    INGREDIENTS:
    Salmon Lox:
    3-4lb salmon filet
    1 cup salte
    1/2 cup sugar
    1 cup chopped herbs (parsley, basil, oregano, dill, fennel tops)
    2 tsp lemon zest
    1/2 cup vodka (optional)
    Tuna Tartare:
    2 cups diced ahi tuna
    1 tbsp sesame oil
    1 tbsp mirin
    1 tsp sliced thai pepper
    1 egg yolk
    1-2 tbsp picked cilantro
    1 tbsp chopped scallions or green garlic tops
    maldon salt to finish
    Lime Tumeric Crema:
    1/4 cup creme fraiche or sour cream
    2 tsp toasted tumeric
    1 tbsp lime juice
    salt and white pepper

    I think this has got to be one my favorite video so far and I've been watching for at least a few years! (5 maybe?) I love watching finer food be prepared and especially liked how you showed your creative process, because that's really where the talent of cooking begins.

    That looks so pretty and something I’d actually eat, minus the raw yolk. I usually make steak tartare for my dad every now and then, it’s simple to make, ketchup, Worcestershire sauce, olive oil, black pepper, minced onions and maybe some fresh parsley. But I wouldn’t eat it personally, maybe in a hamburger.

    Is the vodka necessary for the curing process of the salmon or is it more so for flavoring or something else?

      Seamus Ronan it’s optional but optimal, it’s an extra step to curing to secure the curing agents while also removing any unwanted bacteria during curing.

    Love this video! Tuna tartare is a favorite of mine. Do you have advice on how to prepare it safely? I'm uncertain of how to purchase/store/prepare raw fish and fear making my guests sick if I attempt this with just any old raw tuna steak that I find at the supermarket!

      CLS you need very fresh, high grade fish. If you can't get that, cook your fish.

      CLS do not purchase those pre cuts you see in those plastic wraps sets. You have to ask the fish butcher if they have a whole fish or fresh raw fish. And ask if they prepare any fish that can be consumed raw. Only way.

      If you have a sous vide machine, make yolk confit ( you can infuse some herb in the oil)

      anishgupta it’s raw but it’s actually safe to eat & cooked. The enzymes & acidity added to the raw tuna basically cooks it. Appears raw but chemically cooked.

    Followed this recipe to a tee. Tasted great but, smelled like a sell out. Next time I make it I’ll use I little less salt and I won’t use my computer to plan it out first.
