Hi Hema ji I returned from south india few days ago , we had a fabulous trip and totally enjoyed southern indian food in Chennai ... Oh yess ...we do lots of vegetables broth for noodle soup . We stored them in our " peti sejuk " [ refrigerator ]... then if we want to have noodle soup meal , just boil the noodles of our choices , use the boiled broth , garnish with spring onions , baked chicken meat or fishballs or tofu ... our simple meal is ready to eat . It has to be slow cooked for the flavors to release into the water. Pressure cooker results in lesser taste. And also there's some loss of nutrients there.
Your broth is a generic recepie version and your attempt needs a good appreciation. Unfortunately you forgot to hint on what to do with the remains of vegetables after filtering the broth. Please throw some light on it so that it can be used else where. Please do not say that you will throw it in the composting bin.
You can add it in your noodles and ramens, soups, make gravy out of it, make pulao. Be creative and think where else you can add broth. It's very very versatile. You can even add it in kadhi, chickpeas, pulses, rasam, sambhar, in any sabzi you make (even turai, and lauki). Try mixing different flavours and make it your way.

You can just grind them and prepare a vegetable soup or you can chop them finely and prepare kofta balls to use in a gravy curry. 😊💖
