I lived in Japan as a teen, first job was in a Tempura-ya. I later worked in Japanese restaurants for years. Your recipe and technique are very authentic and done well. So many "amateurs" forget to mention the ice-cubes in the water, and/or they overmix it. Icey COLD batter causes the batter to really crisp up in the hot oil. I love that you didnt peal the skins, also quit typical. Tempura does NOT mean seasoning...the origin of the name actually comes from the Latin 'ad tempora cuaresme,' meaning “in the time of Lent.” The Portuguese missionaries/priests taught and requested their Japanese cooks to prepare this "Tempora" meal as they were not allowed to eat meat during Fridays and during Lent. So the original Tempura was in fact a Lenten meal, and always vegetables. ITEDAKEMASU!

In Portugal (present day) the verb Temperar means the action of seasoning something. Also the noun Tempero meaning the savory taste.
I do love your videos. They are concise, easy to follow, and I especially love the factual information regarding ingredients, history of the recipes themselves, preparation pointers, and little-known facts about ingredients. In another video you mentioned that sesame seeds were indigestible unless crushed. I have always toasted and crushed them simply because the aroma of the crushed seeds is so pleasant and my mother has always done it that way. I just didn't know why! Love the tip about the water in the shrimp tails. Never knew that, either - and the tip about loosening the muscles.

I used to cook Tempura for my husband... I read and studied everything I could. It was very challenging to make something that was not of my home culture, but I knew about the ice and need to keep the batter cool. It is difficult to know when I am cooking things properly when I've never had it at a restaurant. I also experimented with various sauces.

Lovely food. We mainly eat these as snacks. And many of us use gram flour. Which makes these taste way better than using plain flour.
