I just tried this with my first attempt at Lion's Mane cooking. slam dunk of flavor. This method is legit AF. I made a buttery demiglace with shallots, Worcestershire and a very small dash of wine while it was in the convection stage. Superb.
Yes! It’s a game changer. You got this. Thanks for sharing and watching.
Love spicy foods
I want this really bad. It looks so delicious
Breaded them and fried them recently Absolutely scrumptious! I will try this too.
suck all that unhealthy oil while convincing yourself you're eating healthy..... the lack of self awareness in Americans is unmatchable
this is the future of food
I have been a vegetarian all my life; hubby has been one for 50 years or so. When I first tried this method of preparing the Lion's Mane mushroom, I had nothing to compare it to, but hubby was super impressed with the texture and its similarity to steak. He gave it 2 thumbs up; so today I began experimenting. I did a couple of 'press & flips' with a minimum of salt only. Then took each steak and dipped it into aquafaba (replacing egg dip), and then dredged through a breadcrumb/seasoning/flaxmeal mix, and popped back into the pan. A couple more 'press and flips', then set aside and used the remaining aquafaba to loosen yummies on the bottom of the pan, reduced to very thick, and then added a nutmilk to that to a sauce thickness, and served with the steaks.Excellent entree for those special dinners-for-two!
It's a good thing we have a local Lion's Mane grower...it is going on the regular home menu!
Well done! Glad you like the technique, keep experimenting! Thanks for sharing.
Love to try this would love to go vegan but don’t know we’re to start 😊
Fantastic! Thanks for the details of your version. And cudos on your lengthy plant based journey💚
Fun fact: leave mushrooms in direct sunlight for about 15-1hour depends on how long you can have them out to increase the vitamin D on the mushroom.
This literally adds 10x more vitamin D. Much love to you all ❤️🙏💜🌎
Mind citing a source for that info? lmao
Sounds made up
@abattoirgambit3705 have you actually spend any time what so ever looking to see if it's made up?
Sure! The mushroom show youtube channel and type in increasing vitamin d on mushroom. Look at his research, there are a few videos on this.
@@IIFrostII Why would someone lie about something so silly? Its really really easy to search google and find out for yourself vs waiting on a source. For fu cks sake! Yes putting mushrooms in direct sunlight can increase Vitamin D sometimes 10,000% depending on the variety of mushroom. Do i need to research this for you? No. Go Fukk Yourself 😊
The world is sleepin on mushrooms........... this is soon going to change!
I love to hear the reasoning of why you do things in a recipe vs just saying how to do it. It really helps to understand the foods we try to prepare and what the effect could be with how we decide to prepare them
I'm sure that Paul Stamets would be honored to eat this! ♡ Sending much love from Washington state! ♡♡♡
imagine them meeting together
YASSS
Do you mean from Star Trek Discovery? 👀 Edit: just realised he was named after the real life Paul Stamets 😅
Who else wants to open a restaurant right now, just to serve that mushroom xing 😍
I got a lions mane grow bag and harvested my first flush today. I followed this recipe exactly and it was fantastic
Made this tonight and was blown away with the taste and texture! I miss ‘steak night’ with my husband. It takes a bit of coordination to get the cast iron pans working, and we were just a bit worried I’d set the fire alarm off. It was worth it. Excellent technique. I served with roasted Yukon gold potatoes and cast iron pan seared broccoli spears. Delicious! Next I’m going to make the Citrus Garlic Butter King Mushroom Steaks.
Thank you for the great video! I'm getting ready to prepare the Lion's Mane I just harvested. I was in the backyard vacuuming off the coils of the AC condenser of all things and spied a bright white "flower" from over the fence in the woods. The cauliflower sized "flush" was on the end of a 4ft long tree trunk, the remains of a 65ft tall beloved silver maple that had died and had to be cut down. And on the other end of the same log was an even larger fruiting! With luck, the Lion's Mane will fruit again to provide more meals! Even though that tree is gone, it's still bringing joy to our lives.
This is so amazing. Completely in awe with the taste, texture and everything!!
I wasn’t going to get up early this morning. Just lounge in bed but my farmers market has these mushrooms. Excited to make this dish! Thank you💕✨
The mushroom vendor wasn’t there but I am determined to eat this. Lol
Where else can we buy these mushrooms?
