. That is when you have high BTU stoves that can give instant heat transfer.

    I bought a new, and fairly cheap wok from Toronto's gift to all cooks seeking tools, be they chefs or restaurant grunts or home cooks: Tap Phong Trading Co. So far so good with your method. One seasoning looks ok, visible flaws are due to the wok's uneven polishing. Smooth and uniform surface so far. I have learned a fair bit from your ideas! I maybe did not wash enough, as bluing step produced a fair bit of carbon on the backside? Although that was maybe because my bluing step put the backside towards flame for the most part? No carbon on the inner surface...not sure Anyways, I like it all. I'll try a few more coats and see what's what.

      it's too much manual labor and increases costs significantly. Seasoning is not rocket science and there is really no need to do it perfectly the first time. IMO the key is to get the protective oil film off initially. After that the wok will season itself naturally as you cook and it will reach it's optimal state in a couple of months.

    I always sand my new cast iron, something I could never imagine doing in the past. Hand sand it with 80 grit sand paper, then 150 grit. Then 4-5 seasoning sessions in the oven with avocado oil at 530 degrees for 2 hours. They come out incredibly smooth and non stick
