The Master is back! Teach us oh great one.....the bark is beautiful on that brisket-28 plus hours and still right in the temp zone -that is crazy!
Yes indeed, I am back and ready to cook some BBQ. I love that Oakridge BBQ Black Ops rub on brisket. I always get a really nice dark color and it tastes great! I appreciate you watching brother!!! Keep that smoke rollin'!!!
What an AWESOME INTRO brother T-Roy!!! WOW that brisket looked lovely. I would love a bite...
Hey Guga, thanks very much brother!!! The wife and I wrote that intro song. Come on over for a visit sometime and I'll cook you up some fine Texas brisket brother!!! Cheers!!!
I respect how honest you are about your cooks, saying you overcooked to your liking instead of giving some fake praise of how it turned out.
Thanks Alan, I do try to be honest when something doesn't go as I expected. The flat was slightly overcooked, but the point was amazing! I appreciate you watching!
Brother Troy! Welcome back! Missed you big guy. That brisket is the truth right there!! Good stuff! Cheers!
What's up CJ!!!! I missed you guys too!!! Yeah man, that brisket was off the hook goodness! Cheers to ya my friend!
Troy you inspired me to ordered the Arbor Fab charcoal baskets (14.5 & 22.5). They both are Beasts!!!! Love them!!!!! 💯🎉✌🏽
They truly are beasts!!!! I'm so happy you are enjoying them along with your WSM!!! Thanks very much for the support G!!!!!

looked full of flavor to me! Does this mean a Q and A on Thursday is around the horizon?!
Hey T-Roy, glad to see ya back brother! Hope you had a nice break and wow what a video to come back on. That was one of the jiggly briskets I’ve ever seen. Great stuff
I appreciate that Coach!!! I think that was the most jiggly brisket I've ever cooked. It was truly amazing! Glad you enjoyed the video and I appreciate you watching!
Hey Troy! Nice to see you back in action. Hope you enjoyed your time off and got done cleaning the garage. That brisket looked unbelievable and that charcoal basket adds a new element to over night or all day cooks worry free. I’ll have to get some of that Black Ops rub to try. Cheers Troy and welcome back
Thanks Paul, it's great to be back brother. I'm still working on the garage though! LOL I think that basket would be great for folks up North that won't have to refuel their WSM during cold winter nights. Hope you do try some Black Ops rub. When I buy from Oakridge BBQ, I buy one of everything to save on shipping! It's all good!
Welcome Back, Brother....Great Video as always. Cheers from Canada!!
Thanks brother!!! Cheers to ya!!!
Hope you enjoyed the break Troy, good to see you back cooking
Missed all your great videos T-Roy! Glad you are finally back. Brisket looks perfect!
I appreciate the kind words!!! Thanks for watching!
Wow, just wow. I’m a new subscriber and a complete beginner. I’m researching smokers so I can purchase my very first smoker. So here I am thinking to myself that the Weber Smokey Mountain might be a good place to star this journey, when I come across your videos. I’m just hugely impressed with what you’re able to do. Love the videos.
Thanks, glad you are enjoying my channel and I appreciate the support! My first smoker was my WSM and I'm still loving the results I get when using it. Hope you are able to get one so you can make fine BBQ for yourself too!!! Cheers!!
Welcome back Sir! Brisket looks amazing.
Thanks very much CG!!! It's great to be back in action once again and hanging out with all of you fine folks. I appreciate the support!
Glad to see you back, hopefully you enjoyed your break we sure missed the videos.

That looks absolutely lovely !!!! Great video and good to see you on here again.
Thanks Troy. Welcome back.
Thanks Chuck, it's great to be back!
Great vid Troy. Love em all, always entertaining. Brisket looked crazy tender
Hey Shane, that brisket was super tender and juicy brother. Man, it was good!!! I appreciate you watching!
Good to have you back Troy! Great video. I’m gonna check that wsm charcoal basket out.
I think with the new coal basket you had more coals than ever burning so that big ole' slab got done a little sooner than you were expecting, so now you have a new learning curve with your cook times. it'll be interesting to see.
Welcome back, Brother Troy! You have been sorely missed. Awesome cook!
Thanks very much Adam. It's great to be back in action again. I appreciate the support!!!
You do a fine job of smoking Brisket. Keep up the good work!
That's cool. The meat market I go to had Akaushi but I have never spent the money for a brisket from them. The akaushi ground beef and ribeyes I've had are amazing; I can only imagine how good the brisket would be.