I’m from Ohio.
@@fieryscorpion If you're close to Fort Wayne, the mushrooms are sold at the farmers market at Parkview Field on Saturday mornings.
@@mikeroeger8804 The only issue is I’m 93 miles away from Fort Wayne. 😅
I’m in Findlay OH, so do you know any closer ones?
Thanks! 😃
@@fieryscorpion I'm sorry but I don't. I don't know if anyone in Bowling Green or Toledo sells them.
I tried this recipe, and it came out soooooo good! I was shocked at how good it came out; I will do this again!!!
Fantastic recipe and step-by-step walk-through. The result far exceeded my expectations. Lions mane has amazingly meat-like color and texture while having a mild flavor NOT reminiscent of earthier flavors cremini or portobello. This recipe came out visually stunning and incredibly juicy.
👆locate his got the best product with guidelines and he ships too bought my mushrooms from him
I can’t wait to try this. I’m growing some lions mane right now. I don’t miss eating meat and am not looking to replace it but I love mushrooms and am excited to try cooking these. It’s all about flavour and perception.
I grow my own too....tried this today, it's awesome.
went to our local farmers market n bought some lion's mane... been taking lion's mane extract for stress n better mood but now will try to cook it... wish me luck....
Delicious!! I tried cooking mine the same way and it came out amazing. I'm not a vegetarian but new foods like this really intrigue me.
I just made this for my first time trying Lion's Mane and I'm blown away. It's a dead ringer for a loin chop. It's so close it was scary. Find it if you can and make it for all your carnist friends. Show them how amazing food can be without animal products. 👍
Exactly. Thanks for sharing!!
might need to make a sauce out of refried beans or something to make up for the protein though
Hmm I'm going to raise some lions mane for fun and grill it. But the two best dishes I've ever ate in my life were slow roasted prime rib and polynesian pit bbq. I've tried lots of food from tofu, pig blood in the philippines, salted fish, almond milk, and fake bacon. I just haven't found nothing in the vegan world that has made me want to abandon meat taste wise. I raise my own beef in a large pasture. I think it's bad to raise animals in tight spaces and for them to have a bad life sure, but I've not been able to abandon eating meat especially when I raise my own beef and chickens etc. Now if vegan meals actually were say the best meal i've ever had I'd probably consider going that way. It's like I was raised on raw milk as a kid and now I still drink milk from the store, but it's subpar. It's lower quality being pasturized and not fresh, but the government and all claims to know best. My taste buds however still has me liking raw milk when I get the chance to get some.
yes I eat plant based and ignored the cooking instructions and am enjoying it raw, along with some raw beef liver. the cow was purely based on plants
Yes definitely trying this
I last had Char Sui pork about 30 years ago. Had some lee kum kee char sui sauce on king oyster clusters last night, was the tastiest meal I’ve had this year. Ordering some lions mane today 👌🏻 Thank you for the heads up Sir 🙌🏻
Where can I order lions mane mushrooms?
@@cherylshort5005 Smithy mushrooms, unfortunately sold out at the moment 🤷🏻 They have a big range & a subscription service on the website. Derek visited their farm in a previous episode 🥳
If I only lived in the UK!😥
Oh man I'm going to try char siu sauce on mushrooms now.
Just wanted to note your comments about how you enjoyed cooking before and wanted to continue enjoying the entire process after going vegan is a great answer for folks who question why vegans/WFPB/vegetarian people like to use veg, shrooms, tofu etc to make items they call "steaks" or "Cutlets" etc. Along with cooking and eating enjoyment, it also completes our traditional looking meals on our plates visually - a main dish with accompanying sides. Anything to make it easier for people to make the move to an animal free/vegan/wfpb lifestyle. I don't know if I explained that well but I wanted to toss it out there.
The reason you call your veggies “steaks” and enjoyed cooking real meat is because our bodies are MEANT to eat meat. Humans are carnivores by nature, not herbivores or omnivores 👍🏼
@@amyk6028 as a meat eater this is patently false; eating meat alone will cause malnutrition (and a very adventurous gastrointestinal experience). even up north in the artic where indigenous peoples wouldn't eat much carbs (see keto), they still needed berries, greens, etc.. to stay healthy
also, we aren't MEANT anything; we evolved to fit whatever niche we found ourselves in
@@amyk6028people are allowed to be selective about what they eat.
