I'm super late to this party but today, I'm reacting to a video that went viral a while back: Uncle Roger and his hilarious Egg Fried Rice videos! The actual comedian behind Uncle Roger is Nigel Ng and his channel name is @mrnigelng. I reacted to two of his videos- the BBC Good Food one and the Jamie Oliver, but go and watch all his other videos too, they're very funny!
As an Asian person, I am triggered and aghast 😂

So far, every asian nationality that has seen this, agrees on using stale rice.
The texture is more suitable for fried rice, rather than hot freshly made rice! :)
Stale rice absorbs flavour better i think.
"You got some leftover rice? Don't waste it! Let's fry it for the next meal."
That's our usual mentality, and thus another factor why we favor using Stale Rice for making Fried Rice.
Basically cook some fresh rice & store it away for a day or two. My mother did that to make her fried rice.
The key to good Asian fried rice is to make sure each grain of rice is separated, seasoned well and not soggy. Asian short grain rice tends to be sticky and clumpy when freshly cooked, which is good to enjoy by itself but not ideal for making stir fried rice. Over night rice gets drier thus more suitable for stir fry.

American white girl here. I've always made rice the Asian way. I don't understand why so few westerners have a rice cooker. Until I found Uncle Roger's videos, I thought nearly everyone had one, but now I'm questioning all my friends and coworkers. It's true... most of them don't own one. That's a staple kitchen item that stays on the counter, along with the coffee pot and toaster! Why make it so difficult and unnecessary?? Also... I sit with the leg up too. I feel like with both legs down it cuts off circulation.

@@Jennie-mw2cl I think it's because their staple food are not rice but grain/wheat, so they don't see the need to have a rice cooker. Also, maybe because they never eat a white rice with a dish, or they think rice in packet have same taste like the one cooked in rice cooker. Not that I ever tried packet rice.
American Black guy here. I've bought a rice cooker and I've used it frequently. Before that, I used to cook it on the stove and let the water steam the rice, thus the Asian way. I didn't even know it was the Asian way. I recently learned a year or so ago about the finger method, so now I always measure my water this way. It has been fool proof so far. Great job on the video, by the way. Keep up the good work.

@@damiester1 That's because I have respect for Asian culture. I have respect for a lot of cultures but I prefer Japanese culture the most. Especially seeing how nicely they treated me and my wife during our two week vacation there.

I heard that "Leg up on chair" comment by Uncle Roger and you were like "A lot of asians sit with their leg up on the chair" and I was like "Huh? No i dont sit like that" then I just realized im doing it the moment I'm typing this comment that im sitting with my leg up lol. THAT IS SO TRUE!!!! That's funny hahahaha.

My asian senses always telling me to wash the rice 4 times, and sometimes i forget too count. Until i washed it for 8 times already.
Im not asian, but here in panama almost everybody eats rice everyday. i tend to wash it between 4 or 5 times, but i only use the rice cooker when i dont have enought time to cook it in a metal pot, because people in the house like to eat the toasted rice that is formed after preparing the rice.
@DarkEternal6 take note of the word used, "asian" not "italian". We wash rice even if we make rice porridge.
Opps! I only wash the rice 3 times, lazy me...
8:20 I remember a Chinese girl in school once saying something along the lines of "You should only be proud once, the first time you succeeded." Implying the same thing, that you should always strive to improve and get better.
That stuck with me because the Ultima series had already instilled the idea of pride being harmful.

Use feeling and just throw.
when it's about flavourings, asians give full freedom for the others to adjust.
for beginners: if you like it sweeter, you could add more sugar, if you want it more savoury, you could add more salt.
for intermediates: types of sweetness: white sugar, yellow sugar, red sugar, coconut sugar, honey, rock sugar... types of savoury: fish sauce from different countries, chicken msg, fish msg, beef msg, salt, soy sauce from different countries.
up to you to experiment.
I used to hate that when I was learning how to cook. “Just eyeball the measurements” but these days I can estimate the recipe for just about anything.
Fun side note. Jamie’s dish has almost no seasoning at all. At least hersha Patel added soy sauce. Jamie just added chili jam and some black pepper no salt.

