We raised ducks when I was a kid and the color of the yolk is almost entirely dependent on the diet of the bird, whereas the color of the shell has more to do with the breed. The feed also influences the taste, which would be why the penguin egg tastes fishy. I like to think that everything in the ocean tastes more or less like seaweed since almost everything in the ocean has seaweed somewhere in its food chain. I preferred the eggs from the ducks who ate primarily corn. The yolks had a bit of cornmeal flavor to them. I've heard that certain factory farms feed their birds coloring agents to make the fat yellow, and that would also change the yolk color. I believe Perdue claimed their color is from marigold petals. Could be why the chicken eggs are more orange.
My brother's girlfriend keeps chickens, so we often get eggs from her. It's interesting how much the taste varies from storebought eggs. I'm trying to convince my family to stop getting eggs from the store and start getting all our eggs from her, because I much prefer getting eggs from chickens that I know are well cared for.
I have pekin ducks and the yolks of their eggs are VERY yellow, almost more so than chicken eggs. They pick around in the yard quite a bit and get a lot of protein. The eggs are great for baking
Deku Kitty her chickens are probably allowed to roam free, and they eat bugs and table scraps and such, so they have more flavor than chickens that only eat grains or pellet feed. When they eat bugs and get to forage for food their eggs are such a wonderful orange color, and taste amazing.
Whenever I feed my chickens fish, their eggs taste fishy for a couple of days afterwards. I often make them 'special treat' meals that are really just random stuff I have on hand, all mixed together lol. They love it. Oats with sunflower oil, chopped Brazil nuts, boiled pumpkin skins, vege scraps, strawberry tops and chilli stems, spinach and rocket from the garden that caterpillars or grasshoppers got to, the last bits of yoghurt scraped from the tub so I can recycle the container, leftovers, and a couple of cans of tuna or sardines all stirred up in a big Tupperware container and left on the ground for them. Wattles and flecks of food flinging and flying everywhere, hilarious to watch them gobble it up in a frenzy 😂 You can tell who managed to pig out and who missed out by the flavour of their eggs afterwards!
🐧🐧🐧 I wonder if you made a broth with sardines, and used it to make the imitation white instead of just plain agar agar if it would taste more like an imitation penguin egg..
The quality of the yolk is actually an indicator of the laying animal's diet. Pale yellow yolks indicate a diet that included a lot of grains and yellow vegetation (corn, grain feed) whereas a more orange/red-hued yolk indicates an animal which has fed on a lot of proteins (insects, worms, vermin, high-protein vegetable fodder, etc) and a deep yellow is a balance between the two. Thus it makes sense for a duck yolk to be more pale, especially if it was farm-raised on grain feed... and a penguin yolk to be a deep reddish orange due to a protein-only diet. I raised chickens and did this as a 4-H experiment many many years ago and even among birds of the same type, a drastic difference can be seen in the yolks of those fed only grain, a mix of grain and protein, and a more protein-rich diet. I also noticed the paler the yolk is, the less flavorful and "yolky" it tends to taste. Darker yolks are definitely the best!! Hope that helps!
I can confirm this. I feed my flock a grain mix in the winter since they're mostly not laying and the grain has a higher calorie content for the amount they get, then in the warmer months they get a high-protein layer feed. They're also able to forage on an acre or so of good pasture with a bit of woodland in the back corner, but obviously there's a lot less good forage in the winter. The few hens I have that lay in the cooler months while they're getting mostly grain lay very pale yolks, but those exact same hens produce lovely deep yellow-orange yolks when the summer months roll around. The shell color is genetic (most of my hens are mixed-breed easter eggers and lay pale green shells), but the yolk flavor and color is almost entirely based on their diet.
I love how excited she gets about everything. Lol I am the same way. The weirdest and simplest things get me happy. It's really the main reason I watch her.

yup, you will see a clear division between the 2. Maybe more work than it is worth?
Omg! thank you Emmy I have a little mason jar like that and I will totally try that, was boiling my eggs wirh baking soda and helps the shell to peal off easy but only if eggs are fresh.
It does though. Penguins lay just one egg and they are VERY protective of it, they take turns heating it, and generally have a bigger motherly instincts than most birds. Baby penguins also rarely survive. Plus they rarely ever lay legs that don't end up being fertilized, while chickens will lay eggs no matter what, even when there's no male to fertilize them with. Viktor Chmiel They’re both just animals. Yes a chicken has such a different way of life than a penguin, I mean monkeys live differently than whales right??? it is not any more special than a chicken egg. That’s just like how people freak out when cats and dogs are being eaten. What about the cows, pigs, chickens, goats..etc? What makes dogs more special, their cuteness? I peel my eggs by cracking the bottom fatter part of the egg lightly before I boil them and then it lets water get through so it's easier to peel when it's done boiling.