Our bodies will either adapt to our diets or fail to some degree. Vegans and vegetarians have figured out how to get the nutrients they need for survival, and animal-eaters do the same.
It is so bizarre when people take other people's food choices so personally.
@@amyk6028 incorrect, it's marketing that's made people think humans need meat
if humans are meant to eat meat why can't we eat raw meat without getting sick
also human teeth are designed to eat plants
I fell for it for many years
What real vegan wants something that reminds them of slaughterhouse products? Just eat beans bro.
Wow! I usually make fried chicken strips with lion's mane (using a vegan chik'n seasoning and some white wine), but this I gotta try! Thanks so much, looks so simple and delicious!
Love spicy foods
So lovely to see you back on YT sharing your fabulous food ideas. ONE OF THESE DAYS I will live in a country where I can get these shrooms! Thank you for helping to pull people away from eating animals with your absolutely swoon-worthy recipes. (Hope you get to cook for the Dalai Lama!!!! I am sure he would be delighted.)
They arent hard to grow at all. I am kind of clever sometimes but not on growing mushrooms. Super doable.
I love this channel sooooo much I wish you posted more 😊 also thank you for this recipe recommendation.
Thanks for saying so!! We’ll try to keep the videos coming!
What a great looking "steak!!" I understand the lion's mane is pretty versatile, doing a good impersonation of crab/lobster as well. Thanks for sharing this one with us. Mouthwatering!!
Flame shoots from the pan.
Me: oh shit my kitchen's on fire.
Chef Derek: Cool!
I'm following along and it's actually really fun. I'm not much of a cook but I wanted to see how to eat these for the health benefits- but mushrooms open up a whole new world to me!

Went vegan due to IBS. Seen some of your brand at the grocery store. This looks amazing. I will have to change the seasons (also due to IBS) I'm going to use smoked paprika also. I find if I use smoke paprika it gives every mushroom I've tried a meaty hearty feel. I wish I had stumbled on your yt channel sooner. Thank God for mushrooms and cast iron cooking!
Thanks for being here and for watching.
Hey Derek. I just discovered your channel. I've been a sous chef in kitchens and just became pescatarian in 2021. Anyway, i almost always add spice to my dishes. Not only are they tastier, but the health benefits increase with spices and peppers in general. Great channel, but i hardly find your products here in LA or at least where i live.
The lion's mane really is a fantastic mushroom. It tastes delicious, has so many health benefits. Almost to good to be true, but it is. Currently I am trying to initiate some lion's mane mushroom spawn to grow some at home, because due to them loosing a lot of weight due to water being evaporated it can be pretty expensive if you wanna feed a full family.
The true beauty of as compared to meat is you can grow your own mushrooms :D
I'm happy I ran into your channel, It's only been 9 months since I started my vegan journey, and I'm always looking for new recipes ideas to try out, I enjoy spicy foods every now and then. I look forward to seeing more of your tutorials, ty for sharing.
Love spicy food, but not every day. Great recipe! Mushrooms are amazing 🤤🤤🤤❤
Back-to-back wicked kitchen creations this weekend! Yesterday was grilled eggplant filets and butternut squash/cabbage steaks. And after a farmers market haul this morning, lions mane steaks for lunch! So good, so quick!
Wicked! Sounds amazing.
Just grew some lions mane and finally it was ready to be cooked. This recipe was gold! Absolutely loved the seasoning and the way you cooked it, I probably should’ve left it in the oven a bit longer but all in all I loved it and my Omni boyfriend loved it. Great cook can’t wait to try your other recipes!
Looks very interesting
Thanks for sharing
I love spicy food and also cater to kids so I learned balance.
Also the cooking experience is apart of the fun. This recipe looks simple and this is a favorite in my kitchen. I’ll try this today.
Spice it up truly enjoy!
Mesmerizing, Chef Sarno! 🙏🏼🍄🌱
Thanks, Susan!
I make your garlic gravy with the wine all the time and if I were to get hold of those mushrooms I would make this as well. Thank you for this recipe.
