Sometimes, you just want a tasty, moist, juicy meaty bite that gushes flavour with every chew and bean burgers don't cut it. Tomatoes are naturally high in glutamates which enhance flavour so it's perfect for this grillable vegan burger recipe. Is it the best vegan burger ever? I think so. It doesn't taste like meat; it tastes like savory aromatic mushroomy goodness! Try it and let me know your opinion!
You can make them big and thick for a pub-style burger. Or make them thinner and smaller so you can stack them in fast food-style burgers. The burger patties are meant to be juicy canvases for your burger cravings. So add your favourite sauces or burger seasonings and fillings.
In this video, I share two ways I love these burgers: a great big juicy vegan cheeseburger and a vegan big mac as close to the original as I could get it. Luckily, vegan mac sauce is easy to make since the only non-vegan ingredient to swap out is the mayo.

I was too lazy to open up a can of beets so I just use the beet juice that I drink everyday for my blood pressure and I didn't have any more mushroom powder and didn't want to run to the store to get any dehydrated mushrooms so I just cut up some regular mushrooms and put in there I added a little onion powder and garlic powder to mine and oh my gosh this is so good and so juicy. Joe K: I’ve made a similar recipe to this. I’ve sliced the seitan into slices, fried it in oil and caramelized it with Bullseye BBQ sauce, and my husband says it tastes like pork rib meat. It’s super juicy and has a chewy meat feel on the teeth. After I made that for him, he said that it’s pointless to eat meat because you don’t miss it. LOL!

I must say that I’m one vegetarian who has had a serious aversion to seitan. I’ve never enjoyed the texture. BUT I saw this and it looked delicious. I made this at home and oh my God...it’s sooooo good!

Perhaps it is because Seitan tastes very ... floury.
The Balsamic vinigar helps remove that clingy taste, so try adding it into other Seitan recipes.
I may try it. I too have not liked the spongey texture of seitan.
I used to not like seitan. You just have to kneed and knead and knead... And then knead some more.

Oh. My. God. This veggie burger has solved all my cravings for meat. Period. It tasted and felt like a burger. I've been a little eh about seitan but you saved it for me. This is divine.
Use a pasta machine to roll out your burgers. And Better than Bouillon has a vegetarian beef base that is delicious.

F.A.Q.'s
1. *How to freeze?*
Freeze the burgers in broth in a freezer safe container/bag. You just need enough broth to fully saturate and cover the burgers. It should stay good for 2 months but eating sooner rather than later is preferable since flavours can dull over long lengths of time.
2. *Is there a sub for gluten?*
No, sorry.
3. *Is there a sub for mushrooms?*
The mushrooms soak up some liquid and add a lot of flavour. You can sub with other glutamate-bombs like miso paste or dark soy sauce. Avoid adding too much salt though (since the mushrooms have none). Also, you'll likely need a little more flour if you use a liquid to replace the mushrooms. You could get creative with something like caramelized onions...maybe. There really are no rules!
4. *Does it taste like beef?*
NO! This juicy burger tastes savory and delicious with its flavour coming from plant ingredients. It tastes like vegetable broth, mushrooms, and is enhanced with tomato and slight acidity from vinegar.

Hi Mary ...thx for the tips on how to store the burgers I made too many of your burgers it was so good lol I had 4 left.
I packed 2 per sandwich storage bags filled with the broth. Sorry I couldn’t find freezer sandwich bags but anyways I then placed those bags into a quart freezer bag for better protection.
But yea I prefer to have the burgers separate like that to make it easy to just take out the amount of burgers you want. Pretty hard to separate a frozen burger that’s on top of another frozen burger. And not good thawing out burgers you not going to eat just to get the amount you are going to eat.

The balsamic vinegar makes a huge difference in the VWG flavor. I added a couple extra seasonings to my preference, but your recipe is truly a FIVE STAR RECIPE!!!! I'm utterly dumbfounded!!!! Wow, Mary! That look so awesome but i can’t have it. I’m on whole food plant based diet to keep my cancer away. Just don’t mind me sharing it w/ my vegan & vegetarian friends who still eat processed food. I just found that omitting oil, eating minimum fat, salt & sugar help me w/ my pain. I feel so much better after throwing out all dairy out of my life. Your videos help me to get my kids to eat less meat & dairy. Please do share the vegan cheddar recipe so i can use it for my kids and watch them disappear when i turn my back 🤣🤣🤣

This reminds me a bit of the RFD Burger recipe in Ann Gentry’s Real Food Daily cookbook. It has vital wheat gluten and beets in it, but tempeh also.

I followed this recipe cooking instructions to a tee and it was absolutely delicious! I did not have porcini mushrooms but I had (Trader Joe's Mushroom & Company -Multi Purpose Umami Seasoning Blend) and used a can of tomatoes sauce. I would make the burgers restaurant style next time because the fast food thin style was a little to thin for me. In flavor I prefer Mary's Recipe over the Beyond Burger. I have been following Mary's test kitchen for over 2 years ever since I became vegan and her videos have made my Vegan lifestyle not miss any old dishes. This was my second time trying, when I was a newbie to vegan cooking I had tried this recipe and it came out bad due to me cooking the vital wheat gluten on high making it rubbery. Now the second time I have tried this recipe my family has been mind blown. I am sticking to this recipe and not planning on buying any store bought vegan burgers!!

Do you have any idea how I can make chickpea burgers/falafel keep their shape and not be so mushy/soft?
As far as taste goes, falafel/chickpea patties are my favourite, but I can't manage to make them stay together. I know it's a bit off-topic, but all the veggie burger patties I've tried are mushy (I don't have access to wheat gluten flour).
Even when I ate meat burgers, the thing that I liked about them most wasn't the pattie as much as everything else (the salad, tomatoes, ketchup, mayo, mustard, pickles), the pattie was there just for texture, for something to be chewy.
And I can't, for the life of me, find a way to make a veggie pattie chewy. :/

Tried it two times. Unfortunatly i can´t recommend it. At first, i needed a lot more gluten flour to get it to the right consistency. Second the taste was not really good. I think because of the Seitan but i don´t know. Consistency was okay. PS: The first bites were like: "Awsome" but a few bites later there was an awful aftertaste to it.

id say not needed, the broth is infused so freeze as-is (vacuum sealed is better). freezing in broth you cant separate em...
Swanlord I don't have a way to vacuum sealed it, I wonder if freezing individually and then put them together in a freezer bag would be better option for me, like that they won't stick together.

I tried seitan recipes but apparently I really hate seitan. Its dough consistency and taste makes me vomit. I prefer soy tvp or jackfruit meat. Or making stuff with beans or garbanzos. Any way each one to its own i guess. But this looks good. Although ive given up on seitan
When I first went vegan, I hated seitan too. But then I learned to make it differently. I ain't going to tell you what you like or don't like. But like with lots of things, it comes down to making it just the way YOU like it.