For me I follow Emmys way. She says to bring the eggs to room temp. Either by letting them sit out or place them in a bowl of warm water for a few min. Bring some water to a boil. Gently place the eggs in the boiling water and boil for 8 min. While they are boiling get an ice water bath ready to place the eggs in to shock them. This helps release the membrane from the egg and they peel beautifully 😀
Erika Mononoke in Germany we have egg pickers. (Idk how to call them) it's basically a needle with wich you punch holes in the bottom part of the egg where that air bubble is. And then after boiling we rinse the egg under cold water. I always thought the holes where so that the egg does not crack while cooking and the cold water to make peeling easier ... Thank you thank you thank you!!! I'm SO glad I saw this video right before Easter! Eating up all the hard-boiled eggs is one of the best parts about it, but removing all the shells has always been a pain! I'll be using a mason jar for every single one this time 😭♥️♥️♥️ THANK YOUUUUUU
Ms. Emmy, I want to thank you so much for introducing me to agar-agar. I have had to swear off all gelatin products due to my pork allergy to both the meat and to lard. You have provided me with a plant based alternative that I never knew about, so now I have a way to cook or make gelatin pudding pies, and other delectable desserts that I can eat without feeling so bad. I can't thank you enough!
I love your respect, awe and interest of food! I’ve become more observant of my food and I love how you savor all aspects like taste, texture and aroma. I hope I can get fun foods like you do. Us plain Americans don’t try much outside out comfort zone
It's funny that you told us all about penguin eggs because I've been wondering for a few weeks now if it would be possible - with the current craze for transparent food - if such a thing as a see-through fried egg would be possible. And you've done the next best thing. Thanks for an interesting and educational video, Emmy xx
Honestly....every video you make, its so much fun watching! I started to religiously watch your videos when I came across you testing Japanese candies...I ended up spending 100$+ on amazon just because you made them look so good haha! NO REGRETS!
Sardine oil on egg isn't as weird as it might first sound. Lot of tuna/sardine salad recipes use some chopped egg. Sardine salad spread on crackers is one of my favorites, btw.
Just found your channel the other & I never thought I’d be so interested in someone trying food 😂 idk I think it’s your soothing voice but I’ve been watching you all through the day lol
So growing up raising chickens - yolk color is largely depenedant on what you feed the birds. Most yolks in the US are preferred bright yellow. However Texans tend to prefer orange yolks and hence (no joke) birds are sometimes fed Marigolds to brighten yolks. I've also read that parts of New England prefer paler yolks than the rest of the country and birds will be fed Milo grain. Granted most of that is from a book my mom had as a kid that I haven't read from in like fifteen years.
Wonder if you could use the jello egg molds they have to make these. It is getting to be Easter time so you're more likely to find them. It would definitely make these more egglike.
Ok, Emmy, so if you pour a little agar agar into your container and semi-cure it, then put in the yolk, then pour in the rest and finish curing it, would it then keep the heavier yolk from settling to the bottom? And would it or would it not leave an undesirable "line" separating the two halves?
If you go to Iceland in June/July you can eat Guillemot (sea bird) eggs and their whites are semi-translucent when boiled- and yes they taste a bit fishy too.
If you have farm fresh or your own chickens, they will *not* peel like that unless you let them get as old as store-bought eggs (so old!). Duck eggs are likely much fresher because the market is locally raised, and they just never peel as well.
It could also have to do with the processing they go through. In the US, the eggs are actually bleached to remove all the gross stuff from us cramming out chickens together. This is also why we have to refrigerate them, while in other countries they can leave them out on the counter
We also have to refrigerate ours because we don't vaccinate our birds for salmonella en masse, unlike countries like the UK. Emmy's in the US, so her eggs are washed if they came from a retail source at all (including farmstands). As the egg ages, the membrane loses water and pulls away from the shell.
No that's incorrect... They key to peeling fresh eggs Is to boil eggs with salt, then dink them immediately into cold ice water, then rap the egg all around on the counter peel and break off the fat shell part of the egg then you Can easily peel them. I have 30 chickens and make lots of deviled eggs.
When you were cutting the eggs I noticed your clock ticking in the background and it was very lovely, my mum has a really loud kitchen clock and it made me homesick in a good way!