I followed the cooking directions except only added spice mix once to each side. AMAZING
Spicy food all the way Derek! ❤
I like my lions mane with smoked fresh water salmon.
gamechaning technique - the second pan works really well on oysters, too.🤤🤝
Making this tonight! I am fortunate to live within 25 miles of the Lodge Cast Iron manufacturing facility in southern Tennessee, and I have quite a collection from their outlet. Looking forward to pulling a couple of skillets out of the pantry to cook up these shrooms.
Please put me in the camp of "not so much spice, please". Love your book and your videos.... thank you!
Respect the technique! Love the texture of lions mane! Bring the heat, Sir! Burgers, thin-sliced fillets. Sauced or undressed! Bedded on rice with veg of preference; or plated all by itself! This is a winner!
Once mother nature shares her gift with me (lion's mane) I will try this recipe, it looks amazing! Until then I still have never found one while foraging but I've only been hunting for the last year or so...maybe I'll stumble upon it soon!
Look up they grow on trees!
On dead hardwood trees
Love it ....can't wait to try it.
Thank you
Hope you enjoy
As always your food and your style are awesome 👏
Ma man! Amazing recipe! Looks absolutely delicious! I cannot find lions mane locally, so I bought a producer's kit and I will try your recipe! Cheers from Brazil!
Awesome! Looking forward to hearing about your results
Oh man, I can't wait to try this!
I think this video might have just turned me into a vegan from a vegetarian, purely because I just love mushrooms & the vast amount of plants, cheese alternatives & also milk alternatives now available too. You just cooking & this video alone has inspired me, love this & also love the assortment of spices you’ve used. I can not wait to get back into the kitchen & start cooking👍🏽😁
Thank you, for changing to vegan and leaving dairy and eggs off your plate!! 🙏🏻 ❤️
im a "meat eater" but this is still real food and looks delicious. People should be eating this instead of that beyond burger crap.
Huge respect for your attitude towards keeping the cultural elements of meat eating alive without any of the animal suffering. I've been vegan for a couple of years now and I do find that it's those little things that contribute towards people feeling like going vegan is a huge change.
Omg thank you sooo much I just made this and it came out so delicious!
Dang! This really looks incredible.
Thanks, Derek!!☺
Mushrooms are great and meat is too neither replace the other 😂

Amazing, thanks for subscribing.
This recipe looks amazing, but what I really need is a tutorial on that cook trick you do with the kitchen tongs. Cooler than a pancake flip!
Just made this for the first time… I’m doing a detox and veggie during this time. I was missing meat so I tried this for a substitute. Holy smokes, so good!!!

I came across your little brats at a sprouts grocery in Denver, Colorado. Well done guys, those were amazing with a little kraut and cornbread
Fantastic!
Question and a special request.
Can I bulk cook these mushroom steaks and freeze them? Plus I would love to see a cast-iron care video since you are the master. I have cast-iron but I'm unsure if I've seasoned them correctly and unsure how to properly clean them. Would love your take on the matter. Thanks for all you do and I've tried several of your recipes and all have been delicious.
I had no idea they can be found so large. My local grows/sells them much smaller. Great technique, will enjoy this.
Love tasty, flavorful food 😋 The lions manes look great. Loved all the tips you shared. I could use some mushroom education ... seeing the different ones, hearing about textures and traits so that I can choose with more awareness as to how they would "act" in the recipe. We didn't grow up in an area where we had access to any mushrooms except for canned 😅🤣😂 so cleaning and storage tips would be great too. Thanks for sharing this. Much appreciation and best wishes to you and your team!

Great advice - subscribed. Tried this with shichimi togarashi, cayenne pepper, rosemary and salt n pepper seasoning. Ate two lion’s mane steaks with a mixed salad. Very tasty, but the mushrooms shrunk radically. Got to start next time with much bigger ones.

Love spicy, but truly, just love [cruelty-free[ food!
where do you draw the line of cruelty? i love fungi but also meat, however more lives are lost in the consumption of fungi. is it not cruel to eat the fruit of an intelligent organism that spans kilometers underground and can feel every incision? it's a pointless thing to suggest, killing for food is not cruel it is baseline reality. killing for sport, is cruel.
it's nice that humans have developed to enjoy the act of demonstration and dialogue regardless of the topic. that in and of itself is entertaining, I love lion's mane, I'm tempted to try this.
Are you not a human?
Just ordered a couple of lions mane mushrooms from my local farmers market, can't wait to get them and make this.
