Ceviche is great in the summer. I like cilantro in mine. (thats a small knife?) The acids in the lime cooks the fish through so no worries about parasites. next time add some shrimp and squid is awsome.

Seeing how Jocelyn used the little knife, I'm not surprised that Taku didn't trust her with the big knives-- she's not bad, but since she's not using the "blade grip/pinch grip," there's a bigger chance that she could lose control of the knife during slicing (watch the other videos of Taku filleting and cutting stuff for an idea of the "blade grip/pinch grip"). You see her using a partial pinch-grip later after initially slicing the red onion, tomatoes, and serrano (though not the avocados), but it looks like she's a little uncomfortable holding the blade part. Also, not curling fingers into "cat's paw," another safety thing that could result in an accidental cut coupled with the handle-grip. That being said, she's a lot farther along than most amateur and home cooks. And the ceviche looks bloody delicious.

I’m from the Bay Area myself but I’ve lived in SoCal for about 5 years, long enough to try a legit red snapper ceviche made by a friend’s mom. SoCal made me respect Mexican food. It’d really benefit both of you to have Taku make the Japanese dishes and Jocelyn make the Mexican dishes, and have both of you compare similarities/differences between the two styles. Coastal Mexican food doesn’t get much love as it should :/ That aside, I am really looking forward to seeing the bright future of this channel. Can never go wrong with the two of you, Daniel, and Matts. :)