Glad to have you back T Roy!!!
What's up JDawg!!!! Thanks for watching brother!
I went N bought myself a WSM after watching all your videos and I absolutely love it ! Thanks for the wonderful tips and videos man! I can’t wait to smoke my first brisket.Your food always looks soooooo god damn good!!!
Very nice!!! I'm glad you are enjoying the WSM! When you buy brisket, get the highest quality you can find. Costco has Prime briskets which have always worked out well for me.
Man, if my wife found out I spent $200 on a brisket then MY ARSE is the thing that would get bbq’ed! It’s much safer to just watch you, T-roy! Awesome vid, keep it up!
Man that looks excellent, Troy.
Very happy to see a new vid from you this morning! Really like the new intro!
Thanks so much! I appreciate the feedback and am glad you enjoyed the video. I appreciate you being patient while I took a much needed vacation.
Welcome back Troy. Hope you and Karen enjoyed the spring break. Good ole swimming pool hot weather is upon us again. That is one heckava brisket before and after. Nice charcoal basket. Chad will get some bitnis from this video. Amazing how long it maintained the 225. Looked fork temder and DELISH. Nice cook. Good to see some T-Roy again. Cheers- Phil
Thank you very much Phil. It is great to be back hanging out with all you guys. Yes, I am ready for a summer of BBQ and pool parties!!! Glad you enjoyed the video. That brisket was truly amazing! Cheers back to ya brother!
Dang T-roy! I woudl have loved to get my grubby little hands on that brisket - I have never had akaushi beef before! - Welcome back to the you tubes brother!
It was some fine eating Jason. I put the leftovers in a chili last night! YUM!!! I appreciate you checking out the video brother! Cheers to ya!
Very nice! Great to see ya back T-Roy!
Hey JJ, thanks very much brother!
Welcome back troy good to see you .great cook too
Thank you very much!!! I appreciate you watching!
I'm at a loss for words... Could be a result of all of this drooling. 😆 It's great havin' ya back at it, T-Roy! Gettin' the Jiggly brisket after a long overnight smoke. Gotta love that.
I do love those jiggly briskets!!! It's great to be back in action again brother Dan!!! Thanks for watching my friend!
Welcome back!! hope you had a good sabbatical! That Brisket looks wonderful!! I'm sure it tastes as good as it looks!! Great bark GREAT Cook!!
Thanks brother!!! It was some mighty fine eating! And congrats on getting above 1000 subs on your channel!!! Keep up the great work!
Welcome Back THE BEARDED WONDER!! Look at that jiggle. Even being over Cooked a little it was still moist. I did one like that on my Barrel Smoker.👍🏼💪🏼🇺🇸
Thanks brother, it was some fine tasting brisket. I can't believe it cooked so quickly!! Most of the Prime and Wagyu I have cooked cook in about 1 hr per pound. This Akaushi brisket cooked even faster than that because of all the marbling. Yeah man, I love that jiggle!!! Thanks for watching MeatHead!!! Cheers!
The Professor Cheers to you. I believe the more marbleization the less time you need to cook, like you just expressed very well.
Good to see you back Troy. That charcoal basket is a nice upgrade to the WSM. Always enjoy your videos.
Thanks very much Steve! I appreciate the support brother! Cheers!
G'day T-Roy! Thanks for another awesome video! Massive fan from Karratha in Western Australia!
Hello Karratha!!!! Glad you enjoyed the video Brock. I appreciate the support and thanks for watching! Cheers mate!
great to have you back Troy, stunning looking brisket, and the beards gonna need its own channel soon 😉
Hey David, thanks very much brother!!! The brisket was off the hook goodness!!!
Outstanding T-Roy!!! Now that's a Brisket!!!
You know it brother!!! It sure was some fine eating!
Hey T-Roy, great to see you back. Hope you enjoyed your time off. We missed you. Loved your new new intro. That was one huge brisket. Really looked fantastic. That new basket works great, going to check him out. Looking forward to your live Q & A. Cheers brotha.
Hey Preston, thanks very much for the love and support brother! It is good to be back. I may not do a chat video for another week or two. I'm working on getting a live feed set up for my chats, so stay tuned! Cheers brother!
So glad your back...
Troy it's great to have you back brother! Lovveee to see you firing up the WSM too man. Great beard by the way!! Thanks brother.
Cheers,
Kent
Thanks Kent, I appreciate all of you guys being patient while I took a vacation. Yeah, I love my WSM and do need to use it more often. Cheers brother!
