I actually wonder what happens when you soak the mixture that turn the totamo puree into wobbly yolks can you refrigerate them in little coblntainers and consume later? (like food prep)
Finding ways to heat them up without destroying their texture. No one want to eat a (vegan) runny egg cold. 🤔
@littlenewthings I think you can make a whole bunch of them and freeze them in a mold. Take them out, put them in the sodium alginate solution for longer than a minute and after you rinse in water use warm instead of Luke warm water so it’ll rinse off and thaw to not be cold

I agree! I truly don't understand why people feel the need to tear down vegans all the time. Especially such kind people, like Merle, who offer fun alternatives to experience whatever it is people love about meat, whether that's the taste, texture, etc. without harming the environment or financially supporting a corrupt industry. I am not even fully vegan myself (I consider myself flexatarian) and I understand this concept and don't think it makes ANY sense to be rude to someone for trying sometime fun and different like this.
Because people don't understand that calling a meal with animal procuct "vegan ___" isn't because we all want to secretly eat meat or "jealous" (as one commenter said lmao), it's for texture/taste reference. Somehow it always ends up in a fight about ethics.

Not it doesn't, it looks like an egg yolk while it was still wet but then when outer shell dried it was lumpy and running of the fake yolk was way too uneven like normal yolk.

I remember back in 2009 or so I was really enchanted with a vegan blogger I followed who did all sorts of transmutation - making nigiri by vacuum-compressing roasted red peppers with algal oil, spherifying vegan roe using kelp broth in sodium alginate - and this method of making vegan yolks is a wonderful way to see that extended!
Those sounds like really fun experiments 😍 They also sound more delicious than some of the recipes today

Thank you for recreating this recipe, they said it was something like a bearnaise base in the Insider video, so I am glad you really hit the nail on the head so well. That said, do you think you could kill the acidity of it a bit, or tame it so to speak, by adding an alkaline solution? Would that interfere with the spherification process? (like baked baking soda for example?)

For anyone else that gets a grease stain on their clothing: cover that bad boy with dish soap, scrub it a bit in a circular motion with an old toothbrush for a minute or so, and machine wash on warm. If it doesn’t come out, repeat until it does BEFORE you dry it. Works like a charm.
