    T-ROY!! Dude, I was on the edge of my seat LITERALLY SWEATING during the taste test because I KNOW HOW GOOD UNCLE STEVES IS!!!! I jumped out of my seat when you called the Mad Cow! Honestly, I could eat any of those three any day of the week!! I so happy you both loved the rub! Cheers buddy 🍻

      Hey Jabin, that was some excellent rub brother! Uncle Steve's was mighty fine, but your rub had that little extra heat and sour flavor that we both loved on the ribs. I actually gave my bottle to my pool guy, so I need to order another bottle from ya! I appreciate you sending me some to try out. My pool guy was so happy he got here just at the time I was about to do the taste test on camera and I was thrilled he agreed to be on camera for the taste test just to give people an honest opinion on the rubs.     Do grilled brisket tacos (the best)
    1.) Slice raw brisket thin
    2.) Season with season all or lawrys
    3.) Grill on high heat (watch for flare up's because of high fat content)
    4.) Using a clever chop meat (because of toughness)
    5.) Serve on grilled corn tortilla (chopped onion, cilantro, lime, and salsa opcional)
    Creamy green salsa (most people think it has avocado but its a lie)
    1.) Grill 5 jalapenos 2 serranos 2 cloves of garlic and a 1/4 onion
    2.) Once charred blend everything together
    3.) Crucial step slowly drizzle canola oil while blending to emulsify (if oil seperates stop and remove excess oil and reblend)
    4.) Add salt to taste (even though it has a lot of peppers it is not a very spicy salsa. Really creamy in texture)

    I love that charcoal basket.. the only issue I have with it is it snags up on the pins of the vents. I have the 18" version.

    I got a Weber Smokey Mountain for my 40th birthday 10 years ago and used is only a couple of times. Your videos have reignited my interest and I’ve already been to our local Costco and bought pork ribs and beef ribs.
    Your videos are so easy to follow and I can’t wait to start smokin’.

    Keep in mind that the Postal BBQ website is in CANADIAN dollars. I saw that my total was $27 and freaked out. It’s actually $22 in US dollars. Not quite so bad.

      That’s the advantage of ordering from the USA. I should try making it more noticeable that it’s in Canadian.

      @@PostalBarbecue Hey Jabin. I was initially turned off by the total, until I realized the difference in currency makes it a fair price in USD. I’m hoping that my comment will help other US customers in the meantime. Regardless, I ended up ordering 3 of the Mad Cow. EVERYTHING T-Roy has recommended has been spot on, so I trust him on this one. Thanks for supporting our community.

    Man, I love watching the master at work!!! I have never done short ribs but I sure love them. That will have to be one of the next things I try. I think my next purchase will have to be a WSM. I ordered some of Jabin's Mad Cow, so that is what I will be using on mine. Those ribs look DELICIOUS!!!

    at a 110.00 bucks for 3 ribs they better have great marbling ..good looking ribs T-roy i got my first 18 wsm in 1981 still use it today. also got a new 22.5 wsm them thing allways hold temp good and for a very long time. even in 34 below weather

    Didn't clean your grates from last cook? Cold water in the pan? Raw meat on a beautiful wood cutting board. Maybe I will look for a beef rib recipe elsewhere

    I have a question.. anyone who knows the answer please comment 1st time smoking (meat that is..) 🙂
    5lb boneless prime rib,
    14" smokey mountain,
    Original temperature gauge,
    Couldn't get it past 200,
    Realize the top vent was closed 😂
    Started cooking 2pm at 200,
    Opened vent at 330pm temp up to 225 at 345pm
    Will I be ok or should I toss it and try again...
    How long do you think I should cook it for medium?
    Please help! LOL I'm learning...

    I haven't used my offset since I got my wsm 22 last year for 100 bucks. I don't know why people even use fans on it because it holds temps so good. You are the reason I got one 👍👍👍👍👍

      Same here, I think the fan fad is bad info. Glad you got a 22 WSM! It's the closest in flavor to a true stick burner and you don't have to tend to the fire every hour! Love my WSM!!! Cheers brother!!!

