      Love some of their work, but don't think they took into account different sized shrimp, actual temperatures, de-veined vs not, and I think they just carried over the baking soda / sugar technique from another use instead of actually testing it on this. -Do we really want brown shrimp, do they show brown shrimp?

    Excellent recipe leading to a successful and very tasty result -- just as good as, if not better than, a classic shrimp scampi. I recommend the recipe, and will make it again.

    Do you keep the sugar on. I do not like the smell of seafood. What should I clean it with to take that smell out. ?

      tjkooks scrub it with sea salt during prep, then rinse the salt off.

      Really fresh seafood doesn't smell. If it smells you might not want to eat it.

    The sugar caramelizes on the surface of shrimp. The "brown" color you'll see is actually the sugar. As for taste of sweetness, umm...."don't worry, it won't taste sweet."????? It's sugar. It WILL taste sweet. Also, sugar should be a last resort ingredient for food, especially proteins, or seafood, because sugar is not good for your health. Put a little olive oil on your shrimp. That will help brown it.

      While I don't believe that sugar is bad for your health, I do agree to a point, that the shrimp will have an unecessarily sweet taste. However, I don't understand why, if you're adding baking soda to raise the PH (which facilitates browning), would you need to add the sugar?

    I've grilled shrimp plenty of times. I never had any issues browning them and they were not overcooked. I love the science behind food, but all these steps for grilled shrimp is just absurd. Clean em, pat them dry, season, coat with oil, cook on a really high heat, and remove em before they overcook. Clean and simple.

      Sure they could have cooked more things. However, why make it a point in the video if it's not necessary for the *one* dish that is being show?
      FYI: Orthogonal means perpendicular not whatever you think it means.

      The two zone grill is so that you can really concentrate the heat over a larger area and be able to grill more skewers at once. If you stack all your coals in the middle, the heat radiates out, but you only get that super-hot, great for searing, temperature in the very center.
      You'd have to cook your skewers 1 or 2 at a time!

      It's because logically it just doesn't make sense. You most likely shouldn't do all these steps sequentially like the video suggests but rather pick and choose one or two to see what results you prefer. It's literally the opposite of a conspiracy theory.