I don't know if it would work as well as the I've mold, but you can usually find egg shaped Jell-O molds online or in stores around Easter. They'd be great for giving you that ovate shape.
It's so cool that they get to experience all these cooking experiments, I would have loved to see this stuff as a kid - luckily get to now through this channel :D
If you want eggs that are super easy to peel you should try steaming them. Steam for 10 minutes and shock in an ice bath until cool. The shell pretty much falls off when you roll it to crack the shell. The yolks are also bright yellow.
Wonderful experiments! If you take a poll, the clear is gorgeous, but so is the "pearl"! And wonderful penguin egg chef history and info! The history of puffins as they relate to Friday Fish and the Church is also interesting! I learned from a Danish chef to royalty, to peel shells from hard boiled eggs by rinsing the eggs under cool water then, right away, tapping tghe egg's air bubble end and slipping a stainless steel teaspoon's "bowl" between the egg and shell. Viola! The shell easily falls off. (}-: Question please: why do you boil chicken eggs 8 instead 3 minutes for hard-boiled? Have you ever made the Traditional-American New Year's breakfast "Eggs Goldenrod"?
To keep the yoke from sinking, can you fill the agar agar ti a point and let it harden then add the yoke and the test of the agar agar? Or would that mess it up from forming a single globe?
now.. you got me worried.... the agar agar that I bought from Living Jin is from Korea I think... I wanted to try the clear pumpkin pie that I seen on another channel.... I hope it comes out clear... thank You for sharing... many years ago.. I had seen the rainbow cake.. and always wanted to try it... (sorry.. not the penguin egg)
because......... that is...... the.... way I.... post...... sorry .... if... it.. bothers YOU.... will try... not to bother You so much... but thanks for the comment... have a good day!
Can’t you cook the egg in the sous vide way to prevent a denatured egg? Than it would be transparent sofar or not? Should be the right lower temperature but should work fine!
I used my Instant Pot to steam eggs. I had to have a dozen so I needed the big pot. 7 minutes later, I picked up an egg and the shell practically fell off. And the white was perfectly smooth. Which I wanted because I was making deviled eggs. So, steamed eggs peel effortlessly compared to water boiled eggs. If you haven't tried it, you should.
I knew I should have stayed away from the comments section. I knew people would try to justify why eating a penguin egg is ok and then I'd feel obligated to argue and get all in a tizzy
Neamhdhlisteanach it’s not the food chain if it’s not necessary. Humans can survive, hell thrive without killing baby penguins and endangering them. However, if it has been part of your tradition to eat penguin eggs for many generations, and you haven’t greatly killed of penguins yet, then you must be doing something right?
I find it works great for me to just roll the egg under my palm along the counter to shatter the shell for peeling, I’ll usually submerge it in the cold water that I cool the eggs in after boiling then because the water does help the shell to come off.
I was just watching Ellen (by accident not by choice) and I got super excited because I thought you were gonna be the guest lol. I saw your video of your retro recipe with the spaghetti o jello mold and Vienna sausages. But it was some guy reacting to the video :( Kinda pissed me off.

Can you eat an Ostrich egg next?
Eggo Homestyle Waffles yesssssss
That would be amazing to watch her do!
she did eat an ostrich egg
Can I guy you in bulk?
Thank you thank you thank you!!! I'm SO glad I saw this video right before Easter! Eating up all the hard-boiled eggs is one of the best parts about it, but removing all the shells has always been a pain! I'll be using a mason jar for every single one this time 😭♥️♥️♥️ THANK YOUUUUUU
Oh my goose. "Negg" is a terrible name for a product, haha.
I love watching your videos because, apart from being awesome, I fell like I'm taking biology class all over again 😂😂
🤓
Why are you the best? I can't get enough! The clear/translucent videos are amazing!
Also, I LOVE the intro and outro now. Very lo-fi.
I'm watching a UA-cam video about a transparent boiled egg at 2:09 am. Why not? It's interesting and entertaining.
Car Jul 3:12 am for me now lmaoo
2:05 for me ok its creepy
Car Jul and 4 months later at the same exact time I am watching it.