    Great video, your content never gets old. I have an 18” WSM and a RecTec 700 pellet grill. Bored with the pellet grill. Retired my 18” WSM till today. Kinda small for brisket and spare ribs. Thinking of buying a 22” WSM or the Primos XL. Big price difference. Looking for you advice 22.5 WSM or Primos XL. Looking forward to your thoughts. Thanks

I mean do you order it frozen online or get it locally? I can't seem to find good meat locally, or maybe I am just looking in the wrong places. I need some guidance on where to buy the best meat.     Looks delicious T-Roy. It was your videos that lead me to purchase the 22.5 WSM, and I can say without doubt it was the right choice. I continue to be surprised by the great food I make on it. And you’re right about those temps. I did my first overnight cook on it a few weeks back, I was only up once in the night to adjust the vents! Take care brother!

    Hi T-Roy, I’m from Northern Ireland and I’m looking to get my first smoker. I’ve been strongly considering the WSM 18 but I’ve recently seen another smoker called ProQ Frontier which looks similar but comes with a rib hanger in the lid and also the cooking chamber can be split in two parts which I suppose could be good for fuel economy for smaller cooks. Do you know anything about these smokers and if they are as good quality as the WSM? I like its features a lot and it’s a bit cheaper over here, but if the WSM is the better quality and more reliable smoker then I think that’s the one to go for. Can’t wait to use all the tips from your videos.

    T-ROY i’ve had my WSM for 3 years and use it maybe ~8 times a year. I cannot get the temp to stay down. I’ll do minion method charcoal, barely crack the vents (or even close 1 fully), and my thermometer can’t seem to go below 275-300. If i close 2 vents all the way, it has snuffed my coals once, so i’m not sure if you have other suggestions

    Hey Troy I have a question as a new WSM owner. I have the 22.5 and love it. My question is I did a pork butt on it and try to maintain a low and slow cook on it in the smoke range listed on the gauge from the factory. However the grill grate was reading 270°F and rose to 300°F at the end of the cook. The charcoal that was used was B and B competition briquettes. I put a whole bag in and performed the minion method to cook the butt. Also the bottom vents were closed to maintain the temperature. I'm just curious if I should use less charcoal to maintain temperature or is it the charcoal that is just burning differently then Kingsford Blue as the B and B briquettes are much larger. Maybe you can do a video comparison with one of your BBQ Brothers.

    what does the water pan do inside the smoker. ive never understood but they all have it? it just adds moisture? T_Roy plz advise a big fan lol

      Yes, it keeps moisture in the cooker.

      It does keep moisture inside the cooker which helps promote a good bark, but it also is a heat sink which stabilizes the heat and helps maintain temps. It also provides for indirect cooking in the WSM. I appreciate you watching Austin! Cheers brother!

    Great to see you doing videos again and more of. Have you tried the beef tallow wrap(Aaron Franklin secret)brisket that Mad Scientist bbq didn't (Jeremy Yoder). HARRY Soo has several different tests on it also. Hope you Karen and your whole family are doing well(including your dogs). Love your brother Moonshines youtube channel also!

    T-Roy!!!! Man it’s been a while. Since I last messaged you I have (according to the Mrs) certainly moved up the cooking ladder. So have you notices the spices we buy are always the same ole ingredients, salt, pepper, garlic.

      I'm happy to hear you are getting better at your cooking skills. That makes me proud and it's the reason I make videos. I enjoy teaching others how to up their game, but I still make mistakes myself. Each piece of meat is different, so it's never the same cook time after time when it comes to BBQ. Yeah, most rubs do have the same ingredients, but they each have different amounts of those ingredients which gives them slightly different flavors.

The mods like the stainless steel door and things from Arbor Fab have really improved my WSM. I wish I would have known you when I lived near Austin.

    Great job! Love your videos. Actually making one of your jerky recipes as I type this. I heard you mention you like tiger sauce. Do you think a tiger sauce/dr. pepper marinade would work for jerky? If so, I'd love to see you come up with a full recipe and possibly a video to go along with it. Keep up the amazing work!
