Fasting Rules I didn’t even realise the wastage that must happen until my local supermarket stared selling “odd bunch” vegetables. They are just knobbly or misshapen. It’s awful we have ppl starving or going hungry in this world.
I’m currently in a culinary program and need to practice my knife cuts! I got a 3-4 lb bag of “flawed” potatoes for .99 cents at Kroger! I can practice my cuts without breaking the bank, AND make a delicious garlic Parmesan mash right after. Kroger is helping me through culinary school and I actually practice recipes at home w their marked down produce. I related SO much to this video. I wish they’d collaborate with me, haha! Awesome video.
I can relate this this comment very very much. I used to practice my sauce plating with thinned down ketchup and mustard to get my streaks and splashes on point. also I used "flawed" produce for my knife skills as well. Where there is a will, there is a way. Bravo chef! Bravo
I remember my grandma would give the outer leaves of lettuce and cabbage and other flawed parts of vegetables to her neighbor's chickens and she would give her some eggs in exchange every week.
This is a beautifully colored dish! I love it, and it has such a warm, fall theme to it. Gotta try it, especially with such an easy, beginner friendly recipe!

Here’s a tip my grandma learned me, to avoid the soup broth getting thicke and having over cooked noodles for next day left overs. Cook the pasta on the side and just add it to the bowl your going to put your broth in :)

I love this video and the reason for it. I work in a grocery store and specifically in the produce department and I always have to throw out product bc of little things or imperfection that people see like the zucchini if it’s even a tad scrapped people don’t want it even one little tear in it, and people pass it up bc it’s not to people standards but it’s still just a zucchini and it won’t matter. I think people mindset and there decisions shouldn’t be that picky. I love fruit or vegetables that are different especially when they are deformed, it just makes them more special. Thank you for your video!!
Swedes! My grandmother cooked with rutabagas a lot (she called them Swedes). Sadly I don't have any of her recipes, so i'm happy to see Swedes cooked in anything. Minestrone is a great idea.
I was taught by the wonderful chefs on Food Network (Giada de Laurentiis and Rachael Raye are 2 of my favorites!) to say Min - a - stro - ne soup! I would have to omit the zucchini, as it's not my favorite, but on the whole, this looks SO good!
This is such an important problem that needs to be discussed more in the UA-cam sphere. Would love to see a video of you showing people what you can do with food scraps (other recipes, broths, compost)

Great recipe! My only notice is when we eat it we add some grated cheese to the bottom so when we serve it the cheese will melt and it will even more delicious :)