At least you all get educated
Other people do drugs during that time
Consider yourselves lucky :^)
I love your respect, awe and interest of food! I’ve become more observant of my food and I love how you savor all aspects like taste, texture and aroma. I hope I can get fun foods like you do. Us plain Americans don’t try much outside out comfort zone
1am in Ireland... about to go to sleep. Saw this notification. HAD to watch. 🙌🏻
Penneys Hun amazingly Irish username
Penneys Hun is it good over there because me and the wife have been wanting to take a trip there
Tanner Moore definitely - come closer to the summer though. June is always good
Penneys Hun thanks it's between Ireland and Australia. But I have a great grand mother from irland
Hello 👋 how are you doing today
It's funny that you told us all about penguin eggs because I've been wondering for a few weeks now if it would be possible - with the current craze for transparent food - if such a thing as a see-through fried egg would be possible. And you've done the next best thing. Thanks for an interesting and educational video, Emmy xx
1:46 “Raindrop cake with egg yolk topped with sardine oil” I wonder what my reaction will be if I see this on a menu
Honestly....every video you make, its so much fun watching!
I started to religiously watch your videos when I came across you testing Japanese candies...I ended up spending 100$+ on amazon just because you made them look so good haha! NO REGRETS!
"Isn't that wonderful?" - Emmy, in every video
🐧🐧🐧
I love how they turned out! Another great video Emmy! I wish you would’ve made a tiny clear egg too! That would’ve been so cute! 😃❤️❤️❤️
Hello 👋 how are you doing today
Sardine oil on egg isn't as weird as it might first sound. Lot of tuna/sardine salad recipes use some chopped egg. Sardine salad spread on crackers is one of my favorites, btw.
Just found your channel the other & I never thought I’d be so interested in someone trying food 😂 idk I think it’s your soothing voice but I’ve been watching you all through the day lol
Am I the only one that thinks of Neopets when I read Negg?
was searching for someone who thought this as well lol
Same here!
So that's why it sounded familiar! I should've known since I played for years.
Yes.
I thought of.... something else....
Emmy: The penguin is endangered so bummer I’ll never get to try one of their eggs. 😂
You find the craziest things to make! I love it! Thanks for sharing this with us!
Wonder if you could use the jello egg molds they have to make these. It is getting to be Easter time so you're more likely to find them. It would definitely make these more egglike.
brooklynbaby1987 I was thinking the same thing!
Ok, Emmy, so if you pour a little agar agar into your container and semi-cure it, then put in the yolk, then pour in the rest and finish curing it, would it then keep the heavier yolk from settling to the bottom? And would it or would it not leave an undesirable "line" separating the two halves?
You should make an eggcellent video of you trying all the different types of eggs you can get your hands on. Anyway love your videos❤️🥚
Yannis A. Yesss
If you go to Iceland in June/July you can eat Guillemot (sea bird) eggs and their whites are semi-translucent when boiled- and yes they taste a bit fishy too.
Chris Gordon thanks for that fun fact! Cool!
If you have farm fresh or your own chickens, they will *not* peel like that unless you let them get as old as store-bought eggs (so old!). Duck eggs are likely much fresher because the market is locally raised, and they just never peel as well.
duiker22 , that's cool. Didn't know that! Thanks
It could also have to do with the processing they go through. In the US, the eggs are actually bleached to remove all the gross stuff from us cramming out chickens together. This is also why we have to refrigerate them, while in other countries they can leave them out on the counter
Can confirm. I have chickens and the fresher the egg the harder they are to peel cleanly.
You're a strange yet, fascinating woman. I just discovered your channel today and now I can't stop watching. Lol
I didn't even know that you could peel an egg with a mason jar... the more you know I guess
If you put them in the jar or a glass and shake it will loses all the shell and break it up and it comes off soooo easy!
Hello 👋 how are you doing today
This is such a cool and unique channel. I always learn something new and enjoy the videos.
gen two penguin? you must mean deliberd
I THOUGHT THE SAME DAMN THING WHEN I HEARD HER SAY IT AUDUFIFJ
I'm curious as to your job or schooling. How did you just pull out the word "cartilaginous?"
Emmy I really miss your bees! When will you show us your bees again? :)
RoysFlameKitten Because it's winter and she's in New Jersey, I'm assuming her bees are hibernating.
Crazy Russian hacker / taras kul keeps bees too! He’s fun to watch
Deku Kitty i think shes in RI actually
Hello 👋 how are you doing today
Thank you for making wonderful content that fits in with my family and our curiosity!
You're welcome. Thanks for watching. ❤️
Maybe if you try this again, you could try goose eggs - they have a darker yolk than duck eggs, and might be the size you'd want.
When you were cutting the eggs I noticed your clock ticking in the background and it was very lovely, my mum has a really loud kitchen clock and it made me homesick in a good way!
I love your videos! You’re my favorite UA-camr! ❤️
Thank you!