Nice to see you back on WSM brother!
Yes indeed, I have been neglecting the WSM lately and I'm trying to make up for it! LOL Thanks for watching!
What a great recipe and what a great Beard, Troy! Amazing watching you again
Thanks Eduardo, I appreciate you watching!
Man, it's good to see you again T-Roy! I got use to seeing you weekly, lol. Awesome brisket. I bought a 22" WSM a few months ago & was finally able to do an overnight cook with a brisket I bought at Costco. I was shocked on how long & stable that WSM runs. 🍻
Hey Henry, thanks very much for the continued support!!! I appreciate you being patient while I took a much needed vacation. It sure is good to be back with all of you guys though. I missed y'all!!! Costco has some terrific briskets, so I'm sure yours turned out excellent. And yes, that WSM is a beast!!! I find that as I get older, I do not want to stay up for those all night cooks and the WSM is my "go-to" cooker when that happens. You get almost the same flavor as you do from an offset and don't have to tend to the fire all night. I appreciate you watching and thanks again for the support my friend! Cheers!!!
Welcome back. Great cook as usual.
Hey David, thank you very much!!!
Good to see you back at it T-Roy.
"Probin' the jiggly meats..." LOL! 😂
Sorry brother, just couldn't resist. Another excellent cook. Cheers.
You know I do love some jiggly meat!!! LOL Cheers brother!
So glad you're back!!
I appreciate the love!!! Thank you very much!
Welcome back brother from your well deserved vacation. That brisket looked fantastic. Keep up the great work brother, cheers to ya
I appreciate that Ronald. The brisket was killer brother!!! Cheers back to ya!
Great video!, pleased to have you back.
Thanks Nigel and I appreciate the love brother!!! It's great to be back!
Welcome back T-roy man that brisket looks fantastic you got me planning on doing a brisket now
Go for it!! Brisket is some fine eating!
T-Roy....this is a great video and awesome recipe. Figuring I’m going to need to add a smoker and charcoal/wood grill to the arsenal....to compliment my gas grill and Sous Vide.
Thanks very much! I do find it very helpful to have different options of cookers and smokers. If you are really wanting to get into a charcoal grill or smoker, I would suggest you get the Weber Kettle or Weber Smokey Mountain. They are fairly cheap and make some fine tasting food!
Glad to see you back!
Thanks Dan, it's great to be back brother!!!! Cheers!!
Really enjoy your channel. I’m about to start my own BBQ Channel just cause I Love BBQ & Learning. Hoping to share & learn along the way! Thanks for the Inspiration!! Parker from La Jolla, Ca
Thanks Parker, I'm glad I could help inspire you to get a channel going. BBQ is fun!!! I appreciate you being willing to spread the love of BBQ!
Hola T-TROY!! Welcome back brother, as everyone else has stated! Way to recharge your batteries, wonderful cook, amazing new tools to BBQ with! Looked super MEATY!!! Looking forward to a whole summer of awesome videos brother!!
Hey Red, I appreciate the kind words brother!!! It is great to be back with all of you guys cooking up some fine eating grub. Cheers to ya brother!
Good lord that brisket looked delicious job well done Troy
Thanks Jay, it was some mighty fine eating brother!!! I appreciate you watching!
Almost 100k T-roy! Congratulations mate
Thanks Adam, I appreciate the support! I wouldn't be where I am without fine folks like yourself, so it is much appreciated!! Cheers mate!
That charcoal basket is brilliant! I just ordered one!
Cheers!
Cool, I know you are going to be thrilled at how efficient it works. Plus, on cold winter days/nights, you won't have to go out to refuel it for a long cook. I'm loving mine!!! Thanks for watching!!
T-ROY COOKS That brisket looked fantastic. Curious, how many times did you have to fill the water pan over the 16 hours?
Never seen a flat that looked so fatty and wonderful. No wonder it jiggled like it did. Man that looks incredible. Hard to beat the Oakridge black ops. Good stuff. Glad you're back.
Hey brother, that brisket was almost falling apart when I took it off the WSM. The flat and point were already separating!!! I'd say most of the fat rendered out perfectly! Thanks for watching brother!
Good to have you back Troy! Dang big brisket.
Thanks Oren, it's good to be back. This is the largest brisket that I've ever cooked and man was it good!!! I appreciate you watching!!
Am I correct? Seems you had a water pan - bubbling under the meat.