@@elcamp3 eh kinda? In my experience it’s more about proper ratios and technique. Granted I don’t make cakes from scratch but with bread it’s more about the ratio of flour and water than it is specific measurements.
@@Heiryuu Ratios are measurements. My grandmother would use handfuls as measurements, or pinches. She'd used to tell me to use two handfuls of flour to 3 pinches of baking soda. A handful or a pinch is different depending on who is doing it, but the ratio remains the same.
I'm chinese and though I know that in Asian cooking, we just eyeball everything, I absolutely need measurements and instructions or I can't cook xD but no matter how much of a novice I am in the kitchen, even I know that everything hersha and Jamie did were wrong xD

Just Found out Ajin-No-Moto & MSG are the same thing after watching uncle roger.
Ajin-No-Moto is the reference brand for MSG. I'm a Vietnamese French and this is the brand Asian pros use. I remember some years back, when that bad publicity against MSG started, we had a lot of problem getting supplied with Ajin-No-Moto brand. We had to use other brands but they don't taste as good. Then while visiting Spain, my mom found out an Asian market selling Ajin-No-Moto brand. She bought dozens of kilograms to supply the family restaurant. These last years we've been able to find back that brand in France.

Me sometimes with other asian dishes like satay chicken or mongolian or black bean beef. Mix it up a little.

I just found out about Uncle Roger and find him hilarious! Being Korean born American, US Soldier Dad, and moving to the states as a child I must have had alot ingrained in me haha. When I cook people always ask me for my recipes and I'm like 😶, here are the ingredients add until it tastes right lol. I now have kids and my oldest is almost 16 and they have been cooking since they were old enough to be in the kitchen, they always laugh when their friends talk about how they eat or cook rice. It makes my eye twitch 😫. I never knew about the leg up though as thats funny cause my kids and I all sit like that, its always been more comfortable for us.

His Gordon Ramsay fried rice review is amazing. Please think about doing that one next. Also, yes, chili jam is a sweet chili preserve. Sugar is the main preservative agent. Not as sweet as say, a fruit jam, and it still retains the heat of the chili.

Hey, don’t look me. My mom and I are both white and when we saw that for the first time we had the same WTF reaction, LOL. We’ve never seen anyone cook rice like that before, must be a British thing. But yeah, I really want a rice cooker now.
My grandmother taught me how to cook rice, she cooked rice the same way since 1925 and she cooked it the right way. So yes, this has to be a British thing.

Subbed. First one, including Uncle Roger to explain that the issue with olive oil is the low smoke point.
His accent is legit tbh. That's what Malaysian accent sounds like. Sometimes we fit 3 to 4 different language in their sentences. The leg thingy is kinda telling that when he's put his leg down mean he's getting serious instead of relaxing posture like leg on the chair.
thats more of a made up Hong Kong accent plus abit msian.
@@ziyuansim5090 Malaysian can speak different dialect. We not only speak mandarin, we can speak Cantonese and few other dialect. His particular accent is the most common in Malaysia, most elderly talk like him. He adapted the older generation persona and named it Uncle Roger. He said so in his video with Hershel. The BBC lady.

3:31 You only wash the rice once? I don't know if that's gonna cut it. Usually it takes more than one wash to get the water to look clear. Great video, by the way. I love Uncle Roger. He's the reason why we're all getting through 2020 with laughs and smiles on our (sometimes masked) faces.
Thought the same thing. Here in Japan, the rule is to wash until the water clears, however many times that takes.

Yeah, chili jam is just what it sounds like - a jam made with chilies instead of strawberries or raspberries or whatever. Makes for good PB&J...but I wouldn't *cook* with it - especially with Huy Fong Foods just ten miles from my house (no chili-grinding tours this year - sad).

Just like you, I expected more from Jamie Oliver, too. He should know that olive oil is not suitable for stir frying. It has relatively low smoke point. If exposed to higher temperatures, it becomes bitter. That is why neutral oils are always suitable for stir fry dishes.
