I had a friend named ngoan make this for me when I was sick with the flu. I ate a huge serving of it. Took a hot bath in Epsom salt. Put on my night clothes and got under the blankets and sweat it. The next day I got up and took a shower from all the sweating. 2 Days later I felt 100%. Ladies and gentlemen this soup is the cure to the common cold. I bet it would help covid patients too. Something about the mixture that is just surprisingly beneficial to the body. I never thought I would find this recipe make sure you have plenty greens in it when you eat it. I'm mexican and got addicted to pho in California, but in México is really hard to find pho, only in big cities like Mexico City and Guadalajara... so I had find the way of learning to cook it my self. This video was the answer and my family loved it as well. Now I have to cook pho at least once a month and enough for 2 to 3 days at least. I know you have a video with an update on this recipe but still likes this 6 years old video more. Thank you so much Helen.
I am from Palawan Philippines and there are so many vietnamese refugees there way back long long time ago. They are the ones who introduced this pho to palawan peoples. We call it also beef stew. And it tastes amazingggg!!! People from other side of the Philippines didn’t know this dish. And when they visit Palawan it’s a must try! ❤️❤️❤️❤️

*Thank you so much* My mother-in-law is Chinese; her 50th birthday is today and in Sichuanese culture she must eat a bowl of noodles and a whole egg to symbolise good luck and success , I chose to cook Pho because it's yummy and I plan to use beef cube cuts with soft fat to implement my own style on to it, and I will place a peeled boiled egg in the pho and use some steamed basil as a touch for aesthetics. I stayed up all night to male sure I can make a good pho , it's currently 4am.

I became a pho addict in the 1960s when I was in the Army in Vietnam. When I got back to the USA, there was no place where I could find pho for many years. Now, thank goodness, there are many pho restaurants around. Some are better than others, and I've eaten at a couple of restaurants where it was just awful. Your recipe looks like the best way. steven doan "cam on, co" means thank you to that lady. "cam on, em" is only use for someone who less than 15 years older. "cam on, con" is alright since she is about his daughter age or maybe younger. however, in vietnamese lot of old people call other young ladies "co" since they call on behalf of their son/daugher.

+The American Italiano Lol. "Who can cook Pho better than the Vietnamese?" None! You're right. My experience is to never eat Pho at any Chinese restaurants where they cook Pho the Chinese ways! Their noodle soups taste nothing like the iconic Vietnamese Pho. Even some Chinese restaurants place a large junk of fat on top of every bowl of so-called Pho, which I've never seen before in any bowl of traditional Vietnamese Pho. To avoid eating those unwanted bowls of so-called Pho, stay away from any Pho restaurants having Chinese letters on their facades or on their menus.

+ANGELICA MORRIS Okay, so my first go was fail! A complete bust! I wish I had remembered your advice. I used a pho bo packet I got from an Asian grocer. I still used used the star of annise, clove, onion, coriander seeds, etc. (charred with black removed), but no daikon, fennel (or aniseed). I am mortified! Even adding culantro to my soup pot didn't help. I'll definitely need some coriander root next time. I had to sweeten my bowl with hoison sauce. HOISON SAUCE!!! Oh the shame! I don't want candy soup! I want PHO!!!

Kayla Schregardus I don't know about lbs since I use metric system but I believe I used about 1kg of bones and about 800g of meat in a really big pot. I cooked from morning till evening and added the spices somewhere in the last 3-4 hours. It's really important to "burn" them properly like Helen showed and to let it simmer for a few hours. What totally ruins the flavour is the fat from the meat, but sometimes you can not help it. If it's there it is there. I had "bad" batches of pho a few times, it helps to let it cool down, extract the than hardened fat on top of the soup and reheat.

You obviously don't know Latino moms, they grill peppers, all sorts of peppers to bring out the flavor. But in the mean time while on the grill they create a spiciest air in the house that will make you cray and cough.

Southern Phở has shrimp paste, fish sauce, bean spouts and some other vegetables, the soup has lots of fat. It tastes a lot stronger than traditional northern style, almost like Chinese noodle.

Very yummy! Also, are you sure that piece of meat is 500g (1.1lbs)? It looks much bigger. Also, as another user commented, I found that my broth was disappearing, even with low heat, so I left the lid on toward the end to save it. And lastly, I too found it to be too fatty, even when I diligently skimmed it, but I resolved this by throwing it in the fridge and removing the solidified fat. Love the "Pho" nemonic! P.S. After looking like an gringo at my local Carniceria, I found they sold knuckles and such as "beef soup bones."

How many lbs of bones did you have? And how long total did the spices cook for? Mine tasted so wrong and not so flavorful
Kayla Schregardus I don't know about lbs since I use metric system but I believe I used about 1kg of bones and about 800g of meat in a really big pot. I cooked from morning till evening and added the spices somewhere in the last 3-4 hours. It's really important to "burn" them properly like Helen showed and to let it simmer for a few hours. What totally ruins the flavour is the fat from the meat, but sometimes you can not help it. If it's there it is there.
I had "bad" batches of pho a few times, it helps to let it cool down, extract the than hardened fat on top of the soup and reheat.
for the flavor, probably you didnt add enough fish sauce or add 1 tsp soy sauce.

I love this recipe!! Thank you so much Helen, the smell stays in my house for hours and it is sooo delicious! I only have one question: when do you take the spices (ginger/cardemon/anise/cinnamon) out? At the same time as the beef and the onions or do you keep them in the soup until you serve it?
Doris Vlaar you can remove the spices after 2-3 hours cooking.

You obviously don't know Latino moms, they grill peppers, all sorts of peppers to bring out the flavor. But in the mean time while on the grill they create a spiciest air in the house that will make you cray and cough.

northern Phở is how Phở should be made, hardly find it anywhere in the US

most vietnamese in the US are southerners, so you will only find southern style Phở there.
Thang Nguyen how does it taste? is it such different?
Southern Phở has shrimp paste, fish sauce, bean spouts and some other vegetables, the soup has lots of fat. It tastes a lot stronger than traditional northern style, almost like Chinese noodle.

Very yummy! Also, are you sure that piece of meat is 500g (1.1lbs)? It looks much bigger. Also, as another user commented, I found that my broth was disappearing, even with low heat, so I left the lid on toward the end to save it. And lastly, I too found it to be too fatty, even when I diligently skimmed it, but I resolved this by throwing it in the fridge and removing the solidified fat. Love the "Pho" nemonic!
P.S. After looking like an gringo at my local Carniceria, I found they sold knuckles and such as "beef soup bones."
Andrew Simmons you can add more water to compensate the evaporated amount. For the meat, just use as much as you like :P
