    PSA: It's worth buying actual vanilla pods at least once. Even after you've scraped out the marrow, you can still get a lot of mileage out of them. For instance, if you just leave the pods in a little box with sugar, you'll eventually end up with proper vanilla sugar which is way better than the artificially flavoured junk you get at the grovery store.

      And once you've completely used up the beans and extracted every last bit of flavour from it, you can grind up the beans into still rich tasting vanilla powder =)

    I love how they share the recipe to the home cooks instead of leaving them hanging with all those expensive items. It’s nice to know that no ingredient is wasted. Plus it gives them new skills, which is really entertaining to watch!

    Something I realized is that for the cheap set of ingredients, they only price out the amount called for in the recipe, like if you only use a few scoops of ice cream they price it at $1 or something, but for the expensive set of ingredients they price out everything. When you see people leaving comments like "$150 for a taco? Outrageous!" it's more like $150 for a taco and half a pantry full of ingredients. I get that they do it for the clickbait, but the reality for most of these videos is that the expensive ingredients are probably 2 or 3 times as expensive as the cheap ones, not 10 or 20 times more expensive. It's super misleading and discourages people from experimenting with nice ingredients at home.

    I love this series so much, it really shows how experienced and knowledgeable professional chefs are. I'm always so surprised at all the unique uses the professional chefs have on everyday ingredients. In addition, watching the home cooks have the time of their lives making things for the first time is always such a delight.

    Loved this episode, loved the vibe and the new pro chef Vallery! And, most of all, both those wonderful pies, so interesting to see two variations so different to the theme, I'm really going to try them both. (I even have both real vanilla and Calvados in my pantry, I feel rich now! :)

    Yeah there is no chance that the Haagen Dazs vanilla ice cream costs just $1. No way in hell, why would you try to make it that way so that the recipe is below $10? Just hurts the integrity I’d say

      I agree.
      Initially I thought maybe they’re pricing it as produce used, rather than whole item/package because one egg could be 49c, but then they’ve got the Calvados costing $49.99, and I don’t think a glug of ANY shop bought Calvados would work out to be that much.
      It’s like those graphs on the news that distort the figures to appear more controversial/newsworthy.
      And it’s insulting to expect us viewers not to notice the glaring discrepancy.

      Totally agree. And some cost analysis are calculated by cost of amount used, but that's never been the case with this series. It was larger than a pint, and Häagen-Dazs is not cheap

    Idea: Pro Chefs make other country or regional cuisine, stuff they aren't used to making. For example Saul making Sushi. I'm sure in culinary school they learn to make stuff from other countries, but once they're in their own restaurants and whatnot, they only focus on what they serve at their restaurant and what they grew up making, which in this case Saul and Mexican food. The chefs would have little to no help, with *maybe* a phone call to Rose. thoughts?

      i’d love to see chefs making their take on country cuisine, while competing with a country chef that knows how to make it the traditional way. let’s say saul making tamales o gallina pinta vs frank and his take on the same plate. thoughts?

      Here in Germany they have some episodes in a show, where a foreign chef gets a cooked meal by a German chef and has to reproduce it on taste only. It mostly does turn out differently, but the German chef that's taste testing often likes the result as well and both chefs are able to talk about the experience and so on after. It's really interesting. So, yeah, I'd like to see Frank, Saul and Co. try foreign dishes, maybe pick the ingredients that they think are needed for the recipe. Would be fun :)

    $14.49 for apple cider vinegar? My grocery store charges about $6 for a national brand and $3 for store brand.
    On the flip side, I wonder how they found a pint of Haagen-Dasz for just $1. It normally goes for $4 or 5 where I am.

      I think they inconsistently priced the ingredients, they list $15 for apple cider vinegar because that’s the price for the whole bottle, and the $1 for Haagen daas isn’t the price of the whole pint, but the amount they actually put on the dish. Super annoying they reported it that way bc it’s inconsistent but they can make the price different more drastic for the clickbait 🙄

      I thought the same about the icecream, because in germany we pay 5 for half of the bucket on sale. It's clear that they manipulate the price for sensation, but the cooking is still funny.

    You should change the prices to reflect the actual cost of the pie and not include the cost of unfinished ingredients. I could buy an industrial quantity of flour, make a loaf of bread, and with your logic, it is a $500 loaf of bread.

      so i priced it out... You can get grade A vanilla beans from Sullivan Street Spices in NYC for $6 each (which is still on the high end), so the suggested price of $26 is massively exaggerated for the 2 beans that they used. Pricing the beans at $6ea, and being generous in the quantities used (including Calvados shots for both hosts at the end), the expensive pie would actually come in closer to $48, NOT $161

    Okay, we've all been complaining about the pro chefs not playing by the rules with all their little substitutions and additions to the plain ingredients they were given... so EXTRA PROPS to Chef Vallery for actually MELTING ICE CREAM to use in place of heavy cream in her caramel sauce, and for kludging together her own cinnamon ice cream.

    The taste test is the absolute most important part of this show. The other chef needs to taste and evaluate just how well it was made. The only thing that would make it better is a blind taste test.

    I'm always impressed by how many other sensory cues help you to know that your recipe's gonna taste good throughout the process. IE In this one, the crunch of the pie crust, the smell of the salted caramel, or the the way buttery dough can be smooshed together

    I'm surprised they didn't have Daniel use the alcohol in the pie crust as an anti-gluten cheat -- I guess the vinegar serves a similar purpose but still.

    Outside of the Calvados the ingredients from the pro-chef are very affordable, especially if apples are in season. I'd always include lemon peel in an apple pie. It's such a difference to the quality and it's barely an extra $1.
