Yum!... While working in a grocery store meat/seafood department, I found that 2 (count em, 1,2) of the round skewers prevent the shrimp. kabob, etc from doing the heavy side down roll. Just slide the 2nd one in a little distance away from the first inserted skewer.

Finally made it Leroy and Lewis last weekend. Don't know if you were manning the smoker that day or not, but the beef cheeks are up there with the best bites of bbq I've ever had. Also the pork hash could be a meal by itself. Loved the cauliflower burnt ends too (sounds like sacrilege). Anyway, love the channel and keep it up.
I made these tonight with the jumbo shrimp could just get six of them on the skewer. They were delicious. For the next round I will add a dash of red pepper flake, and finish them with a splash of white wine. Really enjoy your videos love to own a Mini Chudbox someday

I’ve been making them with chaired pablabos stuffed with Mexican melting cheese (directly placed on the coals) then grilling up some flap steak, chicken, or even shrimp to go with some grilled onions, the pablano, cheese, etc onto a flattop griddle to finish then on to some nice corn or flower tortillas… BAM! TACOS!!!!! 💥 🌮 A little charred jalapeño or Serrano goes well too. 👍

I'm a little older than you but that's all right, younger in my mind. I've been fabricating cookers, smoking and cooking food for a long time. We have a very similar personality and I absolutely love watching you do your videos they are awesome. And you definitely need to bring Jess into the videos more she is awesome as well. I hate to be that guy, but you would have enjoyed it much better if you would have went with Gulf shrimp instead of the invasive Asian Tiger shrimp that you used and a species that I wish would have never gotten into our Gulf of Mexico. I've tried them once and even did a video using those monsters, and no way will I eat them again. They can't even come close to our native Gulf shrimp in flavor, but I really like the sauce you came up with, and the shrimp roll idea. Looks great, but I know what those shrimp taste like 😩

I think it's about time someone turned you on to Mantis Shrimp..... Their size will blow your mind. They are nearly the size of a small lobster. Keep an eye out for them.
