    I lived in Japan as a teen, first job was in a Tempura-ya. I later worked in Japanese restaurants for years. Your recipe and technique are very authentic and done well. So many "amateurs" forget to mention the ice-cubes in the water, and/or they overmix it. Icey COLD batter causes the batter to really crisp up in the hot oil. I love that you didnt peal the skins, also quit typical.
    Tempura does NOT mean seasoning...the origin of the name actually comes from the Latin 'ad tempora cuaresme,' meaning “in the time of Lent.” The Portuguese missionaries/priests taught and requested their Japanese cooks to prepare this "Tempora" meal as they were not allowed to eat meat during Fridays and during Lent.
    So the original Tempura was in fact a Lenten meal, and always vegetables. ITEDAKEMASU!

      Hi Ken, your explanation of the Latin root of the word “tempura “ does have truth to it. Still is was from Portuguese influence that this and other words or their variations are used in Japan. In Portugal (present day) the verb Temperar means the action of seasoning something. Also the noun Tempero meaning the savory taste.

    I do love your videos. They are concise, easy to follow, and I especially love the factual information regarding ingredients, history of the recipes themselves, preparation pointers, and little-known facts about ingredients. In another video you mentioned that sesame seeds were indigestible unless crushed. I have always toasted and crushed them simply because the aroma of the crushed seeds is so pleasant and my mother has always done it that way. I just didn't know why! Love the tip about the water in the shrimp tails. Never knew that, either - and the tip about loosening the muscles.

      Thank you for letting us see the logistics of this, the amounts and how to extend this to have food for the next day! Definitely helpful to get the procedure shown as you just did there. I have the kitchen implements and all but have been a bit intimidated by lack of experience 😅 Keep this going! You already helped me to overcome dread of smell and texture of natto and have me crave it every day. And showing us round your parents' house, you took the same care to explain every day things to people unfamiliar with them to an extent I appreciate a lot!

    Hello Taiji, i just came accross your videos a couple of days back and since then watched a dozen of them in succession..... Your videos are very professionally made.. it really appreciated the kind of home cooking you do all by yourself staying in Germany... The history/background of each recipe you narrate is very interesting... Your hand skills are excellent !! And the most important part i like is you don't waste any ingredients... Your work is neat and clean, and the wholeheartedness and respect for food is really appreciated.... All in all great job and keep going....

    Taji, Thank you so much for your string of interesting, thought provoking, challednging ways to explore different areas of japanese home cooking. I am still recovering from a two year break, related to COVID and social and physical restrictions, in my regular tasting and delighting in Japanese in house and take out meals.So I hooked onto Taji's Kitchen, as a way of learning basic techniques of Japanese home cooking, learning basic pickling techniques and some elementaay dishes. Now I have now learned the correct method for home preparation of tempura mixed fish and vegetables, my ultimate delight in take -out Japanese meals, all thanks to watching a sequence of your delightful, delicious, and informative videos! Arigato gozaimasu!

    Omg … I love and love Tempura . If I could eat Tempura often I would love that … this is what I like since I am a vegetarian/pescatarian … I just don’t eat chicken or any type of meats.

    I love tempura it’s really good, I think in Hawaii a friend took us to a Japanese restaurant and they also used whole green beans dipped in the batter and fried.

    I lived in Japan as a very little girl, we have always cooked Japanese recipes at home, and now I continue on. Love the channel too, subscribed! Also the sound effect - so Japanese!     Hi, I have seen your channel recently and find it very interesting and educational. Loved the video on Japanese table manners and now this one on how to make tempura from scratch and the correct way to cut and prepare the different types of things for frying. You are right about the origin of the word “tempura” and the root Latin word explained by another viewer is also correct . Present day: in Portugal “to season” verb is “temperar”. The noun “tempero” is referring to the taste of something that has been seasoned.

    I used to cook Tempura for my husband... I read and studied everything I could. It was very challenging to make something that was not of my home culture, but I knew about the ice and need to keep the batter cool. It is difficult to know when I am cooking things properly when I've never had it at a restaurant. I also experimented with various sauces.

    I've gotta try the sweet potato 🍠 & the Pumpkin 🎃 Tampura it sounds delicious 😋🤤 I love sweet potato casserole or pumpkin pie 🥧 with lots of extra cloves & cinnamon extra butter 🧈 the crust like a sugar cookie

    Lovely food. We mainly eat these as snacks. And many of us use gram flour. Which makes these taste way better than using plain flour.

    How do you store the leftover tempura for tendon or bento the next day? In the fridge?

      depending on the outside temperature, in the summer def. in the fridge, in the winter possibly in the room.

      in Japan we usually don't peal the potatoes and pumpkin. most veggies we don't peal, when they are eaten cooked.
