I’ve been using this recipe for well over a year and it’s fantastic. I use about 3 lbs of beef shank, skip the rock sugar and only 3 bay leaves. I use about 2L (8 cups) of water for the initial cook of 2 hours and add another 4 cups of water to cook for another 1 hour (the 4 cups of water helps dilute the saltiness). Use the Broad bean paste with chili that has a blue, yellow & red label - it’s tasty. I also use thai chili - 4 pieces. 👍

Well, I'm not Taiwanese, but I was there for 8 months and I also get nostalgic thinking about it (except for earthquakes, those things were nightmares) I think about stuff like milk tea, McDonald's, a lot of people that I've met, the transportation, the friendly people. Just a lot of stuff that I miss about Taiwan ,and so anytime Taiwan is mentioned at any given moment or seen by me, I just get emotional. I'm actually thinking of going back after I graduate college. But beef meat noodles are the best.
I just made this and it’s the BEST beef noodle soup ever! My hubby says it’s better than the restaurants! The only thing I added is minced sour pickle! I’m so happy you shared this recipe! Thankyou!

Rex Zuydo the soldier who made this dish is from Sichuan ,but he made this dish in Taiwan,so beef noodles is "Sichuan flavor",but it's not really count as a Sichuan dish.😅😅 Even in China ,when they want to sell beef noodles,they only say Taiwanese beef noodles(台灣牛肉麵)
凌秋 thanks for ur explanation. but i think that all of us should respect the fact. although sandwich and burger r popular in north America, i never heard Canadian or American claim that sandwich , burger , pizza r local food. so if the beef noodl soup is still alive or popular in Sichuan , we cant deny that beef noodle soup belong to Sichuan

There use to be a street/allyway behind the train station in Taipei, the entire area was beef/tendon noodle soup. I remember as a kid going there with my adopted grandfather. That was a lifetime away when my house in Taipei had no running water, community out houses and you could see the sky in any direction as there were no skyscrapers just grass.

I love beef noodle soup. When I was little my mom would make them but as we got older she just buy it from the restaurant cause it’s easier. Now with my family since we live in the US I end up make my own maybe 3-4 times a year in my pressure cooker.

The experiences are so different. My mother would make indian food for my lunch when she was home from work or if there were leftovers - and even though other kids were white, they would beg to try the food. I think Asian kids growing up in America had a harder time being open about their culture. So glad I didn't live here as a kid

Beef stew takes about 4 hours and we use the bones one. Restaurant style will use that kinda beef. Taiwanese we don't use bay leaves at all.
Can you make this dish with any part of the beef ? I can't find the beef shin in local supermarket here.