I don't know if it would work as well as the I've mold, but you can usually find egg shaped Jell-O molds online or in stores around Easter. They'd be great for giving you that ovate shape.
you know, that might actually be an interesting presentation for soup... drop it in soup just before serving. o_o
Yep. A bunch of quail eggs prepared thta way in soup, wpuld be very interesting
I really like the change in editing, the little featurette in the opening was very well done.
"the negg" just reminds me of my days on neopets haha!
I love the comparisons! Great video as always, Emmy!
"I want the largest yolk possible"
ostrich eggs....?
That would be very cool to see!! A giant deviled egg perhaps? Emmy thoughts??
Ummm... your brain is beautiful. I'm so glad I stumbled upon the joy that is emmy.
Do your kids ever get to eat the weird things that you make for this show? :)
Yes! My son didn’t care for the faux egg, but polished off the tin of sardines. 🐟
It's so cool that they get to experience all these cooking experiments, I would have loved to see this stuff as a kid - luckily get to now through this channel :D
Hello 👋 how are you doing today
Anyone else patiently waiting for her to say “stinking!” So cute and never fails to make me laugh 😊
If you want eggs that are super easy to peel you should try steaming them. Steam for 10 minutes and shock in an ice bath until cool. The shell pretty much falls off when you roll it to crack the shell. The yolks are also bright yellow.
So did you consider mixing the sardine liquid in with the water you made the "whites" with, rather than just pouring it on it?
Please do an ostrich egg recipe!
It would be a lot easier to get a emu egg, I have a farm down the road from me lol
there's not really a recipe for that. You just have to buy an ostrich and wait for it to lay an egg.
Juan Rocha lmfao I'm crying
*Seadoggo intensifies*
N'EGG!
To keep the yoke from sinking, can you fill the agar agar ti a point and let it harden then add the yoke and the test of the agar agar? Or would that mess it up from forming a single globe?
That last bit, all I could think was "Silicone breast implant jiggling!"... :P
you're trying out so many things in this video!! you go, emmy!! 🐧 🐧 🐧
now.. you got me worried.... the agar agar that I bought from Living Jin is from Korea I think... I wanted to try the clear pumpkin pie that I seen on another channel.... I hope it comes out clear... thank You for sharing... many years ago.. I had seen the rainbow cake.. and always wanted to try it... (sorry.. not the penguin egg)
Why... So many... unnessary pauses... in... this... sentence....
because......... that is...... the.... way I.... post...... sorry .... if... it.. bothers YOU.... will try... not to bother You so much... but thanks for the comment... have a good day!
use commas and periods omg
Yogee Bear
Building suspense.
DebraMcL Nope Save it For something Else and Get The Japanese Kind....I learned from her vids that it will be Foggy if its Korean
Can’t you cook the egg in the sous vide way to prevent a denatured egg? Than it would be transparent sofar or not? Should be the right lower temperature but should work fine!
Fun fact from a 14 year old!
Any shape container works for peeling an egg.
I agree! this is so wrong!
If its their culture I'm okay with it, if they're just doing it to say they did it's wrong.
its the food chain. get over it
people can have opinions Neamhdhlisteanach she didnt even really argue just stated she felt obligated to argue but did not. get over it :)
Hello 👋 how are you doing today
THIS IS THE EARLIEST IVE EVER BEEN
Just A Silly Pisces. Omg I love your profile pic
Wynter Littel oh golly ty!
“Look at it jiggleeee, look at it wiggleee” 😆
I was just watching Ellen (by accident not by choice) and I got super excited because I thought you were gonna be the guest lol. I saw your video of your retro recipe with the spaghetti o jello mold and Vienna sausages. But it was some guy reacting to the video :(
Kinda pissed me off.
imafake2807 first of all. That guy is hilarious. Second... why did you have to have a disclaimer to why you watched Ellen 😂😂
Exactly 😂 “I was just watching Ellen (by accident not by choice)”
What?
I like the translucency of the Japanese agar and the flat bottom eggs. I love eating eggs. Quail eggs are a treat for me. This looks like a fun um thing to do with the kids.
The eggs from the wine glasses looked like breast implants that got infested with bacteria......sorry 🙊
Emmy, you would be a perfect judge on Food Network! You are always so perfectly descriptive when you try foods. lol 💕
such a cool video, I learned soo much!
I watch emmy's videos while studying cos her voice is so soothing
Hello 👋 how are you doing today
That's kinda sad, peguins love their eggs (most of the time)

Loved this video! Never committed before. But Loved this!! Thank you for your time and video
