For friends in the US looking for the other tofu taiji used, get the least firm tofu at the store that is one step above the silken level. For example, 2/5 firmness if it has a scale on the packaging; this may just be called "firm... do not get "extra firm" for these dishes if possible. That one is usually vacuum packed and while we only had that one when we went vegan, it is a total disservice to tofu to never try the softer ones THEY ARE SO GOOD!! I think many Americans are changing their understanding about tofu and see it as a delicious ingredient on its own and not just as a meat substitute that’s bland and boring. We also have access to freshly made tofu in urban, culturally diverse areas. We may be late to the beany goodness scene, but we are catching up.
I have made your recipes part of my routine, especially for breakfast. You are appreciated! I’m 70 and breaking habits that originated from oppression in the south when many black Americans depended upon products that were cheap and high in animal fat.❤

It's still not what most asians would regard as tofu but if you marinate it with Maggi or Soy Sauce you get an incredibly tasty block of ... something XD
