Reach new heights, I have been following Robert for more than a 2 years and guga foods, maybe 6 months so its good to see them come together.
I use mayo when I grill tuna steaks & marlon steaks. I season with salt, pepper, paprika, cayenne, & squeezed lemon before taking off the grill. Try it if you haven’t.

GUGA, I saw the Rob Arrington version of your trip. His coconut/pineapple/coconut rum/glaze was fabulous. I then sought out Your Version. I'm happy I did. I watched both earlier this morning. Mid Morning, I was able to go to my Butcher/Fishmonger. I look behind the counter and saw him 'steaking' a loin of pork. They had some very fresh Sole, so I asked for 2 pounds. On a whim....I said, "you folks have any swordfish?" Butcher advised he was cutting up a loin when I asked. The pork loin wasn't, it was a 2 foot long piece of swordfish he was cutting into steaks. Bear with me.... I'd watched your and Rob's videos (each ending with cooking with Swordfish) within minutes of each other. I then drove down my hill to my Market, Summit Store in Los Gatos. OF COURSE they had fresh Swordfish. I was beyond excited to pay $40.00 for a chunk of steaks for 4............. tldr; I used both Guga's and Rob's methods. My mouth was watering after watching the videos in the morning, then just happening to find fresh swordfish being cut......... It was a sign from the cooking gods. I picked up a bag of Mesquite charcoal, (lump) and am just now getting down to business with the lighting of the grill, making a coconut creame, pineapple, shallot, ginger reduction...... Serving the Swordfish with braised Salinas asparagus in reduced chicken stock, along with the Swordfish. I'll doll it up a bit but wanted to say Guga........... YOU THE MAN ! Love to you and yours. (So many of whom I met on Rob Arrington's video) Love You, Love Your Channel, Subscribed, (for a few years) I ring the damn bell for anything and everything............. Thank you for putting the effort into putting this out. I'm a guy in Kalifornia, in Santa Cruz, who happened to see Rob's video, then Yours.............Went out, got the proper ingredients...........and grilled the best Damn Swordfish I've ever had. Thanks to Rob I found you and have done some of your challenges. You are correct about the queen and the king. I love your show but this is so cool to see the collaborations.
I usually put the microwaves power to a 5 or 6 at about 5 minutes. Heats up perfectly doesn't cook the steak and always tasty/juicy. Just the way it was cooked before being cooled and heated up.
Use the auto reheat setting. You can also lower the power setting on some models. Do 30 seconds at a time and watch for the color change. If nothing else, slice thin and put in a salad at room temperature.
guga 101 days later: "SO TODAY, WE DRY AGED ANGEL, AND WE ARE GOING TO BE CUTTING INTO HIM AND SEEING HOW WELL WE DID." at the end: "if theres any other friends you would like to see us dry age, let us know in the comments below!"
The coals Guga uses is lump “hardwood” charcoal. It actually wood he is cooking with so his comment was appropriate. Also Angel looks to lean to taste good right now. Maybe when he plumps up a bit more. 😜

Guga’s channel is just amazing, this guy inspired me to cook and I’ve been following him since then.
I have a challenge: cook a steak and then refrigerate it, then try to warm it back up using a microwave without ruining its quality.

Steak in bag. Microwave water till it reaches 131deg. Bag of steak in water till warm. Serve.