Nicely done Troy! That brisket looks amazing!!!
Hey Scott, thanks much brother!!!
Well looky here! T-Roy is back on the Tube! Welcome back Brother!
How about that!!! I'm back in action again. And it's sure good to be back with all of you guys!!! I appreciate the support!
Great video Troy ! Love the new music and I’m glad your back. Cheers brother !
Hey Rusty, thanks very much for the feedback on the new music and I appreciate your support. Cheers back to ya brother!
Glad to see you back!
I stress over wrecking a $5.99 package of Johnsonville cheddar Brats, can't imagine having a $200 brisket. For me the stress would be unbelievable! Great job, it looked incredibly awesome, and that was one huge slab!
Thanks, it's great to be back with all you guys again. And I try not to stress over too much. Like I always say, cooking is fun!!! I appreciate you watching brother!
Wow, what a brisket! Welcome back T-Roy. By coincidence i had just watched your last WSM cook of brisket from about a year ago as I’ve been hankering to have another go myself on my WSM. You looked like you really enjoyed doing the video as well which is great. Knockout performance with that charcoal rig 👌👍
Thanks Jason, it's great to be back brother! I always have fun when I'm cooking up some BBQ and that brisket was out of bounds!!! Super tender and juicy! Thanks for watching!!
WooHoo, glad you are back on the air!
Thanks Mark, I missed you guys!!
Troy, I've been a fan of your channel ever since I found your Smokey Mountain jerky video a while back. I just want to say, that's one epic beard you grew, brother! Looks great! Maybe you can talk how you groom that thing? 😁
Hey Igal, I appreciate the support!!! It's getting hot here in Texas, so I trimmed my beard. I may grow it back out again this Fall.
Happy to see you back there bud, now we can see some real cookin....Hope you had a restful and pleasant vacation...
What's up my brother Jay Bird? I did have a wonderful relaxing vacation, but it's good to be back with my brothers again. What kind of real cookin' do you wanna see? Cheers brother!
Fabulous looking brisket, Troy ! That monster charcoal basket seemed like a good mate for that Fred Flintstone size piece of meat ! LOL I love that Black Ops brisket rub, it's one of my favorites....getting ready to do some ribs with their Secret Weapon....Oak Ridge BBQ does indeed have some fine products. Cheers, my friend !!
Thanks Stu, the brisket was amazing!!! I love all the the Oakridge BBQ rubs and I know your ribs are going to be fantastic with that Secret Weapon rub! Cheers to ya brother!!
Great to see you back at it bro. I hope you you had an awesome time away. Looks good to me. Unbelievable bark on it. I would take it any day.
Wish I could have shared it with ya brother!!! It was some mighty fine eating! Cheers!!!
Great video !!! That brisket looked awesome !! Welcome back T-Roy
Thank you very much!
Welcome back, great looking brisket. Love the suns halo effect, just go to show you are the BBQ God.
Thanks Bob, it's great to be back with all of you guys again. Yeah, I liked that halo effect also!!! Looked really cool! I appreciate you watching brother!!! Cheers!!!
That looks amazing troy amazing video :)
Great to see your latest vid , and will ask this again since I didn’t get an answer last time . Have your ever tried TexJoy seasonings they are a small company down here in SETX if not you should especially the steak seasoning it works on almost anything, makes a great bark on brisket, work excellent on steak and even as a French fry seasoning. Glad to see your back on the pits hope you enjoyed your vacation!
Hey brother, I actually have some TexJoy products in my pantry and use them often. Their seafood seasoning is really good too!!! I think they are out of Beaumont. I think I showed their product in my video making Pork Tasso. I did have a great vacation, but it's nice being back hanging out with all you guys. I appreciate the support!! Cheers!!!
Glad to see you back. Hope you're enjoying your break. That basket did an amazing job. I'd be too scared to cook one of those briskets, I need to practice on some cheaper ones, which are hard to find anymore😂It looked so nice and juicy to me, I'd be happy with it, for sure. That pasta salad looked good too. Love the intro!! Thanks for sharing😃
Howdy Christy, thanks for the feedback on the intro. Yes, I had a great vacation and the only thing that would have made it better would have been meeting you my friend. Brisket does take a lot of practice to get right, but it's fun anytime I get to fire up my smokers. Cheers to ya!!!
Troy is back! Hey, I was checking out your chimney, it's got a fancy bit on the bottom there! Maybe you could show it to us in the next Q&A! chat! Awesome piece of meat! Thanks TRoy!
