Braised cucumbers are so delicious. Try melting some butter and adding bonito flakes and a little miso. Add sliced cucumber sliced into batons, roughly the same shape as udon noodles until softened. Some seaweed flakes and toasted sesame seeds. Add boiled udon noodles that are not over boiled and toss. If you are not vegetarian, a little stir fried minced pork (the bonito flakes are fish flakes FYI - very tasty). A squeeze of citrus and a bit of soy and sesame oil. Umami!!! The cucumbers should be juicy yet a little crunchy and have absorbed all of those flavours but be the star of the dish.
All three look so appealing. I will make them all. In fact, I just purchased cucumbers today, so for sure I will be making these dishes. Thanks as always.

no starch and flour are completely different thing. Starch is a carbohydrate with carbon, hydrogen and oxygen atoms while flour is a powder that we get by grinding raw grains. but since Flour contains a high proportion of starch, you could substitute starch with flour, although may taste a bit floury.
sorry I dont know the name of this kind... I think they are just young cucumbers, similar to what we have in Japan, unlike the overgrown 50 cm cucumbers.

Shichimi (written 七味) means seven flavor, so it is a spice mix of seven kind. we barely use it for preparing but rather as a condiment to change up the flavor at the end. you can use it for almost any recipe, like in these three side dishes. but I dont use it at all, b/c I don't like it as much (since it is quite dominant in flavor) perhaps I didn't grow up with it. Shichimi is used more in the east part of Japan. in our region we use Ichimi (written 一味 = one flavor), which is just regular chilli pepper.

Are you using "Toasted" Sesame oil in your recipes as opposed to unflavored or frying Sesame oil? If you are, I've been told that you don't fry with toasted Sesame oil yet you fried the pork with it. Does it change the toasted sesame flavor unlike pouring it over the finished dish... Just wondering. I just discovered your channel and have subscribed!
hey, thanx for your comment!! its really a preference thing and cost. the reason why many people don't use sesame oil for frying is that through the hight heat, the most of the aroma of the sesame oil will go away and makes very little difference, if you use sesame oil or any other oil. and since sesame oil is usually more expensive, many use sesame oil only at the very end to give the scent.
@@taijiskitchen Thanks Taiji. I usually use Grapeseed oil for frying because of the heat tolerance and the Toasted Sesame Oil to "finish' the dish because of the toasted sesame flavor and impact. @@stevescarcia8951 I usually do similar to that for my own cooking. I used sesame oil for the frying primarily to reduce the amount of ingredients, so that it will be easier to make for the beginners.
