Looks delicious, I think Beef noodle soup is ubiquitous to all Chinese households, what's fascinating is all the variations. My Cantonese Chinese grandma always added radish and carrots. The Peking restaurant of my childhood always had a super strong dark Beef soup base. I like how much tomato you used. Looks refreshing! The ingredients are all in my shop list for the weekend. I’ve tried making this a few times and can’t quite get it right. Some recipes say to add carrots and apples to sweeten the soup broth - any thoughts? Also why not slice the shin meat and sear as well? After having stewed for a few hours. The meat still tastes gamey
