Silken tofu is what we may call a "custard" consistency-- think of dishes like flan, or even jello honestly. For friends in the US looking for the other tofu taiji used, get the least firm tofu at the store that is one step above the silken level. For example, 2/5 firmness if it has a scale on the packaging; this may just be called "firm... do not get "extra firm" for these dishes if possible. That one is usually vacuum packed and while we only had that one when we went vegan, it is a total disservice to tofu to never try the softer ones THEY ARE SO GOOD!! Have fun on your tofu journey everyone!
I think many Americans are changing their understanding about tofu and see it as a delicious ingredient on its own and not just as a meat substitute that’s bland and boring. We also have access to freshly made tofu in urban, culturally diverse areas. We may be late to the beany goodness scene, but we are catching up.
Thank you so much! As a vegan I've done some of your recepies with some changes... I love seen this one's and I'm exited to try them!! Love from Ireland
I have made your recipes part of my routine, especially for breakfast. You are appreciated! I’m 70 and breaking habits that originated from oppression in the south when many black Americans depended upon products that were cheap and high in animal fat.❤
The last two look the best to me. I would probably try those two first. Thank you for the tofu recipes ideas. I must say that was a lot of food though. I don't know that I could eat that much
Thanks for sharing this! I always love your videos where you make multiple recipes with one ingredient. Agedashi tofu is one of my favorites so thank you for that! Also, not sure why, but I just really love your intro of you putting on your kimono hehe
You have an amazing way of helping me to understand true fundamentals of Japanese cuisine and the art of eating and giving thanks and being in the moment - Arigatou Taji!
Before that day I was cooking only korean foods - now I find these channel - I like it very much, congratulations! I will try these recipes this weekend, thank you!
Wow 😮 I learned a lot about tofu from this video, and it answered my inner questions. First, you read my mind at the beginning of the video lol creeper 😋 However, in all seriousness, I didn't realize that when I've used tofu in the past, my technique was all wrong, explaining why my dishes would be awful. Since I did it all wrong, I'd given up on tofu and didn't think to ever eat it again. But after this video, I'm going to give it another go. Danke Taiji-san ❤️ Questions: You broke up the tofu in the pan after putting it in the oil; wouldn't it have been better to break it up at the beginning and dry it out in the towel? How are you able to eat so much and stay fit? Do you exercise regularly or intermittent fasting?
@@taijiskitchen It's a dish containing sliced pork, soft tofu, green onions, onions seasoned with shoyu, sugar, mirin. I wonder if this is an Americanized dish? We grew up with this dish served with rice.
If you haven't already, try the smoked tofu from a discounter like Aldi, Penny or Lidl, do not buy the overpriced ones, especially not the ones with stuff like sesame or other marinades. It's still not what most asians would regard as tofu but if you marinate it with Maggi or Soy Sauce you get an incredibly tasty block of ... something XD

Dashi can be made with Kombu seaweed, shitake mushrooms or both, and is 100% vegan. Tuna flakes are optional
