    “Wide angle lens” , lol that had me rollin! Looks delicious! One day i’ll try a prime brisket but for now i’ll stick to my $2 a lb briskets as i practice. If i can make that taste good, that prime will be that much better. Keep it up!

      T-ROY COOKS I'm from the Netherlands. I've owned a WSM for 10 years buts it's always great to see others cook their way, especially brisket, which is still a imposing piece of meat to prepare. (with local prices you REALLY don't want to spoil it).

    That brisket looked GOOD! I'll have to try this technique because I always have trouble keeping my WSM running at temp for the 12 plus hours you usually need for this cook. Plus it was fun seeing the three of you collaborating. I wish I lived closer to Texas!

      I hope you do give it a try!!! My WSM performed great with the lump charcoal. It was actually hard to keep it down to 275-300 after I wrapped the brisket. I think I had to close down 1 vent and barely crack the other 2 bottom vents to maintain temps. Yeah, we always have a great time when I get other UA-camrs over for an all day cook. I cut out a lot of the video to concentrate on the brisket cook, but James did pork and beef ribs. And Johnny did baked beans and potato salad! It was a great day!!!       You can do it Tim!!! Just don't freak out when the stall happens. Let it happen and just keep the temps the same. It will be fantastic as long as you have a nice grade of brisket!

    This info on brisket is a big help. I'll be jumpin on one soon. I keep sayin that but this is the second one I've seen you do in the WSM and I graduated from copying school.     T-Roy, I finally tried this method yesterday. Passed the bend and pull test. I think I liked the flavor more than usual, possibly because there is no water pan and when the grease hits the coals it produces great flavor. Thanks for the video!     I not only use the au-jus for the flat, I mix it 50/50 with my bbq sauce and mix in with the burnt ends. It cuts down on the over powering taste of the sauce and lets the savoryness of the natureall jiuce of the meat and spices that fall off during the cook.

    Awesome vid T-Roy. That brisket turned out fantastic and I wish I had smell-a-vison. It looked tender and juicy especially for a fast cook. I like the idea of putting the wood chunks under the lump charcoal for fast and hot cooks. See, just another reason I'd like to purchase a WSM 22". Cheers to the "Three Amigo's" and keep on smoking my friend!

      Hey William, I hope you are able to get a WSM brother!!! It is my 2nd favorite smoker, right behind an offset!!! The flavor of the meat is very close to an offset! And yes, this brisket was extraordinary, but it was USDA Prime. I wouldn't try this method with a Select or Choice grade brisket.

      I've been smoking on my OK Joes this summer but have yet to do a full packer brisket. My Weber Kettle with the SNS works great for Winter smokes when my offset is stored. However, having a WSM would augment longer "set it and forget it" cooks in the Winter. Rock on T-Roy and Cheers to ya my friend!

      I hope you do give it a try Rus!!! You honestly cannot tell the difference in flavor, tenderness, or juiciness from a low & slow cook. It's good stuff, plus the wife likes having the brisket done quickly so she can eat at a reasonable hour. LOL Thanks for watching brother!!! Cheers to ya!!!

    Hey Troy great videos I find myself watching them then going back and watching again for reference. Just thought I’d offer to contribute to the channel since I enjoy it so much. Next to bqq my second passion is cutlery if you need any of your knives you use for the channel sharpened hit me up I have a professional sharping set up. I’ve figured out a few tricks to get through the bark with out tearing any loose with my sharping technique.

    Hey T-Roy. Great video as always. It’s hard to buy a brisket over here in the UK which has the point and flat together. So not always easy to make burnt ends like those gorgeous looking nuggets.

    After watching this video and see you cook a brisket that big in 5 hours or less, I'm going to give this a try on the 26 inch Weber kettle using the SlowN' Sear XL. I think it's doable. WoW, that brisket you guys made looked incredible.