Hey Sal, I found that chimney on Amazon. It's called the Chimney of Insanity and I will try to do a review of it soon. I appreciate you watching brother!!! Rock On!!
Nice video, Troy for being a little over cooked as you say, it looks so juicy and tender and I bet wonderful to eat. That brisket looked absolutely wonderful. Great video along with all of the tips and information you provide to help those of us who need to learn how to bbq and what to use to get the best food for our family and friends.
Hey Michael, it was a fabulous brisket. I used the leftovers in some chili last night. Man oh man, was that some fine eating!!! BTW, did you change my promo code from Troy20 to Troy10? I'm getting questions from my fans asking if the code had changed. I remember you saying you were going to change it, but I didn't know if you did or not yet? Thanks brother!
Troy, good to see you back at it, buddy. The brisket may have been a tick overcooked, but it looked like it would eat just fine to me!! I'm also impressed with that charcoal basket. I'm gonna have to look into gettin' one of those. As always, nicely done! Cheers!
Hey Craig, thanks very much my friend!!! The first few slices from the flat were slightly overcooked, but the rest of the brisket was perfect! I'm making some chili tonight with the leftovers. YUM!!! Thanks for watching and Cheers back to ya!
Video on the chili, by chance? Lol.
Possibly, if I have the time. I'm testing my live feeds and that takes a lot of time, so we'll see....
Welcome back T-Roy! That brisket looked amazing.
Hey Jeremy, thank you very much brother!! It's great to be back!!!
Webber puts out some amazing products! The basket is awesome! Brisket looked killer even if it was over cooked. Love your channel and keep up the BBQ’n!
Yeah, I love all of the Weber products and that basket is amazing! I appreciate you watching and thanks for the support!!! Cheers!!
That looks super good. Welcome back from vacation hope you enjoyed it. Cheers brother
Thanks brother, it is great to be back!!! Cheers back to ya!
Awesome I’ve been watching you for awhile and gotta say Love the Brisket! The WSM is on my next grill list. Tennessee boy loves to grill thanks for sharing.
Hey Tom, I appreciate the support brother! The WSM was my 1st smoker and I'm still loving the food I pull off of it. Hope you are able to get a WSM for yourself soon!!! Enjoy your summer!
Here I am worried about a 50 dollar choice brisket, and you bust out this piece of heaven. My mouth was watering the entire time lol!
Glad you enjoyed the video brother. I'm just lucky I got up early that morning and checked on the brisket instead of letting it cook the normal length of time. This was some fine eating brisket!!! Thanks for watching brother!
T-Roy, the fat is the best part!! My daddy and I fought over it (as well as bone marrow) when I was a kiddo! Great job!
I know, fat from Wagyu is some rich buttery goodness, but I'm just not a huge fan of the fat. I'll save ya some next time!! Thanks for watching!
34 HOURS!?!?!? Wow. That is a must have WSM mod. Awesome. Should have done a dedicated video just for that basket. Super impressed.
Yeah, that basket is amazing!!! I probably should have done a video just on the basket, but I didn't want to tease everyone with a brisket cook without showing the brisket! LOL Thanks for watching!
Troy, this is one great video. You look re-energized and super happy and the cook is a classic! (although very pricey)
Cheers brother!
Hey Mac, I appreciate the kind words brother!!! And thanks for watching! Cheers to ya!
Most excellent to see you at the pit again, Troy!
I appreciate that brother!!! Cheers to ya!
Jesus that looks good!!...we need taste-a-vision. Great job T Roy
I agree, taste-o-vision and smell-o-vision!!! Thanks for watching brother!
Welcome back T-Roy, we've been missing you my friend. The brisket looked tender and juicy and so what if it's a tad overcooked, it all goes down the same way. I bet it was delicious. It's amazing that your WSM kept on cooking even after 24 hours straight, very cool. Cheers!
Hey William, thank you very much. It is good to be back cooking again! Yes indeed, that was some mighty fine eating brisket! Thanks for watching my friend!!! Cheers back to ya!
Hey brother Troy awesome looking brisket! Might have to check this out myself!
Hey brother Rich!!! That brisket was amazing brother!!!
Wow ... watching you cut into that juicy brisket had my tongue slapping my eyebrows ! 😋 Nice job ! 👏🏻
I hear ya!!! It was super juicy. The point was just about perfectly cooked, but the flat was overcooked. It was still some mighty fine eating though! I appreciate you watching!
